This is the closest rendition o fthe actual Green Sauce from Casa Ole that I can find. Don't be afraid to blend it for a while to make everything as smooth as possible.

Number Of Ingredients 9

2 avocados, seeded, put into blender
2 -3 serrano peppers, chopped and put into blender do not seed
1/2 cup cilantro, stemmed put into blender
8 ounces light sour cream
1 -2 teaspoon fresh garlic, crushed
4 tablespoons lime juice
1 teaspoon salt (taste, andadjust later)
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper

Steps:

  • Roast Serranos over open flame or in oven on broil.
  • Bag or wrap in plastic to loosen skins.
  • Remove pepper skins.
  • Place all ingredients into blender.
  • Puree for 5 minutes until it is smooth and creamy.
  • Chill 2 hours.

4 avocados
1 teaspoon lemon juice
1 tablespoon garlic powder
1 tablespoon pickled jalapeno peppers
2 tablespoons chopped fresh cilantro
2 cups sour cream
2 teaspoons salt
1 10-ounce can Rotel diced tomatoes & green chilies
1 4-ounce can diced green chilies

Steps:

  • In a food processor, combine cream cheese, avocados, lemon juice, garlic powder, jalapenos, cilantro, salt, and sour cream. Process until smooth.
  • Add the Rotel tomatoes and green chilies. Pulse several times to finish the sauce.
  • Serve with tortilla chips.

4 ripe avocados
16 ounces sour cream
1 (10 ounce can) Rotel diced tomatoes, undrained
1 (4 ounce can) green chiles, undrained
3 ounces cream cheese
1 Tablespoon of garlic powder
2 teaspoons salt
1 teaspoon lemon juice

Steps:

  • Place all of the ingredients in the blender and process until smooth. Chill in the refrigerator until serving.
  • Serve with chips. This is also a great topping for burritos, tacos, and enchiladas.

I found this recipe on CopyKat Recipes about ten years ago. It no longer appears to be on the site. I've never tried it, but want to put it here for safekeeping. I used to live in Waco, and loved to eat at Casa Ole - their green sauce was one of my favorite things.

6 small avocados
1 (16 ounce) container sour cream
1 tablespoon garlic powder
1 tablespoon onion powder
8 ounces salsa verde, pace medium (without the diced green chilies)
1 (4 ounce) can diced green chilies
1 teaspoon salt
2 teaspoons lemon juice
3 ounces cream cheese

Steps:

  • Break up avocado slices.
  • Mix slowly at first in open bowl and then blend all ingredients until smooth.

Casa Ole (a restaurant) refused to fork over their recipe for the green sauce they serve, so I set to work in the kitchen and came up with this. I think it's exact, but we shall never know unless we ever get them to relinquish their version. Mine is better! Enjoy sauce with tortilla chips.

2 cloves Garlic
1 large Jalapeno (fresh, not pickled)
2 sprigs fresh Cilantro

1 cup Water or as needed during blending

Steps:

  • Combine all ingredients on high in blender until smooth, adding water as necessary to thin down mix so that it blends smoothly in blender. Place in refrigerator for 4 hours. Serve in dip bowls.

This copycat green sauce is so much more than a typical salsa verde. Avocados, tomatillos, and jalapeno with sour cream and cilantro make a kickin' creamy sauce that's perfect for dipping tortilla chips or quesadilla slices.

3 medium avocados
1 can (32 ounce size) green tomatillos, drained
2 cloves garlic
1 large jalapeno, seeds and stem removed
2 sprigs fresh cilantro
2 teaspoons salt
1 container (8 ounce size) sour cream
1 teaspoon fajita seasoning
1 cup water or as needed during blending

Steps:

  • Slice the avocados in half and remove the pits. Scoop the flesh of the avocado into a blender. Add the remaining ingredients except water to the blender. Process on high until smooth, adding water as needed until the mixture is the desired consistency. Scrape down the sides as needed. Pour the mixture into a container and place in the refrigerator for 4 hours or until chilled.
