A low carb, gluten free and keto friendly grilled cheese sandwich made with cauliflower bread. The end result is a flavorful and tasty grilled cheese that looks a lot like regular grilled cheese.

2 slices cauliflower bread
1/4 cup shredded cheddar cheese

Steps:

  • Warm a nonstick skillet over the stove. Lightly toast both sides of your bread slices.
  • Sprinkle one bread slice generously with shredded cheese. Cover the cheese with the other bread slice. Place a small lid (one that is smaller than your skillet and just fits over the bread) on top to weigh down the bread and to increase the heat surrounding the bread. Cook and flip a few times until cheese is melted and both sides of the sandwich is evenly toasted.

A gluten-free option for grilled cheese lovers. Roasted cauliflower steaks are prepped, then wrapped around your favorite cheeses! Add tomatoes and you have a gluten free, vegetarian option for any time of the day!

1 small head cauliflower
¼ cup olive oil
½ stick unsalted butter
ground black pepper to taste
2 slices Gouda cheese
2 slices sharp Cheddar cheese
2 slices beefsteak tomato

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Remove the tough bottom leaves from the cauliflower, taking care not to remove the stem. Place on a cutting board with the stem facing upwards; cut vertically on both sides of the stem to remove the loose florets. Reserve florets for another use. Cut vertically through the stem into 2 even "steaks", about 1 inch thick. Transfer to the prepared baking sheet.
  • Roast cauliflower in the preheated oven until soft and browned, about 15 minutes.
  • Heat olive oil and butter in a large frying pan. Cook cauliflower until browned on one side, 2 to 3 minutes. Flip cauliflower and shift to one side of the pan so you have space to warm cheese slices.
  • Lay cheese slices in the pan until they begin to melt, then place over the cauliflower steaks. Warm tomato slices in the same way. Season with black pepper. Cover cheeses and tomatoes with the second steak. Flip "sandwich" and cook over low heat until cheeses are melted, 2 to 3 minutes more.

1 head cauliflower
1 egg
1/2 cup parmesan cheese
1 teaspoon garlic powder
4 -8 slices cheddar cheese

Steps:

  • Add cauliflower florets to a food processor and blend until it reaches a rice consistency.
  • Transfer cauliflower rice to a microwave safe bowl and microwave 5 minutes at a time 4 times, stirring in between. This will help to draw out the moisture. Allow the microwaved rice to cool for about 30 minutes, until cool to the touch.
  • Combine cauliflower rice with egg, parmesan and garlic powder.
  • Divide mixture into 4 portions.
  • Flatten out each portion into a ¼-1/2" square "bread" shape on a baking sheet lined with parchment.
  • Bake at 450 Fahrenheit for 15-20 minutes, until golden brown. Allow to cool for 15 minutes before removing pieces from the pan.
  • Use a spatula to remove the cauliflower bread and assemble sandwiches. Place 1-2 slices of cheese in between two slices of cauliflower bread.
  • Place in a toaster oven for 5-10 minutes on broil until the cheese is melted and bread is toasty.
  • Enjoy!
