CASHEW ENCRUSTED TILAPIA

Flaky, nutty, semi-healthy & simple! I got it from my sister's fiance who's a chef at a restaurant. Really good! These are estimate measurements, chefs usually eye ball it! Serve with a tropical sauce, ex: mango, papaya, coconut, or pineapple sauces or salsas. Serve with steamed veggies and/or rissotto.

6 -8 tilapia fillets (mahi-mahi, orange roughy works too)
2 cups all-purpose flour
1 cup plain breadcrumbs
3 large eggs
2 tablespoons milk
1 1/2-2 cups unsalted whole cashews or 1 1/2-2 cups unsalted crushed cashews
salt and pepper

Steps:

  • Preheat oven to 350°F, line a baking sheet with foil and spray non-stick spray.
  • If using whole cashews, pulse in a blender or food processor until crushed.
  • Mix the cashews with the bread crumbs, set aside. Mix the milk and eggs and beat together in a medium bowl, set aside. Mix about 1 tsp each of both salt and pepper into the flour, set aside.
  • Prepare an assembly line with the three mixtures by putting flour mixture into a shallow plate, and the bread-cashew mixture in another shallow plate.
  • Work the fillets one at a time by flouring each of the fillets and shaking off the excess. Proceed to submerge the floured fillet into the eggs and then covering with the bread crumb-nut mixture; repeat with the remaining fillets.
  • Place crusted fillets on baking sheet at least an inch apart. Insert into oven and bake for about 20 minutes or until crust is golden brown. Eat fresh.

This recipe came from www.tilapia.ws that turned out wonderfully. It is a rich and spicy recipe that can be used on other similar fish as well. It was difficult to roll the fillets easily, so I placed one fillet on the bottom of the casserole dish, layered the crabmeat on it and topped with another fillet of Tilapia. Larger fillets would work out better for rolling. Also one can adjust the amount of cayenne as desired. Worked out great.

1 small onion
1 celery rib
4 tablespoons unsalted butter
1/4 cup fresh parsley
1/2 cup breadcrumbs, unseasoned
8 ounces white crab meat, Phillips Pasteurized Crab meat
1 tablespoon lemon juice
1/8 tablespoon cayenne pepper
4 (6 ounce) tilapia fillets, approximately 6 oz each
2 tablespoons butter, Melted
paprika

Steps:

  • Preheat oven to 400°F.
  • chop the onion and celery into fine pieces.
  • flake the crabmeat and check for pieces of shells.
  • Sauté onion and celery in butter until tender.
  • add parsley and remove from heat.
  • stir in the bread crumbs, crab meat, lemon juice and cayenne pepper.
  • Spray casserole or oven pan with cooking spray.
  • Spread the mixture over the tilapia fillets and roll them up placing seam side down in dish. Place any leftover stuffing around fillets.
  • Sprinkle with melted butter and paprika.
  • Place in a 400°F oven for about 20 to 25 minutes until the tilapia flakes easily with a fork.

2 teaspoons paprika
1 tablespoon chopped fresh parsley
salt and ground black pepper to taste
4 tilapia fillets
olive oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Whisk Parmesan cheese, paprika, parsley, salt, and pepper together in a shallow dish.
  • Coat tilapia fillets with olive oil and press into the Parmesan cheese mixture. Arrange coated fillets on the prepared baking sheet.
  • Bake in preheated oven until the fish flakes easily with a fork, 10 to 12 minutes.

1 celery rib, finely chopped
1/4 cup plus 6 tablespoons butter, divided
1 cup lump crabmeat, drained
1/3 cup dry bread crumbs
1/3 cup mayonnaise
1 large egg, beaten
2 tablespoons diced pimientos, drained
1/4 teaspoon seafood seasoning
4 tilapia fillets (6 ounces each)
1/4 teaspoon salt
1/4 teaspoon paprika

Steps:

  • In a large skillet, saute onion and celery in 1/4 cup butter until tender. Remove from the heat; stir in the crab, bread crumbs, mayonnaise, egg, pimientos and seafood seasoning. Spread 1/3 cup crab mixture over fillets. Roll up each from the pointed end; secure with toothpicks., Place seam side down in a greased 9-in. square baking pan. Melt remaining butter; drizzle over fish. Sprinkle with salt and paprika., Bake, uncovered, at 400° until fish just begins to flake easily with a fork, 25-30 minutes. Discard toothpicks. Spoon pan juices over fish.

I haven't made this recipe yet but am planning on making a few changes due to some situations in my life. I have A LOT of olive dip (green olives blended with cream cheese and garlic powder) and wanted to use it in a recipe. We'll see how it turns out. I'm planning on using fresh spinach also. Should be interesting! :)

16 ounces tilapia fillets (or other fish)
4 ounces fat free cream cheese
0.5 (8 ounce) can spinach
1 teaspoon nutmeg
1 pinch salt
1/2 crushed garlic clove
4 Ritz crackers

Steps:

  • Preheat the oven to 350°F
  • Blend the cream cheese and spinach in a large bowl.
  • Add the garlic, nutmeg, and salt
  • Spray a baking dish with non-stick spray
  • Arrange the fillets on the pan and slice a slit down the fish.
  • Spoon the cream cheese mixture onto the fish, flattening it so that it seeps in the slit (this isnt' TRUE stuffed fish -- a lot will just be spooned over the top)
  • Sprinkle Ritz or bread crumbs over fish
  • Bake for 8 minutes until fish flakes with a fork.
  • *I didn't use all of the cream cheese mixture, so I recommend saving the left over and using it as a spinach dip! My husband loves it on wheat thins or chips! The recipe will actually be closer to 135 calories since you won't use all the mixture most likely.

4 tilapia fillets (Sole or Flounder could also be used)
1 egg white
2 tablespoons flour
1/2 lemon
2/3 cup finely chopped cashews (I used the food processor)
2 tablespoons plain breadcrumbs
1/4 teaspoon fresh ground pepper
1/2 teaspoon garlic salt
1 cup cooked orzo pasta
1 cup chopped fresh spinach
1/3 cup chopped onion
1 garlic clove, minced
2/3 cup chopped dried apricot
1 teaspoon fresh finely chopped basil
1/4 cup finely shredded parmesan cheese
1/4 teaspoon fresh ground pepper
1/4 teaspoon salt

Steps:

  • Combine all Cashew Crust ingredients in a small bowl and mix well.
  • Rinse tilapia and pat dry.
  • Whisk egg white in a small bowl and pour onto a small plate.
  • Lightly flour one side of the tilapia fillets (fish should be covered in a fine dust layer of flour).
  • Dredge floured side of fillet in egg white and then in Cashew Crust mixture.
  • Set coated fillets (crust side up) on waxed paper and let set.
  • Meanwhile, mix all the stuffing ingredients in a medium bowl.
  • Carefully turn tilapia fillets over and squeeze lemon juice on fillets.
  • Spread Stuffing evenly over fillet and fold so that the thicker side is on top (Use toothpicks to hold together if your fillets are small).
  • Place in buttered baking dish and replace any crust that was wiped away.
  • Cook at 350 degrees for 20 - 25 minutes.
