These Baked Cauliflower Wings are the healthy version of a crowd favorite!

1 head cauliflower (washed and dried )
1 cup Panko bread crumbs
½ cup seasoned bread crumbs
1 cup milk
1 cup flour
1 teaspoon garlic powder
pepper to taste
1 tablespoon olive oil
⅓ cup butter (melted)
⅓ cup buffalo sauce (room temp or warmed)
1 tablespoon honey (optional)
½ teaspoon garlic powder

Steps:

  • Preheat oven to 450°F.
  • Cut cauliflower into bite-sized pieces.
  • Combine all batter ingredients in a large bowl and whisk until smooth. Add cauliflower and toss well to combine.
  • Pour the cauliflower into a large strainer and let sit 5 minutes allowing excess batter to drip off. Gently toss cauliflower in the breadcrumb mixture.
  • Place on a parchment lined pan and bake 15 minutes. Flip cauliflower and cook 8-10 minutes or until cauliflower is tender-crisp and coating is crispy.
  • If desired, toss caulfilower with half of the sauce before serving (I prefer to dip to keep it crispy).
  • Serve with remaining sauce for dipping.

1 small head cauliflower, broken into small florets
1 cup all-purpose flour
1 teaspoon paprika
salt and ground black pepper to taste
2 cups almond milk, or as needed
½ cup bread crumbs, or as needed
2 ounces vegan margarine (such as Earth Balance®)
1 (8 ounce) bottle hot pepper sauce (such as Frank's RedHot®)

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Line a cookie sheet with parchment paper.
  • Mix flour, paprika, salt, and pepper together. Add enough almond milk to create a slightly thick, soupy texture.
  • Place bread crumbs in a shallow bowl. Dip cauliflower pieces one at a time into the batter, then roll in bread crumbs. Place on the prepared cookie sheet.
  • Bake in the preheated oven until starting to brown, 15 to 20 minutes.
  • While 'wings' are baking, melt margarine and whisk together with hot sauce.
  • Reduce oven temperature to 425 degrees F (220 degrees C). Dip 'wings' into the sauce and place back on the cookie sheet; continue baking for 10 to 15 minutes. Serve immediately.

Chicken wings are baked until super crispy and then tossed with a sweet and tangy balsamic-honey glaze and whole cloves of roasted garlic and served with a cool buttermilk-blue cheese sauce for dipping.

1/4 cup sour cream
1/4 cup mayonnaise
2 ounces crumbled blue cheese
2 tablespoons buttermilk
1 tablespoon chopped chives
2 cloves garlic, finely grated
Kosher salt and freshly ground black pepper
2 heads garlic
4 tablespoons olive oil, plus more for oiling the pans
4 pounds split chicken wings, wing tips removed
Kosher salt and freshly ground black pepper
3 tablespoons balsamic vinegar
2 tablespoons honey
2 sprigs thyme
1/2 teaspoon crushed red pepper flakes

Steps:

  • Whisk together the sour cream, mayonnaise, blue cheese, buttermilk, chives and garlic. Season to taste with and pepper. Refrigerate until ready to serve.
  • Preheat the oven to 425 degrees F. Drizzle the garlic heads with 1 tablespoon of oil and wrap in foil. Bake until golden and soft, about 1 1/2 hours.
  • After about a 30 minutes, generously oil 2 rimmed baking sheets. Toss the wings with 2 teaspoons salt and a few grinds of pepper and divide them between the two baking sheets, spreading them in a single layer. Bake until very crispy, about 55 minutes.
  • Squeeze the baked garlic from the heads into a large bowl. Combine the vinegar, honey, thyme, red pepper flakes, 1/3 cup water and 1 teaspoon salt in a small saucepan and bring to a boil over medium-high heat. Reduce the heat slightly and simmer briskly until the liquid becomes syrupy and is thick enough to coat the back of a spoon, about 5 minutes. Remove from the heat and whisk in the remaining 3 tablespoons of oil. Whisk into the bowl with the garlic.
  • Transfer the baked wings to the bowl with the glaze and toss to combine. Serve with the dipping sauce.

DEEP-FRIED SRIRACHA BUFFALO WINGS WITH BLUE RANCH DIPPING SAUCE



Deep-Fried Sriracha Buffalo Wings with Blue Ranch Dipping Sauce image

Stir blue cheese into a ranch-style dressing and serve it alongside hot wings made with sriracha.

1/4 cup sour cream
2 ounces crumbled blue cheese
2 tablespoons buttermilk
1 tablespoon chopped chives

Vegetable oil, for frying
4 pounds split chicken wings, wing tips removed
Kosher salt and freshly ground black pepper
1/2 cup cornstarch
16 tablespoons (2 sticks) unsalted butter, melted
3/4 cup sriracha
For serving: celery sticks (optional)

Steps:

  • Whisk together the mayonnaise, sour cream, blue cheese, buttermilk, chives and garlic. Season to taste with salt and pepper in a small bowl. Cover and refrigerate until ready to serve.
  • Fill a large wide pot with about 3 inches of oil. Attach a deep fry thermometer to the side of the pot and bring to 375 degrees F over medium-high heat.
  • Meanwhile, toss the wings with 2 teaspoons salt and a few grinds of pepper together in a large bowl. Sprinkle the cornstarch over top and toss to coat thoroughly.
  • Working in batches, fry the chicken wings until golden and cooked through, about 15 minutes. Transfer to a paper towel-lined baking sheet to drain. Return the oil to 375 degrees F between batches.
  • Whisk the melted butter and sriracha together in a large bowl. Transfer the fried wings to the bowl and toss to coat. Serve with the dipping sauce and celery sticks if using.

