These easy cashew chicken lettuce wraps are made in one pot in just 20 minutes! A better-than-takeout recipe that the whole family will love.

1 Tablespoon salted butter
1 teaspoon olive oil
2 pounds chicken breast (, cut into 1-inch pieces)
2 teaspoons minced garlic
3/4 cup chicken stock
1/4 cup low sodium soy sauce
3 Tablespoons hoisin sauce
1 1/2 Tablespoon rice vinegar
2 Tablespoons corn starch
3/4 cup unsalted cashews
salt and pepper (, to taste)

Steps:

  • Heat the butter and oil in a large skillet over medium heat. Once the butter has melted, add in a single layer of chicken. Season with salt and pepper. Allow to cook for 3 minutes, or until brown and then flip onto the other side. Let cook an additional 3 minutes, or until golden brown. Turn the the heat to low and then stir in the garlic and cook.
  • While the chicken is cooking, whisk together the chicken stock, soy sauce, hoisin sauce, vinegar, and corn starch in a small bowl. Stir into the skillet and cook with chicken over low heat, until the sauce has thickened. Stir in cashews.
  • Serve in lettuce cups or over rice if preferred. Top with chopped green onions if desired.

It's very refreshing, and it's WAY better than PF Chang's lettuce wraps! Best of all, it takes only about 20 minutes to make.

2 tablespoons extra-virgin olive oil
1 lb. chicken breasts (and/or thighs, diced)
1 onion (diced)
2 cloves garlic (finely chopped)
2 ribs celery (thinly sliced)
1/2 cup chopped cashews
2 tablespoons hoisin sauce
1 tablespoon corn starch
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon toasted sesame oil
1 teaspoon sriracha
1 tablespoon fresh minced ginger (from about a 1 inch piece)
8 large pieces of iceberg or butter lettuce (plus more if needed)
2 green onions (thinly sliced)

Steps:

  • Heat olive oil on medium-high heat in a large skillet or wok and saute onions until tender. Add garlic; saute until fragrant (about 1 more minute)
  • Add chicken and saute until cooked completely.
  • Meanwhile, whisk soy sayce and cornstarch together in a small bowl (or in a mason jar). Add remaining sauce ingredients (hoisin sauce, soy sauce, rice vinegar, sesame oil, sriracha, and ginger) and whisk or shake to combine.
  • Add celery, cashews, and sauce to skillet; saute for 1-2 minutes or until sauce thickens.
  • Transfer to bowl and allow to cool slightly. Serve wrapped in large lettuce pieces and garnished with green onions.

2 pounds boneless skinless chicken breasts (cut into small pieces)
salt and freshly ground black pepper
1 cup low-sodium chicken broth
2 Tablespoons low-sodium soy sauce
1/2 teaspoon freshly grated ginger
1/4 cup hoisin sauce
1 Tablespoon rice vinegar
2 Tablespoons cornstarch
3 cloves garlic (, minced)
2 teaspoons sesame oil (or substitute canola oil)
1 - 2 teaspoons Sriracha hot sauces (to taste)
3/4 cup unsalted cashews
1 head green leafy lettuce ((romaine, bib, or butter))
5 green onions (, chopped, divided)

Steps:

  • Season chicken pieces with salt and pepper.
  • In a small bowl stir together the chicken stock, soy sauce, ginger, hoisin sauce, vinegar, and cornstarch.
  • Heat oil in a large skillet over medium heat. Season chicken with salt and pepper and add to hot skillet. Cook, flipping once, until cooked through, about 5 minutes.
  • Add garlic and cook for 30 seconds. Reduce heat to low, add the sauce from the bowl and continue to cook, stirring, until thickened. Add sriracha hot sauce, to taste. Stir in cashews and most of the green onion, reserving a big handful for garnish at the end.
  • Serve in cold lettuce cups. Top with remaining chopped green onions if desired.

One of my favorite dishes at PF Chang's is the lettuce wraps. They're so flavorful and refreshing, I can't get enough of them. This homemade and entirely different recipe is just as flavorful and refreshing. Lettuce wraps are a good combination of savory, spicy and crunchy that I just love. Plus they're easy. And I always like easy. There's only about 4 main ingredients and chances are you probably have most of them on hand. Perfect, fast, and healthy for busy summer nights.

