GRILLED CAULIFLOWER WEDGES WITH HERB TARATOR

Grilled Cauliflower Wedges With Herb Tarator image

Cauliflower's versatility extends all the way to the grill, where it takes on complex flavor and a range of textures. While the exterior becomes burnished and crisp, the interior turns sweet and nutty, offering deep meaty smokiness that can satisfy vegetarians and carnivores. And although a whole grilled cauliflower looks impressive, it is far easier to cut it into wedges to reduce the cook time and to provide more surface area to get charred and caramelized. Pair with an earthy Lebanese-style tarator for an easy weeknight dinner. Tarator is a Middle Eastern tahini sauce that is brightened with a heavy dose of lemon. Eaten throughout Eastern Europe and the Middle East, tarator can either be a cold cucumber soup, a yogurt-based dip, or a sauce. Sometimes walnuts or stale bread are added. I learned this version of tarator from my friend Elham Abi-Ghanem, who is of Lebanese heritage.

Number Of Ingredients 15

Tarator
¼ cup sliced or slivered almonds
2 garlic cloves, finely grated
1 cup chopped dill
½ cup mint leaves
½ cup tahini
⅓ cup fresh lemon juice
Kosher salt, freshly ground pepper
Cauliflower and assembly
1 small cauliflower (about 1½ lb.)
¼ cup extra-virgin olive oil (for drizzling)
½ tsp. ground coriander
½ tsp. ground cumin
½ tsp. turmeric
Handful of tender herbs (such as dill, mint, parsley, cilantro, basil, and/or chives)

Steps:

  • Tarator
  • Toast almonds in a dry small skillet over medium heat, tossing occasionally, until golden brown, about 5 minutes. Transfer to a small bowl and let cool. Set aside for serving.
  • Blend garlic, dill, mint, tahini, and ⅓ cup water in a blender or food processor until a thick paste forms. Add lemon juice and blend again, adding an additional 1-2 Tbsp. water if sauce is too thick. It should be easily spreadable but not runny. Season with salt and lots of pepper.
  • Cauliflower and assembly
  • Remove outer leaves and trim stem from cauliflower so it sits flat. Cut cauliflower into 4 wedges.
  • Whisk oil, coriander, cumin, turmeric, and a big pinch of salt in a large bowl to combine. Add cauliflower and coat in oil. The cauliflower can fall apart easily, so handle with care and use your fingers to work oil into the uneven surface.
  • Prepare a grill for medium-high heat (if using a charcoal grill, bank most of the coals on one side of the grill). Place cauliflower, cut side down, on grate over hottest part of grill and grill, undisturbed, until char marks form, about 3 minutes (you can carefully lift to check, but try not to move too much). Turn over onto other cut side and grill, undisturbed, until grill marks form, about 3 minutes. Turn onto uneven floret side and slide over to cooler part of grill or reduce heat to low and cover with lid. Grill until tender (if a bamboo skewer easily slides through the thickest part, it's done), 10-15 minutes. (And if you don't have a grill, you can do this in a grill pan over high. Once pan is very hot, add cauliflower, reduce heat to medium-high, and cook both cut sides as above. When you turn cauliflower over onto uneven floret side, reduce heat to low and cover pan with foil to finish cooking.)
  • To serve, spread some tarator onto individual plates or a platter. Arrange cauliflower wedges on top and dollop remaining tarator over. Scatter mixed tender herbs and almonds on top.

CAULIFLOWER IN CHEESE SAUCE

Cauliflower in Cheese Sauce image

Posted for ZWT-6, this recipe comes from the Usborne Children's World Cookbook that gramma gave my son when he was first learning to cook. Any strong-flavored cheese will work in this recipe, such as cheddar, but if you are looking for an authentic Dutch flavor, choose either Edam or Gouda. The servings, cook & prep time are estimates.

