CURRIED CAULIFLOWER SOUP WITH APPLES



Curried Cauliflower Soup with Apples image

You'll love this unique cauliflower soup flavored with curry and topped with apples.

2 tablespoons extra virgin olive oil
1 medium yellow onion, roughly chopped
3 garlic cloves, smashed and peeled
2 teaspoons curry powder
½ teaspoon cinnamon
1 head cauliflower (2½ to 3 pounds), cut into small florets
1 tart yet sweet apple, such as Fuji or Honeycrisp, peeled and roughly chopped
6 cups (48 oz) low-sodium chicken broth
½ teaspoon salt
¼ teaspoon ground black pepper
2 tablespoons honey, plus more to taste
⅓ cup heavy cream
1 tart yet sweet apple, such as Fuji or Honeycrisp, peeled and finely diced
Heaping ¼ teaspoon curry powder

Steps:

  • Heat the olive oil in a large soup pot over medium heat. Add the onions and garlic and cook, stirring occasionally, until soft, about 4 minutes. Add the curry powder and cinnamon and cook a few minutes more.
  • Add the cauliflower, apple, chicken broth, salt and pepper. Bring to a boil, and then turn the heat down to a simmer. Cover the pot and cook for about 20 minutes, or until the cauliflower is tender.
  • Purée the soup with an immersion blender until completely smooth. (Alternatively, use a standard blender to purée the soup in batches; see note.) Stir in the honey and heavy cream. Bring the soup to a simmer, and then taste and adjust seasoning with salt, pepper and more honey. (For a sweeter soup, you'll need 2-3 tablespoons more honey). Keep the soup warm while you prepare the garnish.
  • For the garnish, toss the diced apples with the curry powder. Ladle the soup into bowls and top with a spoonful of curried apples.
  • Note: If using a standard blender to purée the soup: be sure not to fill the jar more than halfway; leave the hole in the lid open and cover loosely with a dishtowel to allow the heat to escape; and pour blended soup into a clean pot.
  • Freezer-Friendly Instructions: The soup can be frozen, without the cream, for up to 3 months. Defrost the soup in the refrigerator for 12 hours and then reheat it on the stovetop over medium heat until hot. Once heated through, add the cream and bring to a simmer before serving.

This simple but surprisingly flavorful puree is a satisfying stand-in for mashed potatoes, and it couldn't be easier. There's no cream in it and only a teensy touch of butter, so it's good for anyone counting calories or carbs. It pleases the meat-and-potatoes eaters at my table, even though it contains neither.

Steps:

  • Bring a 4-quart pot of salted water to a boil; add cauliflower and simmer until tender, 7 to 10 minutes. Drain cauliflower, reserving 1 cup cooking liquid.
  • Blend cauliflower and 1/4 cup cooking liquid in a blender until smooth, adding more water until desired consistency is reached. Add butter and pulse until incorporated; season with salt.

Take two classic ingredients and whip up a light, fresh vegetarian soup to feed a crowd in style

50g butter
4 onions , thinly sliced
1 ½kg cauliflower (about 2 large cauliflowers), broken up into very small florets
8 eating apples - 6 cored, peeled and chopped, 2 unpeeled and cut into matchsticks
2 vegetable stock cubes, or gluten-free alternative, crumbled
1 ½l milk
8 tbsp single cream
olive oil , for drizzling
a few thyme sprigs , leaves picked

Steps:

  • Melt the butter in a saucepan, add the onions and fry gently until softened. Add the cauliflower and diced apple and fry for 5 more mins. Add the stock cubes and milk and bring to the boil, then reduce to a simmer and cook for 5 mins, or until the cauliflower and apples are tender.
  • Use a hand blender or liquidiser to purée the soup until smooth and season (the soup can now be chilled for up to 48 hours or frozen, just reheat to serve). Divide into bowls and swirl 1 tbsp cream in each along with a drizzle of oil. Top with the apple matchsticks and thyme.

