CREAMY CAVATAPPI PASTA



Creamy Cavatappi Pasta image

Cavatappi pasta is corkscrew shaped and great with creamy sauces. Serve it with a creamy white sauce, spinach, and sundried tomatoes for an easy dinner! (For a vegan option, use 4 cups Vegan Alfredo Sauce instead of the cauliflower sauce.)

6 garlic cloves*
1 small head cauliflower (1 1/2 to 2 pounds), enough for 6 cups florets
4 tablespoons butter or olive oil
2 cups vegetable broth
1/8 teaspoon garlic powder
1/2 teaspoon dried oregano
1 teaspoon kosher salt
3/4 cup shredded Parmesan cheese, divided
1 pound Delallo cavatappi pasta
4 cups baby spinach
3 tablespoons Delallo sundried tomatoes, minced
Red pepper flakes (optional)
1 tablespoon finely minced parsley

Steps:

  • Mince the garlic. Chop the cauliflower.
  • Heat the butter in a large pot over medium heat. Add the cauliflower and saute for 4 minutes until lightly browned. Add the garlic and cook for 1 to 2 minutes until fragrant. Add the vegetable broth, garlic powder, oregano, and 1/2 teaspoon kosher salt. Bring to a simmer, then cover and cook 6 to 7 minutes on medium high heat until the cauliflower is tender when pierced with a fork.
  • Bring a large pot of salted water to a boil. Boil the pasta until it is al dente (start tasting a few minutes before the package recommends: you want it to be tender but still a little firm on the inside). When the pasta is just about al dente, add spinach to pasta water in last 45 seconds (it only needs this long to cook). Then drain the pasta and spinach and return to the pot.
  • When the cauliflower is cooked (in Step 3), carefully transfer the hot cauliflower and broth mixture to a blender. Blend on high until a smooth sauce forms. Add 1/2 cup Parmesan cheese and an additional 1/2 teaspoon kosher salt, and blend again.
  • Once the pasta is done, pour in the cauliflower sauce. Add the chopped sundried tomatoes, the additional 1/4 cup Parmesan cheese, and red pepper flakes (if using). Taste and if desired add salt or fresh ground pepper. Top with parsley and serve. Store leftovers refrigerated (see reheating instructions above.

1/3 cup butter
1/4 cup all-purpose flour

3 green onions, chopped
TOPPINGS:

Steps:

  • Cook cavatappi according to package directions., Meanwhile, saute garlic in butter in a Dutch oven. Stir in flour and pepper sauce until blended; gradually add milk. Bring to a boil; cook and stir until thickened, about 2 minutes., Stir in cheeses until melted; add green onions. Drain cavatappi; stir into cheese mixture., Transfer to a greased 13x9-in. baking dish. Combine the bread crumbs, bacon and melted butter; sprinkle over top., Bake, uncovered, at 350° until bubbly, 20-25 minutes. Sprinkle with green onion and, if desired, pepper.

8 ounces cavatappi or other corkscrew pasta
12 ounces loose lean turkey sausage
1/4 cup extra-virgin olive oil
1 small onion, finely diced
1 large clove garlic, grated
2 teaspoons herbes de Provence
1 28-ounce can crushed tomatoes
Freshly ground pepper
1 cup part-skim ricotta cheese
1/2 cup shredded Italian cheese blend
1 teaspoon grated lemon zest, plus 1 tablespoon lemon juice
1 romaine lettuce heart, chopped

Steps:

  • Preheat the oven to 500˚ F. Bring a large pot of salted water to a boil. Add the pasta and cook 2 minutes less than the label directs for al dente. Reserve 1 cup cooking water, then drain.
  • Meanwhile, cook the sausage in 1 tablespoon olive oil in a large skillet over medium-high heat, breaking up the meat, until browned, 5 to 6 minutes. Remove to a plate using a slotted spoon.
  • Heat 1 more tablespoon olive oil in the skillet over medium-high heat. Add the onion and cook until tender, about 5 minutes. Add the garlic and herbes de Provence and cook 30 seconds. Stir in the tomatoes, sausage and 1/4 cup of the reserved cooking water; season with salt and pepper. Bring to a gentle boil, then reduce the heat and simmer until thickened, 3 to 5 minutes. If the sauce is too thick, add a bit more cooking water. Stir the pasta into the sauce.
  • Whisk the ricotta, 1/4 cup cheese blend, the lemon zest, 1/2 teaspoon each salt and pepper and 3 tablespoons cooking water in a bowl. Layer half of the pasta and ricotta mixture in an 8-inch square baking dish, then top with the remaining pasta, ricotta mixture and cheese blend. Bake until bubbly, 8 to 10 minutes.
  • Toss the lettuce with the lemon juice and remaining 2 tablespoons olive oil; season with salt and pepper. Serve with the pasta.

Increase heat to medium-high and stir ground beef into onion mixture. Cook and stir until ground beef is browned and crumbly, 5 to 10 minutes. Drain excess grease and return skillet to heat.
  • Mix tomato sauce, chili powder, and cumin into ground beef mixture; cook, stirring occasionally, until tomato sauce is heated through, about 3 minutes. Stir cavatappi into meat sauce until evenly coated; add black beans and pepper. Cook and stir over medium-low heat until flavors have blended, about 5 minutes.

