Barb's Broccoli-Cauliflower Salad image

This is a version of the classic broccoli salad with the addition of cauliflower. It can be prepared the day prior to serving, then served chilled or at room temperature. Pecans can be used instead of sunflower seeds, if desired, and bacon lovers might want to add a few extra slices. . .

12 slices bacon
1 head fresh broccoli, diced
1 head cauliflower, chopped
½ red onion, diced
¾ cup sunflower seeds
1 cup creamy salad dressing
1 ½ tablespoons white wine vinegar
¼ cup white sugar

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Combine the bacon, cauliflower, broccoli, onion and sunflower seeds or pecans.
  • Whisk together the salad dressing, vinegar and sugar. Pour over salad and toss to coat. Refrigerate and allow to chill before serving.

Got this recipe from a friend .. delish !! This is a great summer salad for holiday gatherings (cook outs) For healthy eating use Light or Fat Free ingredients.

1 head broccoli (chopped )
1 head cauliflower (chopped)
1 c mayonnaise
1 c sour cream
1/2 c sugar .....use less per personal taste ( you can use 3-4 packets of sweetner in place of sugar)
2/3 c bacon bits or 6 slices fried and crumbled bacon ( fried/crumbled bacon is best)
2/3 c shredded cheddar cheese (you can add more or less .. your choice)
salt/pepper to taste
1 tsp poppy seed (optional)
few thin slices halved "red" onion (optional)

Steps:

  • 1. Combine broccoli and cauliflower in a large bowl. In a separate bowl, combine the mayonnaise, sour cream, sugar, poppy seed, salt and pepper to make a creamy dressing. Add the dressing to the broccoli-cauliflower mix, stir/toss to evenly coat the vegetables. Stir in the bacon and the cheese. Chill in refrigerator for 3 - 4 hours .. Stir before serving.

3 tablespoons butter
3 tablespoons minced onion
20 ounces broccoli florets
1 ½ cups sour cream
2 teaspoons distilled white vinegar
2 teaspoons white sugar
1 ½ teaspoons poppy seeds
1 teaspoon paprika
½ teaspoon salt
⅛ teaspoon cayenne pepper
¼ cup chopped pecans

Steps:

  • Melt butter in a saucepan over medium-high heat. Stir in onion, and cook until the onion has begun to turn golden brown, about 5 minutes. Meanwhile, place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 6 minutes. Drain.
  • When the onions have turned golden brown, remove the saucepan from the heat, and whisk in the sour cream, vinegar, sugar, poppy seeds, paprika, salt, and cayenne pepper. Place the cooked broccoli into a serving dish, and pour the sauce overtop. Sprinkle with chopped pecans to serve.

1 package (12 ounces) tricolor spiral pasta
1 cup halved cherry tomatoes
1 can (3.8 ounces) sliced ripe olives, drained
1/2 cup fresh broccoli florets
1/2 cup fresh cauliflowerets
1/4 cup julienned yellow summer squash
1 bottle (12 ounces) poppy seed salad dressing
1/4 cup sunflower kernels

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. , Transfer to a large serving bowl; add the tomatoes, olives, broccoli, cauliflower and squash. Drizzle with dressing and toss to coat. Cover and refrigerate for 2 hours or overnight. Just before serving, sprinkle with sunflower kernels.

1/2 cup sugar
2 teaspoons dry mustard
1 teaspoon salt
1/2 cup vinegar
1 cup vegetable oil
1 small onion, grated
2 tablespoons poppy seeds
1 green pepper, chopped
1 red pepper, chopped
12 mushrooms, sliced
1 small cauliflower, chopped
1 large head of broccoli, chopped
2 celery ribs, chopped (optional)

Steps:

  • Put in a jar with tight fitting lid first 7 ingredients.
  • Shake well to combine and set aside.
  • In large bowl combine the chopped vegetables.
  • Pour dressing over top.
  • Toss well.
  • Leave for several hours or overnight mixing occasionally.
  • Drain and serve.

This is one of my favorite recipes. It is always requested at family get togethers, even by people who don't like broccoli or cauliflower. It is best if made a day ahead. I try to watch calories so I usually use Splenda, fat-free Miracle Whip and fat-free cheese. It looses nothing with these substitutions.

1 head cauliflower
1 -2 bunch broccoli (I try to get about the same amount of broccoli and cauliflower)
1 medium red onion
1 1/2 cups Miracle Whip
1/3 cup sugar
2 tablespoons red wine vinegar
4 ounces shredded cheese

Steps:

  • Chop cauliflower, broccoli and red onion and toss together.
  • In another bowl mix Miracle Whip, sugar and red wine vinegar.
  • Pour over cauliflower, broccoli and red onion, add cheese and toss.

1 tablespoon dijon mustard
3 tablespoons honey
⅓ cup orange juice
2 teaspoons poppy seeds
pinch of salt and pepper

Steps:

  • In a blender or food processor, combine all dressing ingredients and pulse until smooth. (You can also combine in a jar and shake shake shake!)
  • In a large bowl combine broccoli, apples, cranberries, pecans, and onions,
  • Pour dressing over salad and toss to combine.
  • Serve immediately or cover tightly and chill up to 8 hours (see note).

1/4 cup roasted & salted almonds {chopped}
5 slices bacon {cooked & sliced or 1/4 cup Real Bacon Bits}
40 small grapes {cut in half}
1 small carrot {shredded}
1 green onion {thinly sliced}
1 cup mayonnaise
1/2 cup sugar
1/4 cup apple cider vinegar
1 tbsp poppy seeds

Steps:

  • Combine broccoli florets, chopped almonds, sliced bacon {or bacon bits}, grape halves, shredded carrot and green onion in a medium bowl. In a small bowl combine all of the dressing ingredients and whisk until smooth. Pour 3/4 of the dressing over salad and stir to cover. If the salad needs additional dressing, add remaining dressing and stir again.Serve immediately or cover and refrigerate for up to 3 days.