Seared Sea Scallops and Cauliflower Purée image

Scallops are easy to cook, once you know how. This recipe with a cauliflower purée is light and flavourful. This is a recipe from Robin's repertoire. I take no credit! This recipe is simple, looks stunning and it's delicious. A great way to impress dinner guests.

1 head Cauliflower (broken into small pieces)
1 liter Milk (semi-skimmed or whole)
12 Scallops (the best quality and as dry as possible)
4 strips of Bacon (or lardons)
3 sprigs parsley (chopped finely for serving)
Salt and Pepper
Butter for frying

Steps:

  • Heat the oven to 375°F and place the bacon on a tray lined with baking parchment.
  • Bake for about 15 minutes until very crispy. If your bacon is quite fatty, you may need to drain the fat halfway through. Reserve on kitchen paper towel.
  • Place the cauliflower into a saucepan with enough milk to just cover it.
  • Bring the milk to a boil and simmer on a low heat for about 10 minutes or until the cauliflower is soft. Leave to cool.
  • Purée the mixture until smooth. Sieve for extra smoothness.
  • Place back into the saucepan to reheat.
  • Season liberally with salt and pepper to taste.
  • Pat the scallops dry with kitchen paper. This is the key to allow them to become crispy.
  • Place a frying pan on medium-high heat and add a generous tablespoon of butter.
  • Allow the butter to melt and the pan to get hot.
  • Fry the scallops for 1-2 minutes on each side depending on the size. The scallops above are quite large so they were 2 minutes each side. You may need to do this in batches depending on the size of your frying pan.
  • Season the scallops with salt and pepper while in the pan.
  • Squeeze the bacon in the paper towel into create little bits.
  • Chop the parsley.
  • Dish out the reheated cauliflower purée to just cover the bottom of your plate. Next, place the scallops on the plate with the garnish. It helps if you have an extra pair of hands to assist with this step.
  • Drizzle with good quality olive oil and serve with crisp white wine.

1 Golden Delicious apple
1 teaspoon olive oil
Sea salt, preferably coarse
1 1/2 pounds cauliflower, trimmed and cut into large chunks
3 tablespoons butter, more if desired

Steps:

  • Preheat oven to 375 degrees. Slash apple in several spots and place it in a small baking dish. Sprinkle oil on top. Bake until apple is very tender and wilted, 30 to 40 minutes. Cool, peel and core apple. Reserve flesh.
  • Fill a large pot with water, season generously with salt, and bring to a boil. Add cauliflower and cook until very tender, 5 to 7 minutes. Drain and transfer to a food processor. Add half the apple and three tablespoons of butter. Process for 3 to 4 minutes, occasionally scraping down sides with a spatula; puree should get smoother and silkier the longer it processes.
  • Adjust seasoning, adding more apple, butter or salt as desired; there should be just a hint of sweetness from the apple. Transfer to a serving dish, and serve hot.

2 tablespoons (30g) unsalted butter
1 large (8-ounce; 225g) yellow onion, thinly sliced
4 medium cloves garlic, thinly sliced
1 (2-pound; 925g) head cauliflower, trimmed and cut into florets
2 cups (475ml) heavy cream or homemade or store-bought low-sodium chicken stock (or a combination of the two; see note)
1 sprig thyme
Kosher salt

Steps:

  • In a large saucepan, melt butter over medium-high heat. Add onion and garlic and cook, stirring often, until softened and translucent, about 5 minutes; lower heat as necessary to prevent browning.
  • Add cauliflower, cream and/or stock, and thyme. Cover, bring to a simmer, and cook, adjusting heat to maintain simmer, until cauliflower is tender, 5 to 6 minutes. Uncover and continue to simmer, stirring occasionally, until liquid is reduced by about three-quarters, about 20 minutes. Discard thyme sprig.
  • Using a blender or immersion blender, blend cauliflower and liquid to form a very smooth purée. Season with salt. (You can adjust purée consistency as needed: Thicken by cooking down further while stirring often over low heat in a wide nonstick skillet, or thin by whisking in liquid, such as stock, cream, or water.) Serve warm.
