CHEESY CELERIAC, LEEK & ROSEMARY GRATIN



Cheesy celeriac, leek & rosemary gratin image

Combine celeriac and leek with mature cheddar for an indulgent Christmas side dish. A spoonful of mustard or horseradish stirred through the cream wouldn't go amiss

25g butter
2 leeks, outer layer removed, washed of any grit and sliced into rings
small handful rosemary leaves, roughly chopped
1 bay leaf
300ml double cream
300ml milk
1 celeriac (about 500g), peeled, quartered and thinly sliced
100g cheddar or gruyère, coarsely grated

Steps:

  • Heat the butter in a saucepan. Add the leeks, rosemary and bay leaf, then cover and cook very gently over a medium-low heat for 15-20 mins until the leeks are soft. Pour over the milk and almost all of the cream, then season and bring to the boil. Remove from the heat and leave to cool a little, then scoop out the bay leaf.
  • Pour a little of the leek mixture into an ovenproof gratin dish. Arrange a layer of celeriac in the dish, then season. Spoon over some more of the leek mixture and scatter with a little cheese. Repeat the process, alternating between layers of the leek mixture, cheese and celeriac slices, then finish with a drizzle of cream and the last of the cheese. Can be prepared up to a day ahead and kept in the fridge.
  • Heat oven to 180C/160C fan/gas 4. Bake the gratin for 1 hr-1 hr 15 mins until the top is golden and the celeriac is tender when poked with a knife. If the gratin is browning a little too much, cover the dish in foil. Can be chilled, then reheated in a microwave or oven on a low heat with a drizzle more cream.

3 tablespoons unsalted butter, plus more for baking dish
1 (3-pound) head cauliflower, cut into florets
2 leeks, white and light green parts only, trimmed, and sliced crosswise into 1/4-inch pieces
2 small shallots, peeled and sliced into 1/8-inch rounds
1 to 2 teaspoons crushed red-pepper flakes
1 teaspoon fresh thyme leaves, coarsely chopped
1/4 cup all-purpose flour
1 1/2 cups whole milk
1 1/2 cups grated Gruyere cheese
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 350 degrees. Butter a shallow 2-quart baking dish and set aside.
  • Bring a large pot of salted water to a boil. Add cauliflower and cook until slightly tender, 2 to 3 minutes. Drain and rinse under cold water; transfer to a large bowl and set aside.
  • Melt butter in a small saucepan over medium-low heat. Add leeks, shallots, red-pepper flakes, and thyme; cook, stirring, until softened, about 5 minutes. Stir in flour until well combined. Slowly add milk, stirring constantly, until well combined. Increase heat to medium-high and bring to a boil; let boil 2 to 3 minutes until thickened. Remove from heat and stir in 3/4 cups cheese; season with salt and pepper.
  • Pour leek mixture over cauliflower mixture and stir until cauliflower is well coated; transfer to prepared baking dish. Sprinkle remaining 3/4 cup cheese over top. Transfer to oven and bake until bubbly, about 25 minutes.
  • Meanwhile, preheat broiler. Transfer baking dish to broiler; broil until golden brown, 5 to 8 minutes. Let cool 5 to 10 minutes before serving.

1 medium cauliflower (approx 1 lb)
2 tablespoons butter
2 large leeks, cleaned washed and finely sliced
2 tablespoons all-purpose flour
2 cups milk
2 ounces strong cheddar cheese, grated plus extra for sprinkling on top
fresh ground pepper
1 large pinch salt

Steps:

  • Preheat oven to 400°F.
  • Remove the green outer leaves from the cauliflower as well as the thick white stalk, taking care not to break off the florets. Cut a deep cross in the bottom of the stem and steam it whole over a pan of boiling water until slightly tender but not cooked through. The cauliflower florets should still be firm. Remove the cauliflower from the heat and leave to cool.
  • Place the butter in a large saucepan and melt over medium heat. Lower the heat and add the finely chopped leeks. Cook until the leeks are softening slightly but not cooked thoroughly. Remove 1 tablespoon of the leeks and keep to one side. Add the flour to the remaining leeks in the pan and stir. The flour will become lumpy, but continue to stir for 2 - 3 minutes. This will cook the flour and soften it to make a better sauce. Add the large pinch of salt and the mustard powder and stir again. Turn up the heat to medium and add the milk all at once. Stir briskly until a smooth sauce forms. Continue stirring until the sauce is thick and glossy - about 4 - 5 minutes. If the sauce thickens too much, add a little more milk. It should be thick, but still a bit runny. At this point, add the grated cheese and stir until melted. Remove from heat.
  • Break or cut the cauliflower florets away from the thick, central stalk, taking care not to break it into tiny pieces. Place these florets in a greased baking dish large enough to hold all the florets in just one layer. Pour the cheese and leek sauce over the cauliflower making sure to cover all the florets. Sprinkle the extra grated cheese evenly over the top and scatter the reserved softened leeks over the top as well. Finally, grate some fresh pepper over the top.
  • Bake in the preheated oven until the sauce is bubbling and golden brown on the top, approximately 20 minutes. Test the cauliflower to make sure it's cooked through by piercing with a sharp pointed knife, cook a little longer if necessary. Serve warm.

