CAULIFLOWER PATTIES RECIPE
These cauliflower fritters are super simple to make, versatile, and packed with fiber and plant-based protein. Perfect for serving as bite-sized fritters, medium patties, or large cauliflower burgers. Plus, they're gluten-free, egg-free, dairy-free, low-fat, and can be pan-fried, baked, or air fried!

Steps:
- Cook the cauliflower florets in salted water until tender (about 10-15 minutes), then discard the water.
- Meanwhile, combine all dry ingredients in a bowl, and set aside.
- Pulse all the wet ingredients (except the oil) in a food processor until combined (don't over-process, though. There should still be texture, not a paste).
- Add the wet ingredients to the bowl of dry ingredients and combine with your hands.
- Form 8-10 patties and fry them with a little oil in a large skillet on both sides (about 5 minutes each) until golden brown.
- Serve with vegan sour cream, tzatziki, Ranch dressing, or tahini dressing,

This is one of my Mother's recipes and it is delicious. If cauliflower is your favorite vegetable then you'll like this. I'm pretty sure of it because cauliflower is not one of my favorite veggies and I like this one a lot.

- Cook cauliflower in water until soft.
- Mash cauliflower.
- Let it cool enough to handle.
- Add egg and breadcrumbs or flour and mix well.
- Shape into patties.
- Heat oil in frying pan.
- Put two or three cauliflower patties in at a time.
- Fry three or four minutes on each side or until brown.

- In a large pan, sauté onion in oil over medium (not high) heat until onion just begins to turn translucent (about 3 minutes). Do not brown onions.
- Meanwhile, if making your own bread crumbs in food processor or chopping parsley in the food processor, prepare them now.
- Place 1/2 cup bread crumbs, 1/2 cup chopped fresh parsley, and cooked rice in food processor. Do not process yet.
- Using a rubber spatula, scrape sautéed onions into processor.
- Place pan that onions were sautéed in back on stove and add cauliflower and enough water (about 1/3 cup) to steam cauliflower. Turn heat to high and cook until cauliflower is just tender. Don't overcook; you don't want the cauliflower to be soft and mushy.
- While cauliflower is cooking, add remaining ingredients to food processor. Do not process yet.
- When cauliflower is tender, add it to food processor. Pulse a couple times. Remove lid and stir with a spoon. Pulse again until mixture is well chopped but not pureed. (See note in post above this recipe.)
- Shape mixture into patties and place onto oiled baking sheet.

- Preheat oven to 375.
- Boil or steam cauliflower until soft.
- Saute onion and bell pepper over low heat until soft.
- Add garlic and saute for another minute or so.
- In a large bowl, smash chick peas up well with a fork or the bottom of a cup.
- Add cauliflower and smash up as well.
- Add all other ingredients and stir until combined.
- Mix should be wet but come together in a ball without falling apart.
- Carefully make a ball in your hands with the mix. I did mine a little bigger than a golf ball.
- Press ball between hands to make a patty.
- Place patty on oiled pan or baking dish.
- Continue with the rest of the mix.
- Bake for 25 Minutes, flip the patties. and bake for another 20 minutes or until browned.

- Bring a large pot of salted water to a boil. Add the cauliflower and cook it just until fork tender, 3 to 5 minutes. Transfer it to a cutting board and using a sharp knife, cut it into very small pieces. (The cauliflower pieces should be the size of peas or smaller.)
- Measure out 4 cups of the chopped cauliflower. (Discard the remaining cauliflower or use for cauliflower tots or mashed cauliflower).
- Combine the cauliflower, flour, eggs, garlic, scallions, 1/2 teaspoon salt and 1/4 teaspoon pepper in a bowl and stir until well combined.
- Line a plate with paper towels. Heat a nonstick skillet over medium-low heat and lightly coat it with olive oil. Scoop out 2- to 3-tablespoon mounds of the cauliflower mixture into the pan, flattening the mounds slightly with a spatula and spacing them at least 1 inch apart.

- Pulse cauliflower in a food processor until it resembles a rice texture (see notes below if you don't have a food processor).

- Preheat oven to 400 degrees F (200 degrees C). In a large bowl, combine flour, 1 1/2 teaspoons curry powder, and pinch of salt.