Provided by Tinkerbell

Categories     Cheese

Time 35m

Yield 4 serving(s)

Number Of Ingredients 8

4 ounces cheese, grated
1 head cauliflower
2 tablespoons butter
2 tablespoons flour
1 cup milk
1 pinch salt
1 pinch black pepper
1 pinch nutmeg, fresh grated if possible

Steps:

  • Remove the leaves from the cauliflower, rinse it well and then cut out the core. Cut the rest into four pieces.
  • Bring a large pot of salted water to a boil and then add the cauliflower. Cook for 5-6 minutes, or until tender. Drain and put it into an ovenproof casserole dish.
  • Meanwhile, melt the butter in a saucepan, over low heat.
  • Add the flour and stir with a wooden spoon to make a smooth paste.
  • Cook the mixture gently for a minute, then take the pan off the heat.
  • Stir in the milk, a little at a time.
  • Return the pan to the heat and let it cook on low for 5-10 minutes, stirring occasionally.
  • Stir most of the grated cheese into the saucepan to melt. Season it with pinches of the salt, pepper and nutmeg.
  • When the sauce has melted, pour over the cauliflower and sprinkle the reserved cheese on top.
  • Place under the broiler for a few minutes and until the top starts to bubble and brown.

CAULIFLOWER WITH CHEESE SAUCE

Cauliflower with Cheese Sauce image

This is an easy recipe for cauliflower cheese but it's pretty versatile. You can use the cheese sauce with any vegetables you have handy. I often put a layer of cooked kale or broccoli on the bottom, then arrange the cooked cauliflower florets on top. You can change the flavor of the sauce by adding different cheeses you might have in your fridge. It takes a bit of elbow work to make the sauce but it's worth it. This is delicious served with roast beef or lamb.

Categories     Side Dish     Vegetables     Cauliflower

Time 48m

Yield 6

Number Of Ingredients 7

1 head cauliflower, broken into florets
¼ cup butter
¼ cup all-purpose flour
1 ¾ cups 1% milk
2 ounces Parmesan cheese, grated
salt and ground black pepper to taste
2 ounces mature Cheddar cheese, grated

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place cauliflower in a large pot and pour in enough water to cover; bring to a boil and cook until tender yet firm to the bite, 8 to 10 minutes. Drain and transfer to a baking dish.
  • Melt butter in a small saucepan over low heat. Add flour and mix using a whisk or wooden spoon until smooth and mixture pulls away from the side of the saucepan, 2 to 3 minutes. Pour in milk, a little at a time, and whisk continuously until sauce is thickened but still pourable, 3 to 4 minutes.
  • Stir Parmesan cheese into sauce until melted; season with salt and pepper. Pour sauce over all of the cauliflower. Sprinkle Cheddar cheese over the top.
  • Bake in the preheated oven until cheese is golden brown, 20 to 25 minutes.

CAULIFLOWER WITH TARATOR SAUCE

Cauliflower with Tarator Sauce image

Provided by John Willoughby

Categories     Food Processor     Citrus     Garlic     Nut     Sauté     Vegetarian     Pine Nut     Walnut     Cauliflower     Vegan     Gourmet

Yield Makes 6 servings

Number Of Ingredients 13

For tarator sauce
2 slices firm white sandwich bread, crusts removed
2 garlic cloves
1/2 cup pine nuts (2 1/2 ounces), toasted and cooled
1/2 cup walnuts (1 1/2 ounces), toasted and cooled
3 tablespoons fresh lemon juice, or to taste
1/2 cup extra-virgin olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
For cauliflower
1 medium head cauliflower (about 2 1/2 pounds)
1/4 cup olive oil
3 tablespoons thinly sliced celery leaves (optional)

Steps:

  • Make tarator sauce:
  • Soak bread in a bowl of water 30 seconds, then squeeze dry and set aside.
  • Drop garlic into a food processor with motor running, then drop in nuts and process until finely ground. Add bread and 3 tablespoons lemon juice and process until smooth. With motor still running, add oil in a slow, steady stream until incorporated. Transfer to a bowl, then stir in salt and pepper and lemon juice to taste.
  • Cook cauliflower:
  • Remove any leaves from cauliflower, leaving core intact. Cut cauliflower into 1/2-inch-thick slices as if it were a loaf of bread, then cut slices into 2-inch pieces (some florets will separate).
  • Bring cauliflower to a boil with enough water to cover it in a 4- to 5-quart pot, then reduce heat and simmer until just tender, 4 to 6 minutes. Drain well in a colander and pat dry.
  • Heat 2 tablespoons oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté half of cauliflower, turning over occasionally, until very well browned on both sides, about 8 minutes total.
  • Transfer to a platter with a slotted spatula and season with salt and pepper.
  • Wipe out skillet, then sauté remaining cauliflower in remaining 2 tablespoons oil in same manner, transferring to platter and seasoning.
  • Serve cauliflower, warm or at room temperature, with sauce and celery leaves (if using).
