GRANDMA'S MACARONI SALAD

8 ounces elbow macaroni (cooked and drained)
1 cup chopped celery
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1/3 cup chopped onion
3/4 cup mayonnaise
2 tbsp apple cider vinegar
1 tbsp prepared mustard
1 tsp sugar
1 tsp salt
1/4 tsp ground black pepper

Steps:

  • In a large bowl, mix in the macaroni, celery, bell pepper, and onion.
  • In a separate bowl, whisk together the mayonnaise, apple cider vinegar, mustard, sugar, salt, and pepper until combined. Pour the mixture into the macaroni and vegetables. Mix well until everything is thoroughly coated in the dressing.
  • Refrigerate for at least 4 hours before serving. Preferably overnight.
  • Stir before serving.

1/3 cup fresh lemon juice
6 celery stalks, halved lengthwise and thinly sliced crosswise, plus 1 cup celery leaves
1/2 medium red onion, finely chopped

  • Cook pasta in a large pot of boiling salted water until al dente; drain and rinse under cold water to stop cooking. Set aside.
  • In a large bowl, whisk together mayonnaise and lemon juice. Add celery stalks and leaves, onion, and cooled pasta; season with salt and pepper. Toss to combine.

4 hard-boiled eggs (chopped)
1 small onion, finely diced
3 celery ribs, diced small
2 cups mayonnaise
1/2 cup sugar
1/8 cup yellow mustard
2 tablespoons dill pickle relish
1 tablespoon white vinegar
3/4 teaspoon celery seed
1/4 teaspoon salt
paprika (to garnish)

Steps:

  • Cook the macaroni according to directions, drain well.
  • While pasta is cooking mix up all the dressing ingredients till well blended and set aside.
  • Chop up all the veggies.
  • When macaroni has cooled and drained well mix in the dressing (add all of it if you like very creamy salad.if you don't like a lot of dressing leave out about 1/2-3/4 c of the dressing. Remember that as it sets it will soak up some of the dressing.
  • Refrigerate for at least one hour, the longer you let it set the better the flavor. Overnight is not to long! Servings are approximately Does not include cook time or the chill time.

6 chopped hard-boiled eggs
1 1/2 cups real mayonnaise
1 tablespoon celery seed
pickle juice

Steps:

  • Boil Macaroni according to package directions, rinse under cold water reserving some of the pasta water.
  • Add all ingredients to bowl adjusting Mayo and adding pasta water and/or pickle juice for wettness.
  • Refrigerate for at least 2 hours.
