CREAMY CELERY ROOT MASH
This is a delicious and quick way to prepare a root veggie that isn't often talked about. Celeriac has a slightly tangy taste that is reminiscent of celery, but much subtler and has a fabulous flavor. Delicious!

Steps:
- Place celeriac into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and transfer to a large bowl.
- Mash celeriac, sour cream, and dill together in a large bowl with a potato masher until smooth. Season with salt and pepper.

POTATO AND CELERY ROOT MASH
This mash gets a punch of flavor from freshly grated horseradish. Use a combination of potato varieties to add more texture.

- Place potatoes, celery root, and horseradish in a large pot. Add water to cover by 1". Bring to a boil, reduce heat to medium-high, and simmer until vegetables are tender, 25-30 minutes.
- Drain, reserving 1 cup cooking liquid. Return vegetables to pot; add sour cream, Dijon mustard, and butter. Using a potato masher, coarsely mash vegetables. Add reserved cooking liquid by tablespoonfuls if mash is too stiff. Season to taste with salt.
CELERIAC MASH RECIPE

Steps:
- Heat the ghee or coconut oil over medium-high heat in a large sauté pan. Add the celeriac and mix it in with the ghee or coconut oil, sauté for about 3 minutes. Cover the pan and lower the heat to medium-low, cook for 10 minutes. Next add in the chicken stock, coconut milk, thyme, garlic, salt and pepper. Stir well and bring to a boil, cover and reduce heat to a simmer. Cook, simmering, for 10 minutes, until the celeriac is nice and tender, stirring once or twice in-between. Transfer the celeriac and liquid into a food processor and purée until smooth. If needed you can do this in batches. Spoon into a serving bowl and serve hot.
CELERY ROOT MASH
Steps:
- Peel and roughly chop 3 pounds celery root. Place in a pot and cover with equal parts milk and water (about 2 1/2 cups each); add a pinch of salt. Bring to a simmer and cook until soft, 20 to 25 minutes; drain. Puree with 1/3 cup heavy cream and 2 tablespoons butter. Season with salt, then add 2 tablespoons whole-grain mustard and pulse to combine.
- TIP: Use a food processor or immersion blender to puree these veggies-they're too fibrous for a potato masher.

- Place the celery root in a large pot and cover it with the milk by a few inches. (You may not need to use all the milk.) Add a few pinches of salt along with some freshly grated nutmeg. Bring to a gentle boil and simmer until the celery root is fork tender, 20 to 30 minutes. Drain, reserving about 1/4 cup milk, then return the celery root to the pot.
- Place the pot over medium heat and let the celery root dry out for a minute or 2. Add the reserved milk and mash or puree using a potato masher or blender until very smooth. Check for seasoning, adding more salt if necessary.

- Peel the celery root. You may need a knife to remove tough outer layers. Scrub it from any excess dirt and debris, and slice the celery root into 1/2 inch cubes. Set aside.
- Heat a large pot over medium heat. Add 1 Tablespoon of olive oil to the pot, and once hot add the cubed celery root and onion.
