1 1/2 cups/225 g golden raisins/sultanas
1 1/2 cups/225 g raisins
3/4 cup/110 g mixed candied peel (finely chopped)
1 cup glace (candied) cherries (halved)
3 1/3 cups/300 g all-purpose flour
Pinch salt
1/2 teaspoon mixed spice
1/2 teaspoon ground cinnamon
1/2 teaspoon freshly ground nutmeg
10 ounces/300 g butter (slightly softened)
1 1/3 cups/300 g soft brown sugar
1/2 lemon (zested)
6 large eggs (lightly beaten)
3 tablespoons brandy (plus extra for feeding)

Bake this festive fruit cake in advance of Christmas and feed it regularly with rum, brandy or whisky to build the flavour and keep it moist

Number Of Ingredients 15

1kg mixed dried fruit (use a mix of raisins, sultanas, currants, cherries, cranberries, prunes or figs)
zest and juice 1 orange
zest and juice 1 lemon
150ml brandy, Sherry, whisky or rum, plus extra for feeding
250g pack butter, softened
200g light soft brown sugar
175g plain flour
100g ground almond
½ tsp baking powder
2 tsp mixed spice
1 tsp ground cinnamon
¼ tsp ground cloves
100g flaked almonds
4 large eggs
1 tsp vanilla extract

Steps:

  • Put 1kg mixed dried fruit, the zest and juice of 1 orange and 1 lemon, 150ml brandy or other alcohol, 250g softened butter and 200g light, soft brown sugar in a large pan set over a medium heat.
  • Bring to the boil, then lower the heat and simmer for 5 mins. Tip the fruit mixture into a large bowl and leave to cool for 30 mins.
  • Heat oven to 150C/130C fan/gas 2. Line a deep 20cm cake tin with a double layer of baking parchment, then wrap a double layer of newspaper around the outside - tie with string to secure.
  • Add 175g plain flour, 100g ground almonds, ½ tsp baking powder, 2 tsp mixed spice, 1 tsp ground cinnamon, ¼ tsp ground cloves, 100g flaked almonds, 4 large eggs and 1 tsp vanilla extract to the fruit mixture and stir well, making sure there are no pockets of flour.
  • Tip into your prepared tin, level the top with a spatula and bake in the centre of the oven for 2 hrs.
  • Remove the cake from the oven, poke holes in it with a skewer and spoon over 2 tbsp of your chosen alcohol. Leave the cake to cool completely in the tin.
  • To store, peel off the baking parchment, then wrap well in cling film. Feed the cake with 1-2 tbsp alcohol every fortnight, until you ice it.
  • Don't feed the cake for the final week to give the surface a chance to dry before icing.

Recipe video above. This is an easy Christmas Cake that requires no overnight fruit soaking. It's a fruit cake that's incredibly easy to make, with a rich, velvety texture that's full flavoured and so moist it can be eaten plain. (But no one turns away a slosh of custard!) Just as good made on the day - or weeks later.

300g / 10 oz raisins
150g / 5 oz diced dried apricots (, chopped 8 mm / 1/3")
75g / 2.5 oz mixed peel (, diced 5mm / 1/5)
150g / 5 oz glace cherries (, chopped 8 mm / 1/3")
180g / 6 oz dates (, diced 5mm / 1/5")
1 cup + 2 tbsp apple juice, OR 1/3 brandy + 2/3 juice ( (Note 2))
115g / 8 tbsp unsalted butter (, softened (1 US stick))
1 1/2 cups dark brown sugar (, packed (Note 3))
1/2 cup vegetable oil ((or canola, peanut, grapeseed))
3 tbsp molasses or golden syrup ((Note 4))
1/2 tsp salt
1/2 tsp all spice
1/2 tsp cinnamon
1/2 tsp nutmeg
3 eggs
1/2 tsp baking powder
1 2/3 cups plain flour ((all purpose flour))
3/4 cup walnuts (, chopped (optional))
500ml / 1 pint pouring custard (, homemade or store bought (Note 5))
250g / 8 oz "ready to roll" marzipan
250g / 8 oz "ready to roll" white fondant
Cherries dusted with icing sugar
Cherries or other fruit dusted with icing sugar ((on plain cake, looks very pretty!))
Drippy white glaze ((directions below))