1 large head cauliflower, cut into small florets
1 large leek (white portion only), halved lengthwise, washed and sliced
2 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon pepper
1-1/4 cups cashew milk
2 tablespoons white wine or chicken broth
1/3 cup cashew butter
2 garlic cloves, minced
1/3 cup chopped cashews, toasted
3 tablespoons chopped fresh chives

Steps:

  • Preheat oven to 425°. Place cauliflower florets and leek slices in a parchment-lined 15x10x1-in. baking pan. Drizzle with oil. Sprinkle with paprika, salt and pepper; toss to mix. Roast 20 minutes, stirring halfway through., Meanwhile, process cashew milk, white wine, cashew butter and garlic in a blender until smooth. Pour into a small saucepan; bring to a boil, stirring constantly. Reduce heat; simmer until thickened, 2-3 minutes., Transfer roasted cauliflower and leeks to a greased 11x7-in. baking dish; stir in cashew sauce. Return to oven; bake until heated through, 5-7 minutes. Sprinkle with cashews and chives.

1 head of cauliflower cut into bite-size florets
6 slices bacon, cut into thin strips
3 leeks, chopped into half moons
3 tbsp. butter
3 tbsp. all-purpose flour
2 cups milk
1/2 cup grated Gruyere
1/2 cup grated Parmesan
1 tsp. salt
1/2 cup fresh breadcrumbs
1/4 cup grated Gruyere
2 tbsp. melted butter

Steps:

  • 1. Preheat oven to 350 degrees F. Butter an 8 inch square or oval dish. 2. In a large pot of boiling, salted water, cook cauliflower for 5 minutes. Drain. Set aside in a bowl. 3. Meanwhile, cook bacon in a large skillet over medium heat for 5 minutes or until crispy. Set aside on paper towels. Discard all but 2 tsp. of fat. Add leeks to the skillet; cook, stirring occasionally, for 5 to 7 minutes or until very soft and just starting to turn golden. Transfer to the bowl with the cauliflower. Add bacon. 4. Wipe skillet clean. Melt butter in the skillet over medium heat. Sprinkle with flour; cook, whisking, for 1 minute. Gradually whisk in milk. Bring to a boil and reduce heat. Whisk for 3 to 5 minutes or until smooth and thickened. Whisk in the Gruyere, Parmesan and salt until cheese is melted. 5. Pour over cauliflower mixture, stirring until well coated. 6. Transfer to buttered dish. Topping: In a bowl, stir together the breadcrumbs, cheese and butter. Sprinkle over the dish. Bake for about 30 minutes or until golden on top and heated throughout. Variation: Use broccoli and cheddar in place of cauliflower and Gruyere and Parmesan.

ROASTED VEGETABLES:
2 small heads of cauliflower, about 3 pounds untrimmed
4 tablespoons olive oil
Kosher salt and pepper to taste
3 cloves garlic, minced
1 large leek
GRATIN:
1 1/2 tablespoons butter
1 1/2 tablespoons flour
2 cups low fat milk
1/2 cup generoud parmesan, gruyere or manchengo
Kosher salt and pepper, to taste
1 teaspoon whole grain Dijon mustard
1 to 2 ounce ham, cut into baton shapes
1/4 cup breadcrumbs

Steps:

  • ROASTED VEGETABLES: Cut cauliflower into florets that are 1 1/2 inches wide. In a large bowl, toss the florets with 3 tablespoons olive oil. Season with salt and pepper, and spread out on a large rimmed baking sheet. Roast until tender with just a bit of bite and browned. 35-40 minutes stirring occasionally. Stir in the garlic after 20minutes. Cut leeks into 1-inch pieces and toss with remaining oil and salt. Spread out on another rimmed baking sheet and roast until crispy in some parts and soft throughout. About 15 minutes. You can do this ahead of time (hours in advance). GRATIN SAUCE: Melt butter over medium low heat. Whisk in flour and cook. Stir constantly for 3-5 minutes, make sure that it doesn't brown. Whisk in the milk until smooth. Bring to a simmer. Maintain the heat so that it is bubbling gently, stir often until the sauce thickens and the flour cooks. Add 1/3 of parmesan and stir until just melted. Remove from heat and season well with salt and pepper. Stir in mustard. When the vegetables are done, reduce the vegetable temperature to 350°F. Toss the vegetables with the ham and add to a pan. Pour sauce evenly over vegetables. Combine the breadcrumbs with the remaining cheese and sprinkle over the top. Roasting the leeks and cauliflower (which you can do well ahead) brings out deeper flavor and a crisp-around-the edges texture. Serve as a dish with roasted meat or as a main course with salad and bread. If you don't feel like making the white sauce, gently warm 1 1/2 cups in a saucepan until it bubbles around the edges then stir in the cheese and season with salt and pepper. Pour it over the vegetables.

3 large leeks, trimmed and sliced
1 medium head cauliflower, trimmed and chopped into florets
1/2 c panko breadcrumbs
2 Tbsp butter
2 Tbsp all purpose flour
2 c milk or half and half
1 c shredded cheddar cheese
salt and pepper to taste

Steps:

  • 1. Place leeks and cauliflower into a greased 3-qt. baking dish. Sprinkle with salt and pepper.
  • 2. In a medium saucepan melt butter over medium-high heat. Add the flour and whisk constantly until butter and flour are combined. Slowly whisk in the milk and bring to a boil, whisking frequently until slightly thickened. Season with salt and pepper if desired.
  • 3. Stir in cheese and whisk until melted; remove from heat.
  • 4. Pour the cheese sauce evenly over leeks and cauliflower. Sprinkle with Panko crumbs on top.
  • 5. Cover and place in a preheated 375º oven for about 45 minutes until vegetables are tender and sauce is bubbling. Remove cover and cook another 8-10 minutes to brown the breadcrumbs. Cool for 5 minutes before serving.
