KETO CAULIFLOWER PIZZA BITES
Who says you can't have pizza when you are living the keto lifestyle? These protein-packed cauliflower bites are cheesy and packed with the same flavors you'll find on a classic slice --garlic, onion, Italian seasoning and some red chile flakes, for heat. We add a touch of jarred marinara sauce to the mix and also serve more sauce warm on the side. Just make sure the one you use is keto-approved and has no added sugar.

- Put the cauliflower and 1/4 cup water into a medium heat-safe glass bowl. Wet a paper towel and lay over the cauliflower. Microwave until fork-tender, 6 to 8 minutes, depending on your microwave. Carefully remove the paper towel, transfer the cauliflower to a food processor (leaving any water behind in the bowl) and cool for 10 minutes. Clean out the glass bowl and set aside.
- Meanwhile, position a rack in the center of the oven and preheat to 400 degrees F. Line a baking sheet with parchment and set aside. Stir together 1 tablespoon of the Parmesan and 3 tablespoons of the Italian cheese blend in a small bowl, then set aside.
- Add the parsley to the food processor and pulse until the cauliflower is finely chopped and similar to the texture of rice. Transfer to a large clean kitchen towel and wring out any excess water.
- Transfer the cauliflower mixture to the reserved bowl along with the whole egg, egg yolk, red chile flakes, Italian seasoning, onion powder, garlic powder, 3/4 teaspoon salt, almond flour, marinara sauce and the remaining 1/4 cup Parmesan and 3/4 cup plus 1 tablespoon Italian cheese blend. Use your hands to mix everything together until well combined.
- Scoop heaping tablespoons of the mixture onto the prepared baking sheet, spacing them evenly apart, for about 28 total. Lightly wet your hands, then roll each mound into a round ball, re-wetting your hands as needed. This helps keep your hands from becoming sticky and makes rolling the mix much easier to do. Spray the balls with the cooking spray and sprinkle the tops with the reserved cheese mixture, pressing the cheese gently onto the tops to help it adhere.
- Bake in the oven until light golden brown and cooked through, about 25 minutes, rotating the baking sheet once halfway through the cooking time.
- Transfer to a platter and serve with additional warm marinara sauce alongside, for dipping.

when I finally got around to making and tasting this low carb phenomenon (as it became), I actually enjoyed it - not for its low carb appeal, but because it tastes great! I don't think of it as "pizza" necessarily, but I'm totally game for cauliflower pizza bites.

- Grate the head of cauliflower with a box grater or finely chop it in a food processor. (You should have about 3½ cups.) Place the cauliflower in the center of a clean kitchen towel and twist it firmly to squeeze out all the water. (This can be done in two batches to make it easier to drain all the water from the cauliflower.) Place the cauliflower in a large bowl and add the eggs, flour, Parmesan cheese, salt and pepper. Combine well.
- Pre-heat the air fryer to 400°F.
- Shape little patties out of the cauliflower mixture, using roughly 2 tablespoons at a time. Place the patties in a single layer into the air fryer basket and spritz with oil. Air-fry in batches: 8 minutes on one side, flip over and then air-fry for an additional 2 minutes.
- To make the pepperoni pizza bites, flip the cauliflower crusts back over and top with pizza sauce, mozzarella cheese and mini pepperoni slices. Air-fry at 360°F for 3 to 5 minutes, until the cheese has melted. Let the bites rest for a few minutes before serving with a sprinkling of oregano on top.
- To make the goat cheese & olive pizza bites, flip the crusts back over and brush the crusts with some olive oil. Top with the goat cheese and black olives. Air-fry at 360°F for 3 to 5 minutes until the cheese has melted. Transfer the pizza bites to a platter and then sprinkle with the lemon zest, chopped rosemary and freshly ground black pepper.

- Preheat oven to 350°F.
- Place the cauliflower rice in a microwave safe bowl and sprinkle with pinch of salt.
- Mix to combine.
- Cover with a lid.
- Microwave at 600W for 5 minutes.
- Remove from the microwave oven and allow to cool completely.
- Using a clean dish towel or cheese cloth, drain the cauliflower completely, removing as much water as possible.
- Transfer the cauliflower to a bowl.
- Add the eggs, coconut flour, baking powder, garlic powder and Italian seasoning.
- Season to taste with salt and black pepper.
- Mix to combine.
- Line a large baking sheet with parchment paper.
- Scoop out mixture 2 tablespoons at a time and shape into rounds ½ inch thick.

