CAULIFLOWER AND GROUND BEEF PASTA BAKE

Steps:
- Fry the onions and mushrooms in the oil for a couple minutes, then add the ground beef.
- Brown and then add the chopped tomatoes and spices. Season with salt and pepper to taste.
- Let simmer while you cook the spaghetti.
- Break the spaghetti into halves or thirds and boil in a separate saucepan.
- Cook the pasta according to package directions and add the cauliflower during the last five minutes of boiling.
- Drain and then mix the sauce and pasta together.
- Put in a baking dish and sprinkle with cheese.
- Bake for 5 minutes, then turn on the broiler and cook another 2-3 minutes until the cheese is bubbling.

This recipe was inspired by Rachael Ray's recipe of the same name. I've changed or removed several ingredients, but it's still flavorful and filling. Enjoy!

Steps:
- Roast cauliflower florets in 1/4 cup of oil at 425 degrees for 20 - 25 minutes or until browned.
- Boil bow tie pasta as directed. Drain. Add tomatoes, feta, 1/4 cup oil, 1/2 teaspoon parsley and mix well.
- Mix cauliflower into pasta mixture. Add entire mixture to a 2-quart baking dish. Top with 1/2 teaspoon parsley and breadcrumbs. Bake at 350 for 10 - 15 minutes and serve.

Steps:
- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
- While pasta cooks, heat oil in a large skillet over medium-high heat. Add cauliflower; cook and stir for 3 minutes. Add beef, onions, and garlic; cook and stir until beef is browned and crumbly, 5 to 7 minutes. Stir in tomatoes, parsley, salt, and pepper flakes. Cover and cook for 10 minutes.
- Drain penne. Pour into the skillet and stir to combine. Serve.
