2 cups frozen peas
½ cup water
¼ cup sesame oil, divided
4 cups cubed pork loin
6 green onions, sliced
1 large carrot, cubed
2 cloves garlic, minced
20 ounces shredded cauliflower
6 tablespoons soy sauce
2 eggs, beaten

Steps:

  • Stir peas and water together in a saucepan; bring to a boil, reduce heat to medium-low, and cook and stir until peas are tender and heated through, about 5 minutes. Drain and discard water.
  • Heat 2 tablespoons sesame oil in a wok over medium-high heat. Cook and stir pork in hot oil until lightly browned on all sides and cooked through, 7 to 10 minutes. Transfer meat to a plate.
  • Heat remaining 2 tablespoons sesame oil the wok. Saute green onions, carrot, and garlic in hot oil until just softened, about 5 minutes. Add cauliflower; cook and stir until cauliflower had a tender but firm to the bite, 4 to 5 minutes.
  • Stir pork, peas, and and soy sauce into cauliflower mixture and stir-fry until mixture is hot and slightly browned, 3 to 5 minutes.
  • Move pork-cauliflower mixture to one side of the wok; pour beaten eggs onto empty side. Scramble eggs until cooked through, 3 to 5 minutes; stir cooked eggs into the pork-cauliflower mixture, breaking up any large chunks.

The trick is to cook it hard and fast, just like real fried rice, and to ensure the cauliflower rice are "cooked rice size" rather than blitzed into tiny couscous-size grains. 1.5 tbsp oil (, separated (vegetable, canola, peanut))
3 garlic cloves (, minced)
1/2 onion (, finely chopped)
75g/ 2.5 oz ham or bacon (, diced)
1 1/2 cups frozen diced peas, carrots, corn ((mix, or other diced fresh veg of choice))
400g (4 cups) cauliflower rice, raw ((Note 1))
2 eggs (, lightly whisked)
2 green onions (, finely sliced)
1 tbsp Mirin (or Chinese Cooking Wine) ((sub dry sherry or cooking sake) (Note 2))
1 tbsp Oyster Sauce ((sub Hoisin))
1.5 tbsp soy sauce (, light or all purpose (Note 3))
1 tsp sesame oil (, toasted)

Steps:

  • Heat 1 tbsp oil in a large skillet over high heat.
  • Add garlic and onion, cook for 30 seconds.
  • Add ham, cook for 1 minute to release flavour.
  • Add frozen vegetables, cook 2 minutes until carrot is almost cooked.
  • Add cauliflower and Sauce. Cook, stirring regularly, for 4 minutes until sauce is reduced and cauliflower is almost cooked - firm, tender crisp, not soft and mushy.
  • Push the cauliflower to one side of the skillet. Add 1/2 tbsp oil, let it heat up briefly, then pour in egg.
  • Leave for 10 seconds, then leisurely scramble it. Once almost cooked, mix egg through cauliflower.
  • Toss through green onions then serve immediately!

½ lb ground beef, can substitute chicken, pork, shrimp, or tofu
1 cup carrot, diced
1 cup frozen peas
2 eggs
white pepper, to taste
3 tablespoons soy sauce
green onion, chopped, for garnish

Steps:

  • Break down a head of cauliflower in a food processor until it's the size of rice.
  • Heat sesame oil over high. Add garlic and fry until fragrant.
  • Add the beef, chicken, pork, shrimp or tofu and cook until 80% done.
  • Add carrots and cauliflower, stir until thoroughly incorporated. Mix in peas.
  • Push ingredients to the sides of the pan to create a well. Pour in 2 whisked eggs and let it set for 15 seconds. Scramble eggs and fold into the cauliflower rice.
  • Season with white pepper and stir in soy sauce.
  • Garnish with chopped green onions and serve.