VEGAN CAULIFLOWER PIZZA BITES

- Preheat oven to 400 ° F/ 205° C. Layer a 12 mini muffin tin pan with parchment paper strips - it makes it so easy to remove.
- Remove the cauliflower leaves. Using a mandolin/grater, shred the cauliflower to make a "cauliflower" rice. Place the cauliflower rice in a large bowl with a paper towel over it and microwave it for 5 minutes.
- Remove and allow it to cool down. Put the cauliflower in a thin kitchen towel, and over a bowl or the sink, and bundle and squeeze tightly. A lot of liquid will be released! Keep squeezing until you can't get any liquid out. The cauliflower will look thick and fluffy and almost mealy.
- In a bowl, mix the cauliflower, cheese, flax egg, salt, pepper, marinara sauce, garlic powder, italian seasoning, and crushed red pepper, except the extra 2 tablespoons of cheese. Using a tablespoon measuring, scoop the mix and put one tablespoon into each cup, then distribute the rest evenly among the cups. press them down tightly together.
- Bake for 12-15 minutes. When finished, remove from over, top the cups with the remaining 2 tablespoons cheese, then broil for about 1 minute (please watch them, they burn easily).
- After broiling, allow to cool on a wire rack for about 15 minutes and then remove from pan by lifting the parchment paper edges out.
- Serve with extra marinara sauce - enjoy!!

- Preheat oven to 400 degrees F.
- Steam frozen riced cauliflower in the microwave for 4-5 minutes. Once cool enough to handle, dump onto a dish towel or cheese cloth and wring out excess water. Squeeze until only a couple drops come out!
- Add cauliflower, one half cup of mozzarella, parmesan, and spices to a medium mixing bowl, stirring until well combined.
- Divide mixture between twelve wells of a lightly greased muffin tin (I used olive oil) and press down into wells using fingers.
- Bake for 10-15 minutes or until browned on edges.
- For the classic margherita pizzas, top each of four pre-baked crusts with 1 tsp. pizza sauce, 1 tbsp. mozzarella, 1 tbsp. tomato, and half a teaspoon of fresh basil.
- For the veggie supreme pizzas, top each of four pre-baked crusts with 1 tsp. pizza sauce, 1 tbsp. mozzarella, and half a tbsp. each green pepper, mushroom, and red onion.
- For the pepperoni pizzas, top each of four pre-baked crusts with 1 tsp. pizza sauce, 1 tbsp. mozzarella, and 1 tbsp. pepperoni.
- Return muffin tin to the oven and bake for 5-10 minutes until cheese is melted.
- Let pizza bites cool 10 minutes before attempting to remove from muffin tin.
- Enjoy hot! Leftovers can be stored in the fridge in an airtight container up to one week, or in the freezer up to one month.

- Preheat oven to 400 degrees F. Pulse cauliflower in a food processor until the florets have broken down into crumbs, resembling a rice like consistency. Transfer cauliflower rice to a microwavable bowl and loosely cover with a paper towel. Microwave on high for 5 minutes.
- Once the cauliflower rice has cooled, transfer to a dish cloth (you may want to do this in two batches) and squeeze out as much of the juice as possible. Transfer the dried cauliflower to another dry dish cloth and squeeze again to ensure you have gotten as much of the juice out as possible. Transfer the dried cauliflower to a bowl and mix in the egg, Parmesan cheese and seasoning.

- Heat oven to 400 degrees F. Toss the cauliflower with the olive oil and all the spices and evenly spread out on a baking sheet.
- Bake cauliflower until tender and starting to caramelize, about 20 minutes. Serve immediately with warm marinara sauce.

- Preheat oven to 425 degrees F (220 degrees C). Line a muffin tin with parchment paper squares.
- Grate cauliflower into a microwave-safe bowl using a fine grater. Chop up any remaining pieces that are too small to grate but too big for the crust.
- Microwave cauliflower until soft and tender, 4 to 6 minutes. Pour cauliflower into a clean dish towel cool easily handled, 15 to 20 minutes.

- Cut your cauliflower head into small pieces (remove green stem).
- Add to a food processor. Pulse the cauliflower until it resembles small crumbs.
- Add all the cauliflower crumbs to a kitchen towel or cheesecloth. Twist the cloth until water from the cauliflower comes out. Continue to squeeze until no more water comes out.
- Add the cauliflower to a large bowl. Add in your eggs, flour, parmesan cheese, salt, and pepper. Mix.
- Preheat your air fryer to 400 degrees. You do this by setting your air fryer to the temperature for about 5 minutes.
- Cut out parchment paper the size of your Air Fryer. (This is not necessary, but it does help in the transfer of the pizza to the air fryer. You can also just use a spatula to transfer.) Take 2 tbsp of your cauliflower pizza into the palm of your hand. Roll in a ball, and then flatten into a thin layer. Add as many pizzas as you can to your parchment paper. My air fryer will fit 4 at a time.
- Cook at 400 degrees for 8 minutes. Flip the pizza over and cook at 400 degrees for 3-4 minutes (depending on your preference of softness to crunchiness).
- Flip the pizza back over again where the first side is on the bottom again. Add your pizza sauce, cheese, and 3 pepperonis'. Cook again at 360 degrees for 4 minutes.
- Remove with a spatula to your plate or serving dish. Top with parsley, oregano, parmesan cheese, etc. and enjoy!

- Preheat the oven to 350 degrees F.
- Grate the cauliflower into a large bowl. Sprinkle salt over cauliflower and mix together.
- Set aside for 20 minutes while the salt draws moisture out of cauliflower.
- Pour the cauliflower out onto 2 paper towels. Wrap up the shredded cauliflower and wring it out to drain the excess moisture from the cauliflower.
