6 medium carrots, cut in large matchsticks
salt water
1/4 cup butter
2 medium onions, thinly sliced
2 tablespoons all-purpose flour
1 cup water
2 teaspoons chicken bouillon powder
1/2 teaspoon granulated sugar

Steps:

  • Cook carrots in salted water until tender.
  • Drain.
  • Meanwhile, melt butter in frying pan.
  • Add onion.
  • Saute until onion is soft and clear.
  • Mix in flour.
  • Stir in water, bouillon powder and sugar until it boils and thickens.
  • Add carrots.
  • This may be kept hot or reheated in the oven.

Number Of Ingredients 6

1/2 lb carrots (3 medium), halved lengthwise and cut into 1/2-inch pieces
1 small garlic clove
1/3 cup low-sodium chicken broth
1/4 teaspoon salt
2 tablespoons heavy cream
1 teaspoon unsalted butter

Steps:

  • Simmer carrots, garlic, broth, and salt in a 1- to 2-quart heavy saucepan, covered, until carrots are very tender, 12 to 14 minutes. Purée mixture with cream and butter in a food processor until smooth.
