CASHEW AVOCADO CHICKEN SALAD



Cashew Avocado Chicken Salad image

Try this chicken salad when you really want a treat! This recipe makes sandwiches - but it can be served over lettuce as an alternative.

4 cooked, boneless chicken breast halves, shredded
¼ cup ranch salad dressing, or to taste
1 ½ tablespoons chopped fresh dill
1 cup cashews
1 avocado - peeled, pitted and diced
salt and pepper to taste
12 slices bacon
6 slices Swiss cheese
12 slices bread, toasted

Steps:

  • In a large bowl, mix the cooked chicken, dressing, dill, cashews, and avocado. Season with salt and pepper. Cover, and chill in the refrigerator at least 30 minutes.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown; drain.
  • Spread even amounts of the chicken mixture on 6 slices of toasted bread. Top each with 2 slices bacon and 1 slice Swiss cheese. Top with remaining bread slices to make sandwiches.

1 cold rotisserie chicken
3/4 cup coarsely chopped cashews
3/4 cup chopped celery
1/2 cup minced red onion
3/4 cup light sour cream
1/4 cup mayonnaise
2 tablespoons lemon juice
3/4 teaspoon dry tarragon
1/4 teaspoon pepper
salt

Steps:

  • Remove and discard skin and bones from rotisserie chicken. Tear meat into bite- size pieces and place in a large bowl with cashews, celery and onion. Mix together remaining ingredients in a small bowl and stir into chicken mixture. Chill for 1 hour to allow flavors to blend. Serve over salad greens or spoon into tomato cups, croissants or pita bread.

  • Place the ingredients for the marinade in a bowl and mix together, place the chicken breasts in the bowl and coat evenly in the marinade. Cover and leave for 30 min - overnight.
  • Add cashew nuts to a bowl and enough warm water to cover them, cover the bowl and let them sit for 15 minutes while you make the rest of the salad.
  • Melt 1 Tbs coconut oil in a cast-iron pan on high heat. Once the pan is very hot turn the pan down to medium heat. Cook the chicken breasts for about 5 minutes on each side so that they are are golden brown on the outside. Pour the remaining marinade over the chicken when you have a couple of minutes left to cook. Remove the chicken and set aside to rest while you prepare the rest of the salad.
  • Place the soaked cashew nuts, water, almond milk, garlic, and turmeric in a high power blender or food processor and blitz until smooth and creamy. Add more water if you would like a thinner consistency. Add salt and pepper to taste.
