CAULIFLOWER GRATIN

Cauliflower Gratin image

Cauliflower gratin is a lower-carb side dish that pairs well with pork, ham or beef. It's so creamy and delicious that even the kids will ask for seconds! If you like a little crunch, sprinkle buttered bread crumbs over the top for the last five minutes in the oven. - Mary Zinchiak, Boardman, Ohio

"THESE AREN'T POTATOES?" GARLIC CAULIFLOWER AU GRATIN

This is a great alternative to any potato side dish. Cauliflower has half the calories of potatoes and one-tenth the simple carbohydrates - so you can get your calories where you want to, from the cheese and butter! This recipe is so savory you just might prefer it to potatoes - my family certainly does. Have it with a salad and a nice steak. Like most of my recipes, this one feels a little tedious and plods along the first time you make it. However, it really is quite simple and so packed with flavor that you can't go wrong!

Yield 10

Number Of Ingredients 11

1 large head cauliflower
1 cup half-and-half

6 cloves garlic, thinly sliced, divided
3 cups shredded Cheddar cheese, divided

CAULIFLOWER GRATIN

Cauliflower Gratin image

Provided by Food Network Kitchen

Categories     side-dish

Time 1h15m

Yield 6 servings

Number Of Ingredients 14

2 1/2 cups milk
1/4 small onion, studded with 1 clove
1 small bay leaf
1 small sprig fresh thyme
5 tablespoons unsalted butter, divided
3 1/2 tablespoons all-purpose flour
1 head cauliflower, trimmed and cut into 1 1/2-inch florets (about 7 1/2 cups)
1 teaspoon kosher salt, plus more as needed
1 generous cup finely grated Gruyere cheese (about 3 ounces)
1 teaspoon Cognac or brandy
Pinch of cayenne
4 gratings of fresh nutmeg
1 cup fresh bread crumbs
1 tablespoon minced fresh flat-leaf parsley

Steps:

  • Preheat oven to 400 F. Butter a 1 1/2 quart gratin dish and set it aside.
  • Make the sauce. In medium sauce pan, heat the milk with the onion, bay leaf, and thyme to just below the boiling point. Set aside. In another medium pan, melt 2 tablespoons of the butter over medium heat, and then sift in the flour. Cook the mixture, stirring constantly with a wooden spoon in a figure-8 motion, until it lightens in color, about 2 minutes. Remove from the heat and cool slightly.
  • Gradually whisk the milk mixture into the flour mixture. Bring to a boil over medium high heat, whisking to prevent lumps. Reduce heat to low, and simmer, whisking occasionally, until the sauce is thickened, about 10 minutes.
  • While the sauce simmers, bring a medium pot of water to a boil, season with salt, and add the cauliflower. Cook until tender, about 4 to 5 minutes. Drain and pat dry. Arrange the cauliflower, florets-side up, in the buttered gratin dish.
  • Strain the sauce and season it with a teaspoon salt, pepper, nutmeg, and cayenne to taste. Whisk in the cheese, 1 tablespoon of the butter, and the Cognac until smooth, taking care not to over mix. Pour the cheese sauce over the cauliflower.
  • Melt the remaining 2 tablespoons butter in a small saucepan. In a medium bowl, mix the bread crumbs with the butter to coat evenly. Sprinkle the top of the cauliflower with the buttered breadcrumbs. Bake until the top of the cauliflower gratin is golden brown and bubbly, about 20 to 25 minutes. Let rest for 5 minutes before serving. Serve hot.

  • Make the topping: in a saute pan melt the butter over medium-low heat. Add the panko and thyme. Stirring often, cook for about 2 minutes. Transfer to a bowl to cool.
  • Cut one of the heads of cauliflower into equal-sized florets. You can also use most of the stem, cutting it into smaller pieces since it's more dense and takes longer to cook than florets. Cover the bottom of a large pot with about two inches of water. Add the cauliflower and sprinkle with salt. Bring to a boil and cook for about 5 minutes or until tender. Drain the cauliflower, and transfer it to a blender.
  • To the blender add the water, cashews, miso, corn starch, tapioca, nutritional yeast, nutmeg, cayenne, lemon juice and salt. Blend until smooth, and set aside.
  • Preheat oven to 375 degrees F. Locate a 2.5 quart gratin dish or 3 quart casserole. Prepare the second head of cauliflower by discarding the stem and cutting into equal-sized florets. Cook the cauliflower just as you did the first batch. Drain well.