1 medium head cauliflower (about 1 3/4 pounds), stems discarded, cut into 1-inch florets
1 tablespoon plus 2 teaspoons peanut oil, plus additional for oiling the pan
2 large eggs, well-beaten
4 ounces fresh shiitake mushrooms, stems discarded, sliced into 1/4-inch pieces
6 scallions, thinly sliced, 1 tablespoon reserved
1/4 cup coarsely grated carrot (from about 1 carrot)
1 large garlic clove, minced
1 1/2-inch piece ginger, peeled and minced
2 tablespoons soy sauce
2 teaspoons toasted sesame oil
Kosher salt
1/2 cup frozen peas, defrosted in a strainer at room temperature and rinsed

Steps:

  • Preheat the oven to 425 degrees F. In 2 batches, break up the florets into a food processor and pulse until the mixture resembles couscous, 10 to 12 seconds. Spread the cauliflower out on a foil-lined, lightly oiled baking sheet and roast, stirring halfway through, until the cauliflower begins to soften and is golden in spots, about 15 minutes. Allow to cool 10 minutes, then transfer to a bowl.
  • Heat 2 teaspoons peanut oil in a well-seasoned wok or large nonstick skillet over medium-high heat. Swirl to coat the pan. Pour in the eggs and swirl the pan so the egg forms a large thin pancake. (Lift the edge of the egg to allow any uncooked egg to run to the center.) As soon as the egg has set, turn it out of the pan onto a cutting board. Cool and cut into 1/2-inch pieces.
  • Meanwhile, wipe out the pan with a paper towel and heat the remaining tablespoon peanut oil over high heat. Add the mushrooms, scallions and carrots and cook, stirring, 1 1/2 minutes. Add the garlic and ginger and cook, stirring, 1 minute more. Add the soy sauce, sesame oil, cauliflower and 1/2 teaspoon salt and cook, stirring often, for 2 to 3 minutes. Add the peas and reserved egg and cook, stirring, until heated through, 1 to 2 minutes. Top with the reserved scallions and serve immediately.

1 head cauliflower (1 1/4 pounds), cored, broken into pieces (about 5 1/2 cups)
2 tablespoons plus 2 teaspoons safflower oil
3 large eggs
Coarse salt and freshly ground pepper
3 carrots, peeled and diced (1 cup)
1 yellow onion, chopped (1 cup)
3 cloves garlic, minced (1 tablespoon)
1 tablespoon minced ginger (from a 1-inch piece)
1 tablespoon sambal oelek
1 cup frozen peas, thawed
1/4 cup low-sodium soy sauce

Steps:

  • Pulse cauliflower florets in 2 batches a food processor until finely chopped, but not pureed, about 6 quick pulses (4 cups chopped cauliflower).
  • Heat a large cast iron pan or wok over high until very hot, about 2 minutes (a sprinkle of water should evaporate immediately). Add 2 teaspoons oil and swirl to coat. Beat together eggs, 2 teaspoons water, and 1/8 teaspoon salt. Add egg mixture to pan and cook, pushing eggs toward center of pan to form large, soft curds, about 30 seconds. Transfer to a plate.
  • Add 2 tablespoons oil, carrots, and onion to pan; cook 2 to 3 minutes until softened and beginning to brown. Add garlic, ginger, and sambal oelek; cook stirring until fragrant, 1 minute. Add cauliflower; cook stirring occasionally and scraping the bottom of the pan, until just barely tender, 2 minutes. Remove from pan to a large bowl; add back eggs. Stir in peas and soy sauce. 3 teaspoons canola or vegetable oil
2 large eggs, lightly beaten
3 cloves garlic, minced
One 1-inch piece fresh ginger, peeled and grated
1 cup frozen mixed peas and carrots, thawed
1/4 cup thinly sliced scallions
1/4 cup plus 2 tablespoons low-sodium soy sauce, plus more for serving, optional

Steps:

  • Cut the cauliflower into chunks. Working in batches, pulse the cauliflower in a food processor until coarse in texture, like rice. This recipe uses about 4 cups of cauliflower rice. If you have any leftover, save it for another use.
  • Heat a wok or large skillet over medium-high heat. Add 1 teaspoon of the canola oil. Add the eggs and quickly scramble. Transfer the eggs to a plate and set aside. Heat the remaining 2 teaspoons canola oil. Add the garlic and ginger and cook, stirring constantly, about 1 minute. Add the peas and carrots, scallions and cauliflower. Stir-fry until the vegetables are tender, about 5 minutes.
  • As the vegetables are cooking, whisk the soy sauce and sesame oil together in a small bowl. Stir the sauce and chicken into the cauliflower mixture. Cook an additional minute or 2. Stir the cooked eggs back into the mixture. Serve with hot sauce and additional soy sauce if desired.
