How to Make Cauliflower with Béchamel Sauce image

Cauliflower is a very healthy and tasty vegetable that doesn't take very long to cook. In this OneHowTo article, we'll explain how to make cauliflower with béchamel sauce, a dish also known as cauliflower gratin that looks and tastes delicious. A perfect recipe to make even the fussiest of small children eat their vegetables, it's also quick to prepare and serves as a delicious snack thanks to the perfect amount of good cheese.

1 cauliflower
60 g (2.1 oz) of butter
60 g (2.1 oz) of flour
500 ml of milk
90 g (3.1 oz) of grated cheese
Salt
Pepper

Steps:

  • The first step to make cauliflower with béchamel sauce is to remove the green leaves from the cauliflower and separate the cauliflower into medium-sized florets. Wash and clean the florets and cook them in a pan of boiling water and a little salt until tender.Be careful not to overcook the florets so that they end up so soft that they crumble and dissolve in the water. Remove from the heat and drain.
  • While the cauliflower is cooking, we can go prepare a rich béchamel, the most delicious part.Put a pan on the heat and add the butter, which should be at room temperature. Let the butter heat up enough to melt, but not burn.
  • Gradually add the flour, and leave it to brown a little. To make sure that the flour for the béchamel doesn't burn either, the whole process should be done over low heat. Then, slowly add the hot milk, stirring constantly until everything is mixed in and there are no lumps. Add salt and pepper to taste.
  • Let the béchamel cook, continuing to stir to prevent it from sticking to the bottom, until it reaches the desired consistency. In my case, I don't like it too thick. If yours becomes too thick, you can loosen the sauce by adding a little more milk. Add additional salt and pepper, if necessary, when you do this.
  • Preheat the oven to 200°C (390°F). Once it is hot, place the cooked cauliflower florets in an ovenproof dish. Cover with the béchamel sauce and sprinkle over the grated cheese. 1/4 cup all-purpose flour
2/3 cup whole milk
2/3 cup freshly grated Parmesan cheese

  • Cook cauliflower and broccoli in large pot of boiling salted water until crisp-tender, about 5 minutes. Drain, reserving 2/3 cup cooking liquid. Transfer vegetables to large bowl. Cool. Rinse spinach, then toss in large nonstick skillet over medium-high heat until just wilted. Drain and cool. Squeeze spinach dry; finely chop. Melt butter in heavy medium saucepan over medium heat. Add flour and whisk until smooth, about 2 minutes. Gradually whisk in milk and reserved 2/3 cup vegetable cooking liquid. Whisk constantly over medium heat until sauce thickens and boils, about 3 minutes. Stir in spinach and cheese. Using fingers, coarsely crumble cauliflower and broccoli in bowl. Add spinach bechamel sauce; stir to blend. Season with salt and pepper. Butter 1 1/2-quart baking dish. Spread vegetable mixture in prepared dish. (Can be made 6 hours ahead. Cover and chill.) 12 ounces baby spinach leaves
6 tablespoons butter
1/4 cup flour
2/3 cup whole milk (more to thin out)
2/3 cup parmesan cheese, freshly grated
1/4 teaspoon red pepper flakes
1 large pinch nutmeg, grated (optional)

Steps:

  • Cook cauliflower and broccoli in large pot of boiling water until crisp-tender, about 5 minutes. Drain, reserving 2/3 cup cooking liquid. Transfer vegetables to large bowl. Cool.
  • Rinse spinach, then toss in large skillet over medium high heat until just wilted. Drain and cool. Squeeze spinach dry; finely chop.
  • Melt butter in heavy medium saucepan over medium heat. Add flour and whisk until smooth, about 2 minutes. Gradually whisk in milk and reserved 2/3 cup vegetable cooking liquid. Whisk constantly over medium heat until sauce thickens and boils, about 3 minutes. Stir in spinach, cheese and pepper flakes. Season with salt, pepper and a good pinch of nutmeg.
  • Using fingers, coarsely crumble cauliflower and broccoli in bowl. Add spinach bechamel sauce; stir to blend. Season with salt and pepper. Butter 1-1/2 quart baking dish. Spread vegetable mixture in prepared dish. (can be made 6 hours ahead. cover and chill).
  • Preheat oven to 350°F.
  • Bake flan until puffed and heated through, about 25 minutes if at room temperature and 35 minutes if chilled.
  • Note: The white cheese sauce is quite thick. I tend to add more milk to thin it out so that it is a light coating on the veggies.