Steps:

  • Place dried fruit and juice/brandy in a large microwavable container. Microwave 1 1/2 minutes on high or until hot.
  • Stir to coat all fruit in liquid. Cover then set aside for 1 hour (to plump up/soak and cool).
  • Preheat oven to 160°C / 320°F (140°C fan). Grease and line a 21 - 22 cm / 8 - 9" round cake pan with baking paper (parchment paper) (7 cm / 2.75" tall).
  • Using an electric beater, beat butter and sugar until smooth and creamy (about 1 minute on speed 5).
  • Add oil and molasses, beat until combined.
  • Add salt, spices and baking powder - beat until incorporated.
  • Add eggs, one at a time, beating until just incorporated
  • Stir in the flour.
  • When mostly incorporated, stir in the fruit mix (including all the extra liquid in bowl) and walnuts (if using).
  • Pour into cake pan, cover with foil and bake for 3 hours 15 minutes, removing foil the last 45 minutes. Skewer inserted into middle should come out clean with no batter on it.
  • Remove from oven and cool for 20 minutes before transferring to cooling rack. Cool completely before serving.
  • Cake is moist and so full flavoured, it can be eaten plain. But see below for decorating and serving ideas (traditionally served with pouring custard).
  • Cutting: Either cut into thin wedges, or cut cake into thin strips (2cm / 0.75" or so), then cut those strips into serving size pieces.
  • Traditional White Christmas Cake (pictured in post) - Marzipan and fondant, see Decorating Note.
  • Simple - pile top with fresh cherries or other fruit, dust with icing sugar (powdered sugar). Wrap a ribbon around the cake for extra touch!
  • Drippy white glaze - use the glaze in this Lemon Cake recipe, but leave out the lemon juice (ie make a plain sweet white glaze). Flip cake upside down for flat surface then glaze per that recipe.
  • Serving - serve with custard for a traditional experience! Either homemade custard or store bought pouring custard (jazz it up by mixing in vanilla seed paste!).

This spectacular and decorative cake is mainly nuts and glace fruit! When a slice is held up to the light, it resembles a stained glass window.

3 cups brazil nuts
1 cup blanched almond
1 cup cashews or 1 cup pecans
1 cup glace red cherries
1/2 cup glace green cherries (optional)
3 -4 cups glace fruit (eg, pineapple, mango, papaya, melon (crystallised, cantaloupe)
1 cup sultana
1 cup raisins or 1 cup currants
4 large eggs
1 cup brown sugar
1 teaspoon vanilla
1 1/2 cups plain flour (standard)
1 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • Method.
  • Heat oven to 130°C (120°C fanbake), with rack just below the middle. Completely line a 20 or 30cm ring pan, or two medium-sized loaf pans with baking paper or liners.
  • Measure out the nuts, cherries and crystallised and dried fruits into a large container, putting some aside for decorating the top. Cut up large pieces of fruit, but leave some long thin pieces if desired, especially if using melon strips (which give a wonderful colour).
  • In a large bowl mix eggs, sugar and vanilla. Mix in the sifted flour, baking powder and salt until smooth. Add nuts and fruit and mix thoroughly by hand.
  • Press evenly into the prepared cake pan/s (if pan is lined with baking paper coat evenly with non-stick spray just before use). Press reserved cherries, fruit and nuts into the top for decoration (if adding strips of crystallised fruit, put them in place after adding part of the cake mixture, then cover with remaining mixture). Bake for two to three hours until cake feels firm when pressed in the middle. Cool, remove from pan and peel away liner/s. Brush all over with rum, brandy or whisky. Brush the top with a light coating of oil for a shine. Store at room temperature in greaseproof paper, or refrigerate in a plastic bag. This cake will keep well for several months (after long storage, brush again with spirits and leave 24 hours or longer before eating). Cut in thin slices with a sharp serrated knife.
