JAMIE OLIVER'S MASHED ROOT VEGETABLES

- *NOTE: swedes are known in US as rutabagas. I've also used yams/sweet potatoes, turnips and fingerlings in this recipe. ~fyi~.
- Feel free to use any single vegetable or a mixture of your favorites. Cookgirl says that a mixture of root vegetables is the way to go!
- Peel the root vegetables then chop up into golf-ball sized pieces, place in salted boiling water and cook until very tender.
- Drain in a colander.
- Place the vegetables back in the pan and mash with a potato masher.
- You can mash them as smooth or as chunky as you like. Season with salt and pepper, then enrich the flavor with extra virgin oil or butter, or both, to taste. (I prefer using both olive oil and butter.).
- Jamie continues to say: once cooked, the mashed vegetables can be kept warm in a bowl covered with kitchen foil over simmering water. This is handy when cooking for a dinner party -- (especially when timing is of utmost importance.).
CARROT CELERY ROOT PUREE
Steps:
- Melt 2 tablespoons butter in a Dutch oven or large saucepan with a lid over medium heat. Add the shallots and cook until just beginning to turn golden about 5 minutes. Add the carrots and celery root and season with salt and pepper, to taste. Stir in the stock, and enough water to just cover the vegetables. Bring to a boil, then reduce the heat to a simmer, cover, and cook until vegetables are fork tender, about 30 minutes.
- Drain the vegetables in a colander set over a bowl to reserve the cooking liquid. Transfer the vegetables to a food processor and season with salt and pepper, to taste. Puree until very smooth, adding cooking liquid, as needed, to reach the desired consistency. Taste and season again, if necessary. Transfer to a serving bowl and serve warm.
- Cook's Note: This can be made the day before and slowly reheated.
SMASHED CELERIAC
What a surprisingly simple and comforting veg dish. Unfortunately everyone seems to be completely baffled by celeriac, but it's beautiful in soups or thinly sliced into salads. When roasted it goes sweet and when mixed with potato and mashed it's a complete joy. Here, mash the celeriac just a little bit so you've got a gorgeous sort-of-in-between smash-up

- Peel the celeriac, then slice about 1cm/½ inch off the bottom of it and roll it on to that flat edge, so it's nice and safe to slice. Slice and dice it all up into 1cm/½ inch-ish cubes. Don't get your ruler out - they don't have to be perfect.
- Put a casserole-type pot on a high heat, add 3 good lugs of olive oil, then add the celeriac. Pick in the thyme leaves and peel and finely chop the garlic, and add both with a little sea salt and black pepper. Stir around to coat and fry quite fast, giving a little colour, for 5 minutes.
- Turn the heat down to a simmer, add the water or stock, place a lid on top and cook for around 25 minutes, until tender.
- Season carefully to taste and stir around with a spoon to smash up the celeriac. Some people like to keep it in cubes, some like to mash it, but I think it looks and tastes much better if you smash it, which is somewhere in the middle. You can serve this with just about any meat you can think of.

ROOT VEGETABLE & MUSTARD MASH

- Put the veg in a large pan of salted water. Bring to the boil and cook for 15 mins until tender. Drain well, then mash adding the butter, oil and mustard. Season generously. Mix together until the butter has melted, and serve piping hot. This can be made a day ahead and reheated in the pan with a touch more butter, or in the microwave.

- Put the celeriac, carrots and apples in a large pan of water, bring to the boil and simmer for 20 mins until tender. Drain, tip back into the pan and mash roughly. Stir in the rest of the ingredients. Cover and keep warm until ready to serve.

POTATO, CELERIAC, CARROT AND SWEDE GRATIN

- Use the slicing disc on your food processor to thinly slice the potatoes (you might have to halve them if they don't fit into the feeder tube). Set aside in a bowl, cover with cold water and add a squeeze of lemon juice, to prevent discolouring.
- Cut the celeriac and swede into pieces that will fit into the feeder tube, and thinly slice each as before. Set aside with the potatoes, making sure they're covered in the acidulated water. Thinly slice the carrots.
- Preheat the oven to 190°C/fan170°C/gas 5. Melt the butter in a small pan over a medium heat. Add the garlic and cook, stirring, for 1 minute. Stir in the thyme, then remove from the heat. Brush some of the thyme butter in a 1.8 litre ovenproof dish, about 6cm deep.
- Drain the potatoes, celeriac and swede and pat dry with a clean tea towel. Arrange a third of the potatoes in a layer in the dish, slightly overlapping. Brush with more thyme butter, season, then layer up with celeriac, then another layer of potato. Butter, season and layer with carrot, more butter and then the swede. Press the layers down well, then brush with butter and finish with the remaining potatoes, overlapping to give a neat finish. Drizzle with any remaining butter.
- Pour the stock into the dish around the edges, cover with foil and place on a baking sheet. Bake in the oven for 50 minutes, until tender.
- Increase the oven to 200°C/fan180°C/gas 6. Uncover the gratin and bake for a further 30 minutes, until golden.

CELERIAC AND APPLE MASH

- Bring stock, water, celeriac, potatoes, apple, shallot, bay leaf, and 1 teaspoon salt to a boil in a large pot. Cook until tender, about 10 minutes. Strain, reserving liquid; discard bay leaf. Return celeriac, potatoes, apple, and shallot to pot, and add 3/4 cup reserved cooking liquid. Coarsely mash with a potato masher.
- Using a fork, mash together butter and blue cheese in a small bowl. Stir into celeriac mixture. Season with salt.
- Spoon into a warm serving bowl, and crumble blue cheese over top.
CELERIAC AND CARROT MASH
I recently discovered celeriac (celery root) and am looking for different ways to use it. I like root vegetable mash so this sounds good. I found this recipe in the February 2008 copy of the BBC Good Food Magazine.

- Slice the celeriac and carrots in a food processor.
- Put into a pan and pour over enough boiling water to cover.
- Add a pinch of salt.
- Boil for 10 to 12 minutes until tender.
- Drain the vegetables and whizz in food processor until it is a rough mash.
- Divide between four plates and serve.

CELERIAC & PARSNIP MASH RECIPE | EATINGWELL

- Place celeriac and parsnips in a large saucepan; cover with lightly salted water. Place potato in a medium saucepan; cover with lightly salted water. Bring both saucepans to a boil over medium-high heat. Reduce heat to low, cover, and simmer gently until the vegetables are very tender when pierced with a fork, about 20 minutes for the potato and 30 to 40 minutes for the celeriac and parsnips.

- Meanwhile, combine broth and oil in a saucepan (or measuring cup) and heat on the stovetop (or in the microwave) until steaming. Stir into the puree, along with 2 tablespoons chives, yogurt, mustard, salt and pepper. Stir in Parmesan. Garnish with the remaining 1 tablespoon chives. Serve hot.
