- Combine the first seven ingredients; sprinkle over fillets on both sides. Place in a greased 13-in. x 9-in. baking dish. Combine the lemon juice, butter and garlic; drizzle over fillets., Bake, uncovered, at 350° for 15-20 minutes or until fish flakes easily with a fork.

- Preheat oven to 350°F. Place the catfish on a 12-inch square piece of foil. Sprinkle fish with salt and freshly ground black pepper to taste. Arrange broccoli florets around fish. Fold up the sides of the foil and crimp tightly to form a sealed packet. Bake for 10 to 15 minutes until fish is flaky and broccoli is tender. Transfer to a dish, open foil, and top with a tablespoon of herb-butter blend or flavored olive oil.

- Start by washing the fish, and place to the side on damp towel. In a large bowl combine all the seasonings with the flour. Place a large sauté pan on the flame and add two table spoons of oil- season the fish and dredge the fish into the flour and place in the oil and quickly sauté for one minute on both sides. Place the pan into then oven at 350°F for another seven to ten minutes until fish is baked to perfection.