====For Stir Fry Sauce==== (which I double at times)
2 Tablespoons soy sauce
1 Tablespoons rice vinegar
1 Tablespoons brown sugar
1/4 Teaspoon cayenne pepper
1/4 Teaspoon ground ginger (or 2 teaspoons fresh)
1 Teaspoon sesame oil
====For Cashew Chicken====
2 chicken breasts diced
3 Tablespoons veggetable oil
1 Cup onions diced
2 cloves garlic minced
1 Teaspoon soy sauce
1/4 Cup cashews chopped
salt and pepper to taste
1/4-1/2 Cup water chestnuts diced
optional: shredded cabbage
Several leaves of greenleaf (my pick) or iceburg lettuce

Steps:

  • For sauce: Mix all ingredients making sure to dissolve brown sugar. Set aside. For cashew chicken: Heat oil in pan over med-high heat. Add diced chicken and brown (4-5 minutes). Remove chicken from oil. Add onions, garlic, 1 t soy sauce to pan (and shredded cabbage if using); brown. When mixture is brown and tender, add stir fry sauce, browned chicken, cashews, and water chestnuts. Saute a few minutes. To serve: Spoon chicken mixture onto individual lettuce leaves, may add some hot sauce (Sririacha), more cashews, and maybe even some cilantro is desired. Roll up and eat!

I LOVE PF Changs Lettuce Wraps, but we live a long distance from the nearest of their restaurants. When I start craving their lettuce wraps, I make this copycat recipe, and my husband says they are even better than Changs. You be the judge. They are a little work, but well worth the effort. Note: I took the cellophane, heated about an inch of oil in a skillet, got it hot, tested it with a few crumbs of noodles to see if it would sizzle, and then dropped the noodles in. They crisp up very fast. I drained on papertowels and then mixed in with the other recipe,

8 dried shiitake mushrooms or 8 fresh shiitake mushrooms
1 teaspoon cornstarch
1 teaspoon soy sauce
2 teaspoons dry sherry
2 teaspoons water
salt and pepper
1 1/2 lbs ground chicken
5 tablespoons oil
1 teaspoon fresh ginger, minced
2 garlic cloves, minced
2 green onions, minced
2 small dried chilies (optional)
1 (8 ounce) can bamboo shoots, minced
1 (8 ounce) can water chestnuts, minced
1 (2 ounce) package cellophane noodles, prepared according to package
3 tablespoons hoisin sauce
1 tablespoon soy sauce
1 tablespoon dry sherry
2 tablespoons oyster sauce
2 tablespoons water
1 teaspoon sesame oil
1 teaspoon sugar
2 teaspoons cornstarch
12 leaves iceberg lettuce, cups

Steps:

  • (If you used dried mushrooms, cover mushrooms with boiling water, let stand 30 minutes then drain.) Cut and discard woody stems from mushrooms. Mince mushrooms. Set aside.
  • Mix all ingredients for cooking sauce in bowl, and set aside.
  • In medium bowl, combine cornstarch, sherry water, soy sauce, salt, pepper, and chicken. Stir to coat chicken thoroughly. Stir in 1 teaspoons oil and let sit 15 minutes to marinate.
  • Heat wok or large skillet over medium high heat. Add 3 TBSP oil, then add chicken and stir fry for about 3-4 minutes. Remove from pan and set aside.
  • Add 2 TBSP oil to pan. Add ginger, garlic, chilies(if desired. I leave these out), and onion; stir fry about a minute or so.
  • Add mushrooms, bamboo shoots and water chestnuts; stir fry an additional 2 minutes.
  • Return chicken to pan. Add mixed cooking sauce to pan. Cook until thickened and hot. Break cooked cellophane noodles into small pieces, and cover bottom of serving dish with them. Then pour chicken mixture on top of noodles. Spoon into lettuce leaf and roll.

1 Tablespoon olive oil
⅓ cup low-sodium soy sauce
⅓ cup low-sodium teriyaki sauce
¼ cup rice wine vinegar
1 cup mushrooms ((diced))
½ cup yellow onion ((diced))
¼ cup green onions ((diced))
½ cup water chestnuts ((can leave out if desired))
dash of ground ginger ((can leave out if desired))
1 teaspoon minced garlic
salt and pepper (to taste)
1 teaspoon garlic salt
18 lettuce leaves

Steps:

  • Cook ground chicken in a large skillet on the stove top until cooked through.
  • Add the olive oil, soy sauce, teriyaki sauce, rice wine vinegar, mushrooms, onion, green onion, water chestnuts, ginger, garlic, salt and pepper, and garlic salt until the onions are tender and clear.
  • Continue stirring until everything is fully incorporated and warmed through.
  • Remove from heat and serve in lettuce leaves.
