This was on the table at a potluck cast party/Christmas party, and I hunted down the chef and begged her for the recipe. I'm not usually a nuts-in-nondesserts kind of person, but this stuff is amazing! Trust me, try it...

1 pound bacon
1 cup mayonnaise
2 teaspoons cider vinegar
½ cup white sugar
2 pounds fresh broccoli, broken into florets
½ cup raisins
1 cup roasted cashews
¼ red onion, finely chopped

Steps:

  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Cool bacon and crumble into pieces.
  • Whisk together the mayonnaise, cider vinegar, and sugar in a mixing bowl until the sugar has dissolved. Add the broccoli, raisins, cashews, onion, and crumbled bacon. Stir until evenly coated. Cover and refrigerate the salad for at least 2 hours. Let stand at room temperature 15 to 20 minutes before serving.

2 packages (5 ounces each) spring mix salad greens
2 large apples, coarsely chopped
1 can (9-1/4 ounces) lightly salted cashews
1 package (5 ounces) dried cranberries
1/2 cup shredded Parmesan cheese
VINAIGRETTE:
2/3 cup sugar
1/2 cup canola oil
1/3 cup cider vinegar
1 teaspoon ground mustard
1 teaspoon poppy seeds
1 teaspoon salt

Steps:

  • In a large bowl, combine the first five ingredients. In a small bowl, whisk vinaigrette ingredients until blended. Pour over salad and toss to coat; serve immediately.

ROMAINE CASHEW CRANBERRY SALAD



Romaine Cashew Cranberry Salad image

This mild, fun salad with crispy, flavorful, sweet and tangy ingredients makes a beautiful addition to your table, and a joy to serve.

1 - 1½ heads romaine lettuce
½ Lb raw, unsalted cashews
5 oz dried cranberries
4 - 6 oz Monterey Jack or Swiss cheese, shredded
1 - 1½ green apple
2 tsp lemon juice
Poppy seed dressing or raspberry vinaigrette

Steps:

  • Spread cashews in a baking pan, and toast in oven at 250° for 30-40 minutes, stirring every 10 -15 minutes until they are medium golden brown. Set aside to cool.
  • Thoroughly rinse the romaine lettuce.
  • Thinly cut or tear lettuce into thin strips, then run through a salad spinner to dry.
  • Cut the apples into thin strips or small cubes, put in a bowl, and sprinkle lemon juice over the pieces, mixing well with a spoon to coat.
  • Layer salad, then cashews, cranberries, cheese, and apple pieces in 3 separate layers in a serving bowl, tossing each layer very lightly and gently to mix, careful to prevent the heavier pieces from falling to the bottom of the bowl.
  • Serve with poppy seed dressing or raspberry vinaigrette on the side.

SALAD:
5 cups broccoli florets, cut into 1/2-inch pieces
1/2 cup chopped red onion
1 cup shredded sharp Cheddar cheese
1 cup cooked and crumbled bacon pieces
1 cup sunflower kernels
3/4 cup Ocean Spray® Craisins® Original Dried Cranberries
DRESSING:
1 cup salad dressing or mayonnaise
1/4 cup sugar
2 tablespoons red wine vinegar
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Combine all salad ingredients in a large mixing bowl; mix well. Combine dressing ingredients in a small mixing bowl. Mix until thoroughly combined using a fork or wire whisk. Add dressing to salad and mix well. Refrigerate 1 hour.

⅔ cup vegetable, safflower or olive oil
½ cup white wine vinegar
¼ cup mango chutney
1 ½ - 2 teaspoon sugar
1 teaspoon salt
1 teaspoon curry powder
¼ teaspoon bottled hot pepper sauce
6 cups fresh baby spinach leaves or mesclun
1 large unpeeled Granny Smith or Red Delicious apple, cored, halved lengthwise and thinly sliced
¾ cup roasted cashews
⅓ cup dried cranberries, golden raisins or dried tart cherries

Steps:

  • In a screw-top jar, combine oil, vinegar, chutney, sugar, salt, curry powder and hot pepper sauce. Cover and shake well. If you like, chill until serving time. Before using, bring to room temperature.
  • In a large salad bowl, combine spinach, apple, cashews and cranberries. Shake or whisk vinaigrette and pour desired amount over spinach mixture. Toss lightly to coat. Serve immediately. Store any remaining dressing in the refrigerator up to 1 week. Bring to room temperature before using. Makes 6 servings.

2 lbs of romaine mixed greens
8 ounces cashews
1 1/2 cups shredded swiss cheese
1/2 cup craisins (or more to taste)
1 cup vegetable oil
1/2 cup cider vinegar
3/4 cup white sugar
1 teaspoon prepared mustard
1 teaspoon grated onion
1 teaspoon poppy seed

Steps:

  • Dressing:.
  • Mix vinegar, oil, sugar, mustard, onion, and poppy seeds together in a jar with a tight fitting lid.
  • Shake well, until mixed.
  • Refrigerate overnight, or for at least 6 to 8 hours.
  • To Assemble:.
  • Combine the romaine mixed greens, cashews, swiss cheese, and craisens together in a large bowl. Mix Well.
  • Just before serving, toss salad with the dressing.
