A cake handed down from my Great Grandmother when they didn't have much to use in their mixes. Prepare to enjoy the most wonderful thing you ever laid a lip on.

2 cups strong brewed coffee
1 ½ cups white sugar
½ cup butter
1 cup raisins
1 teaspoon ground allspice
1 teaspoon ground cinnamon
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon baking powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Sift together the flour, baking soda and baking powder. Set aside.
  • In a large saucepan combine the coffee, sugar, butter, raisins, allspice and cinnamon. Bring to a boil, remove from heat and set aside to cool to room temperature.
  • Stir in flour mixture until well combined. Pour into a 9x13 inch pan. Bake in preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center of cake comes out clean.

I came across this recipe in the 70's. It sounded like one of the cakes I remembered her talking about, so I kept it. It is a tasty, spice cake, simple,...

2 c sugar
2 c strong coffee, water, or apple juice
1/2 c shortening
2 c dark raisins, or diced pitted prunes
1 medium apple, peeled and shredded
2 c unsifted all purpose flour
1 tsp baking soda
2 tsp baking powder
1 tsp ground cinnamon
1 tsp ground allspice
1 tsp ground cloves
1 tsp ground nutmeg
1 c chopped walnuts, almonds, or pecans

Steps:

  • 1. In a medium saucepan, simmer sugar, coffee, shortening, raisins, and apple together for 10 minutes, stirring occasionally. Cool 10 minutes.
  • 2. In a large bowl, mix together flour, baking soda, baking powder, all the spices, and walnuts. Pour cooled sugar-raisin mixture into dry ingredients; mix well.
  • 3. Pour batter into greased 13x9x2 in. pan. Bake in a preheated 350 oven for 25-30 minutes, until center of cake springs back when lightly pressed with finger. Cut into squares when cool. This is a moist cake, it keeps well and can be frozen.
  • 4. To make this recipe gluten free, use KAF or your favorite GF flour, following instructions for substituting for flour. This cake is already Vegan and Vegetarian, so no subs are necessary. IF you do not want to use a refined sugar, you may try a substitute. I have not, so I cannot tell you how it will affect the recipe. But as it is not used to beat and add structure to the mixture, I think it would work. Good Luck.

This vintage depression cake recipe (wacky cake recipe) is quick and easy to make with simple ingredients in 1 bowl! It has no butter, no milk, no eggs.

1½ cups All-purpose flour
¼ cup Cocoa powder
1 cup Granulated sugar
1 tsp Baking soda
½ tsp Salt
1 tbsp White vinegar
1 tsp Vanilla extract
5 tbsp Vegetable oil
1 cup Water
1/4 cup Milk (Whole or 2%)
1/3 cup Butter (Unsalted)
3 tbsp Cocoa powder
1 tsp Vanilla extract
2 1/2 - 3 cups Powdered sugar

Steps:

  • In a square cake pan (Dimensions: 8x8- Ungreased), add flour, cocoa powder, sugar, baking soda, salt and whisk everything together.
  • Use your finger to make 2 small holes and 1 large hole in this dry flour mixture.
  • Pour vinegar and vanilla extract in the small holes.
  • Pour oil in the large hole.
  • Pour water over everything.
  • Mix everything together until just combined. Don't worry if you have some lumps. Just don't over-mix or else you will end up with a rubbery cake.
  • Bake at 350 degrees for 30 minutes or until an toothpick inserted in the center comes out clean.
  • While the cake is cooling down, prepare the frosting: In a non-stick saucepan, add milk, butter and cocoa powder and mix until smooth.
  • Remove from heat and stir in vanilla extract.
  • Add powdered sugar (1 cup at a time) until smooth and creamy.
  • Pour this frosting over your entire cake and let it set in the fridge or freezer for 15-20 minutes.
  • Toss some sprinkles on top of the cake and enjoy!

2 cups hot water
2 tablespoons bacon grease
2 cups raisins
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground cloves

Steps:

  • In a medium saucepan combine the brown sugar, hot water, bacon grease, and raisins over medium heat. Bring to a boil for 5 minutes, then set aside to cool.
  • Preheat the oven to 325 degrees F (165 degrees C). Grease and flour two 8x4-inch loaf pans.
  • In a large bowl, stir together the flour, salt, baking soda, cinnamon, and cloves. Add the ingredients from the saucepan and mix until well blended. Divide evenly between the 2 prepared pans.
  • Bake for 45 to 50 minutes in the preheated oven. Cool in pans for 10 minutes before removing to a wire rack to cool completely.
