These cookies are great...you get a double dose of chocolate! My kids love them.

Number Of Ingredients 10

1 cup butter, softened
1 ½ cups white sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
⅔ cup cocoa powder
¾ teaspoon baking soda
¼ teaspoon salt
2 cups semisweet chocolate chips
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy. Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended. Mix in the chocolate chips and walnuts. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven, or just until set. Cool slightly on the cookie sheets before transferring to wire racks to cool completely.

I call these crazy cookies, because with a glass of cold milk, they are crazy delicious! It's a good recipe if you want to make cookies to fill the cookie jar and still have a few dozen to give away.

2 c butter, softened
2 c light brown sugar firmly packed
1 c granulated sugar
4 eggs
4 tsp vanilla extract
2 1/2 c all-purpose flour
1 tsp baking soda
2 tsp salt
6 c quick-cooking oats
1 1/2 c chopped walnuts
1 pkg chocolate chips
1 pkg peanut butter chips

Steps:

  • 1. Oven should be preheated to 325 degrees
  • 2. In a large bowl, cream the butter, and both sugars until smooth.
  • 3. Beat in the eggs one at a time. Then stir in the vanilla extract.
  • 4. In a medium size bowl combine the flour, baking soda and salt; stir into the creamed mixture a little at a time, until blended.
  • 5. Mix in the oats, nuts, chocolate chips, and peanut butter chips.
  • 6. Drop by spoonfuls onto a baking sheet lined with parchment paper.
  • 7. Bake at 325 degrees for 10-12 min. or until edges are slightly browned. Transfer to wire rack to cool.

This recipe sounds a little different, but is really good. It is also a cute cookie to serve at Halloween.

½ cup honey
2 cups all-purpose flour
⅔ cup butter
½ cup unsweetened cocoa powder
1 egg
1 teaspoon vanilla extract
1 cup wheat and barley nugget cereal (e.g. Grape-Nuts™)

Steps:

  • Microwave honey on high until bubbly (about 1 minute). Stir in the margarine. Add the egg and mix well. Stir in the flour, cocoa and vanilla. Mix well and chill dough for several hours in the refrigerator.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Roll chunks of the chilled dough into cylindrical shapes in order to resemble cat poop. Roll cookies in cereal and place on ungreased baking sheet.
  • Bake at 350 degrees F (175 degrees C) for 10 to 15 minutes. Serve cookies in a new litter box on a bed of malted barley cereal. Use a new litter scoop to remove cookies.

  • Place melted butter in the bowl of a stand mixer fitted with the paddle attachment (or a large bowl if using a hand mixer). You can also just use a wooden spoon to mix these! Add granulated and brown sugars and mix on low speed until the mixture is smooth. Mix in egg and vanilla extract and mix on medium speed until combined.
  • Mix in cocoa, baking soda, and salt, then slowly mix in flour and mix just until the batter is smooth and comes together. Be sure to scrape the sides of the bowl during mixing. Slowly mix in chocolate chips.
  • Line a cookie sheet with a silicone baking mat or parchment paper. Scoop 2 tablespoon balls of dough onto the cookie sheet. Spacing doesn’t matter because you will be chilling the dough. Cover with plastic wrap and chill for at least 1-2 hours.