5 cups cavatappi noodles
2 cups milk
10.5 oz condensed cream of bacon soup
1 tbsp onion powder
1 tbsp garlic powder
1 tsp pepper
1 tsp salt
1 cup mozzarella, shredded
1 cup Parmesan, shredded
1 cup Parmesan, shredded
1 cup mozzarella, shredded
1/2 cup real bacon bits

Steps:

  • Preheat oven to 400F.
  • Cook cavatappi noodles according to directions on the package. Drain.
  • Pour milk and cream of bacon soup into a large saucepan. Stir well.
  • Bring the liquid to a boil and then remove the pan from the heat.
  • Pour the cooked noodles into the pan with the liquid and stir.
  • Add the onion powder, garlic powder, pepper, salt, shredded mozzarella and shredded Parmesan to the pot.
  • Stir until all the cheese is melted and all of the pasta is coated in sauce.
  • Dump the pasta into a greased 9 x 13 inch baking dish and spread it out evenly.
  • Sprinkle the shredded Parmesan, shredded mozzarella and real bacon bits on top.
  • Place the dish in the oven and bake the pasta until the cheese on top is completely melted. 14-16 minutes.
  • Serve and enjoy!

1 pound cavatappi
4 tablespoons of butter (dairy free as desired)
4 cloves of finely minced garlic
3 tablespoons of flour
1 cup of broth (I use veggie broth but whatever you have will work)
1 cup milk of choice (plain milk or dairy free works)
2 teaspoons of Italian seasoning
1 cup of grated parmesan cheese (violife makes a great parmesan cheese that melts nicely but I also have a vegan parmesan recipe HERE*)
Salt + pepper to taste
Optional for serving: 2 heaping cups of steamed broccoli florets

Steps:

  • Cook the pasta according to package directions.
  • In a large skillet or saucepan, heat the butter over medium heat. Once melted, add in garlic and cook for 2 minutes, stirring often.
  • Whisk in the flour and cook for 1 minute. Mix in the broth, milk, italian seasoning, cheese, salt and pepper. Mix until fully combined and bring to a simmer.
  • Cook for 2 minutes, stirring often, until the cheese is fully melted and combined into the sauce.
  • Add the drained pasta to the skillet with the sauce and stir to coat fully. Serve immediately and ENJOY!

This rustic pasta sauce consists of mainly one ingredient: broccoli. The broccoli is boiled until very tender and then mashed with a fork. Simply toss the mashed broccoli with pasta water and some cheese to make a delicious and nutritious sauce.

12 ounces cavatappi
2 tablespoons extra-virgin olive oil, plus more for drizzling
3 cloves garlic, finely chopped

1/2 cup grated Pecorino-Romano cheese, plus more for topping
Freshly ground pepper
1 tablespoon fresh lemon juice

Steps:

  • Bring a large pot of salted water to a boil. Add the broccoli and cook until very tender, 7 to 8 minutes. Remove the broccoli to a paper towel-lined plate using a slotted spoon, reserving the water in the pot. Add the pasta to the boiling water, stir and cook as the label directs for al dente. Reserve 1 cup cooking water, then drain.
  • Meanwhile, pat the broccoli dry and transfer to a bowl. Using a fork or potato masher, mash the broccoli until mostly smooth but still slightly chunky.
  • Heat the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes and cook until starting to sizzle and the garlic is just browning, 1 to 2 minutes. Add the broccoli and combine with a rubber spatula, lightly mashing it with the oil and cooking down the broccoli a bit further, 2 to 3 minutes.
  • Add the pasta and 1/2 cup of the reserved cooking water to the skillet. Stir to combine and add the cheese. Continue to fold the broccoli and pasta together until the sauce coats the pasta, adding more cooking water as needed to loosen, 2 to 3 minutes. Season with salt and pepper. Turn off the heat and stir in the lemon juice.
  • Divide the pasta among bowls. Top with more cheese and drizzle with olive oil.

250 g Cavatappi paste
50 ml olive oil
1 small onion finely chopped
4 cloves garlic
250 g cherry tomatoes
1 tsp salt
1 tsp pepper
1 tsp dried oregano
1 tsp dried basil
200 ml dry white wine
100 g baby spinach
Juice of half a lemon
30 g fresh parsley chopped

Steps:

  • Cook Cavatappi pasta in salted water to al dente.
  • While cooking the pasta, make sure you constantly check the pasta to make sure it's done. As soon as the pasta gets a tender appearance, but a white stain at the core, drain it! Even a few seconds can be the difference between al dente and flabby noodles. The cooking time of Cavatappi pasta is about 9 minutes.
  • Meanwhile, chop the onion into small pieces. Add the oil to a large pan, allow the oil to heat briefly, then add the onion and cook for 8- 10 min or until softened.
  • Add chopped garlic, and cook for another 1 minute.
  • Cut the cherry tomatoes in half and add the chopped cherry to the pan, then add the spices; salt, oregano and basil. Stir and cook for another 5 minutes.
  • Add white, dry wine, then stir.
  • Add baby spinach. Stir and cook spinach for 2 min.
  • Add cooked pasta and lemon juice, then stir. At this point, you can add extra baby spinach.
  • Serve and top with parsley. Drizzle with a bit of olive oil or more lemon juice if desired.
