Simple and simply fabulous, this favorite side dish is a no-brainer. For best results, use a 12-inch cast iron skillet.

1 pound mixed mushrooms (baby bella/cremini, oyster and shiitake mushrooms work well)
4 tablespoons good salted butter (see note)
Fine sea salt and freshly ground black pepper
Minced flat-leaf parsley to garnish, optional

Steps:

  • Preheat a 12-inch cast iron skillet on the stovetop for five minutes over high heat. Meanwhile, wipe any dirt off the mushrooms with a paper towel and, if you like (and your mushrooms are whole), rinse under running water and spin dry. Remove stems from shiitakes and oyster mushrooms and trim a slice of the stem end off the baby bellas. Slice baby bellas and shiitakes about 1/4-inch thick and cut oyster mushrooms into small bite-sized pieces.
  • Add butter to pan. When melted and bubbly, add mushrooms and toss to coat. Cook, stirring only occasionally, for about 10 minutes, until well browned in plenty of spots. Stir in salt and pepper to taste and garnish with parsley if you like.

1 lb sliced mushrooms
1 onion (chopped)
3 tablespoons butter
1 tablespoon garlic
1 tablespoon cooking sherry
1 tablespoon soy sauce
salt and pepper

Steps:

  • Add sliced white mushrooms, chopped onions, butter and minced garlic to a large cast iron skillet.
  • Heat mushrooms over medium heat, stirring ingredients frequently until onions and mushrooms are soft and tender, which takes about 6-8 minutes.
  • Add 1 tablespoon of cooking sherry and 1 tablespoon soy sauce and mix well.
  • Continue to heat mushrooms and onions for 2 minutes, until mushrooms are caramelized and excess liquid is burned off.
  • Season mushrooms and onions with sea salt and cracked pepper.
  • Serve hot either as a side, on a burger, chicken, pork, or even as a savory topping to an omelet.

1/2 pound crimini mushrooms
1/2 pound white button mushrooms
1/2 pound oyster mushrooms
2 king oyster mushrooms
1 portobello mushroom
2 shallots, sliced paper thin
1 tablespoon butter or margarine
2 cloves garlic, minced
2 tablespoons parsley, chopped
Sea salt and pepper to taste

Steps:

  • 1. Place your trusty cast-iron skillet in the middle of your oven and preheat to 500 degrees. This will take thirty minutes.
  • 2. Prepare the mushrooms. With a damp towel wipe off any dirt. If you must rinse them, do so gently and pat dry.
  • 3. Create various shroom shapes. Slice crimini and button mushrooms in half. Remove the bottom tuft of the king oyster mushrooms and discard, then slice lengthwise into four or five long pieces before cutting down the middle so you have short rectangles. Rip the oyster mushrooms into halves by hand. Slice the portobello into quarters or eighths as desired.
  • 4. Remove the pan and add all the mushrooms. Return it to the oven for five minutes. Then remove again, and stir the shrooms so that any sides unexposed to the hot iron can't help getting a good sear. Cook for an additional five minutes.
  • 5. Remove the pan and add the shallots, butter, and toss. Return to the oven for another five minutes.
  • 6. Final removal: add the garlic and parsley. Let sizzle in front of your drooling friends for three to five minutes. Salt generously, pepper profusely, and signal the attack.

This Cast Iron Ribeye Steak Recipe is the quickest and easiest way to cook a steakhouse quality meal at home that is perfect for a special occasion!

2 boneless ribeye steaks, 1-1.5 inches thick
Vegetable oil
Kosher salt and freshly ground black pepper
3 Tablespoons butter, divided
8 ounces sliced mushrooms
2 cloves garlic, minced
Fresh parsley (optional)

Steps:

  • Preheat the oven to 425 degrees.
  • Remove the steak from the packaging and allow it to rest at room temperature while the oven preheats. Brush both sides of the steak with vegetable oil and sprinkle generously with salt and pepper.
  • Place a cast iron skillet over medium high heat and coat with about a Tablespoon of vegetable oil. Heat the pan until the oil is shimmering and droplets of water sizzle in the pan. Add the steaks to the pan and allow them to cook until seared on one side, about 3-4 minutes. Flip the steaks over and then place in the oven to continue cooking until the internal temperature reaches 145 degrees for medium, or about another 4-6 minutes. Remove the steaks from the oven, transfer to a plate (preferably a warm plate!) and place a Tablespoon of butter on each steak. Tent with foil and allow to rest for at least 10 minutes.
  • Meanwhile, make the mushrooms. Melt 2 Tablespoons of the butter in a large skillet over medium heat. Add the mushrooms and allow them to cook undisturbed until well browned on one side. Flip them over and continue to saute until the mushrooms are soft and browned. Stir in the garlic and cook for another minute, or until fragrant. Serve the steaks with the mushrooms on top.