By frying the cauliflower whole, it turns a deep golden color and becomes perfectly tender in a fraction of the time it would take if you were to roast it. We add a creamy lemon dipping sauce that adds just the right amount of zip.

1 cup mayonnaise
Zest and juice of 1 large lemon (about 1 tablespoon zest and 1/4 cup juice)
1/4 cup flat-leaf parsley leaves, roughly chopped
Kosher salt and freshly ground black pepper
Vegetable oil, for frying
1 large head cauliflower with the stem attached (about 3 pounds)

Steps:

  • Whisk together the mayonnaise, lemon zest and juice, parsley and a large pinch of salt and pepper in a medium bowl until smooth. Refrigerate while you fry the cauliflower.
  • Fill a large, deep stockpot halfway with oil and heat to 375 degrees F over medium-high heat. Set a cooling rack over a baking sheet.
  • Gently lower the cauliflower into the hot oil with a large spider or large slotted spoon. This might splatter so be very careful once the cauliflower is in the oil. The cauliflower might not be fully submerged, but that is okay. Cook until the cauliflower is golden brown and you can easily insert a paring knife into one of the florets, 5 to 7 minutes, carefully flipping the cauliflower halfway through the cooking time.
  • Lift the cauliflower out of the hot oil using the large spider or slotted spoon and transfer to the cooling rack. Season liberally with salt. Allow the excess oil to drip away before putting the cauliflower onto a large serving platter. Serve alongside the creamy lemon sauce.

1 tbsp sweet smoked paprika
1⁄2 tbsp ground cumin
1 tsp garlic powder
100g plain flour
200ml buttermilk or kefir
1 head of cauliflower (500g), broken into florets
80g hot sauce
1½ tbsp maple syrup
1 tbsp butter
celery sticks, to serve
100g Greek yogurt
3 tbsp mayonnaise
2 tbsp chopped chives
1-2 tbsp milk

Steps:

  • Heat the oven to 220C/200C fan/gas 7 and line a baking tray with baking parchment. Mix together the paprika, cumin, garlic powder, flour and ½ tsp salt in a large bowl. Make a well in the centre and whisk in the buttermilk. Tip in the cauliflower and toss to coat. Spread out the cauliflower on the baking tray and cook for 20-25 mins, turning halfway through, until crisp at the edges.
  • Warm the hot sauce, maple syrup and butter in a small pan set over low heat, for 2-3 mins. Liberally brush over the cauliflower and put back in the oven for 8-10 mins.
  • For the ranch dip, whisk together the yogurt, mayo, chives, milk and a pinch of salt in a bowl. Serve the with the cauliflower alongside some celery sticks for dipping.

Cauliflower is a blank canvas that can take on flavors that pack a punch, like Buffalo sauce. It also has lots of craggy edges that the sauce can cling to for maximum flavor. For crisp-edged buffalo cauliflower without a fryer, turn on the broiler. Once the tender florets are roasted, broil them a few minutes so the silky, spicy sauce caramelizes and chars in spots. (A finish under the broiler can also elevate chicken wings coated in Buffalo sauce.) Stir together a quick Ranch-style yogurt sauce for dipping, and get on with the game (or lunch).

1 large head cauliflower (about 2½ pounds), cut into medium and large florets (about 8 cups)
3 tablespoons extra-virgin olive oil
Kosher salt and black pepper
4 tablespoons unsalted butter
1/3 cup Buffalo-style hot sauce
1/2 cup full-fat yogurt
1/4 cup buttermilk or mayonnaise
2 tablespoons finely chopped dill, parsley, and-or chives
1 1/2 tablespoons white wine vinegar or rice vinegar or lemon juice
1/2 teaspoon garlic powder or 1 small garlic clove, grated

Steps:

  • Heat oven to 400 degrees, and place a rack close to the broiler and another in the middle of the oven. (If your broiler is in a drawer below the oven, no need to move the racks.)
  • In a large bowl, toss the cauliflower with the oil to evenly coat, then season with salt and pepper. Spread out the cauliflower on a baking sheet in an even layer (arrange flat edges pan-side down for extra browning). Bake the cauliflower on the middle rack, stirring occasionally, until just tender, about 15 minutes.
  • As cauliflower roasts, make the sauce: Melt the butter with the hot sauce in a medium saucepan or skillet over low heat, and stir to combine. Season to taste with salt and pepper. Once melted, turn off the heat, but keep the saucepan on the stove.
  • Make the yogurt ranch (optional): Stir together all the ingredients in a small bowl. Season to taste with salt and pepper, and set aside.
  • Pull the cauliflower out of the oven, and turn on the broiler. Transfer the cauliflower to the hot sauce-butter mixture, stirring the cauliflower to fully coat with the sauce. Then, using a slotted spoon, transfer the cauliflower back to the baking sheet in an even layer.
  • Broil until the cauliflower is singed in spots and cooked throughout, about 5 minutes. (Depending on your broiler, you may need to rotate the pan after 2 or 3 minutes for even cooking.) Serve with yogurt ranch for dipping or drizzling, if desired.
