CARROT SOUP WITH POTATOES AND CREAM

Steps:
- Melt the butter in a large pot over low heat. When the butter begins to foam, add the onion; cook until the onion begins to turn translucent, 3 to 4 minutes. Add the chicken broth, carrots, potatoes, herbes de Provence, thyme, and bay leaf; season with salt and pepper. Raise heat to medium-high and bring to a boil; reduce heat again to low and simmer until the potatoes are tender, about 30 minutes.
- Pour the soup into a blender, filling the pitcher no more than halfway. Securing the lid of the blender with a folded kitchen towel, start to blend using a few quick pulses before allowing to blend continually; puree in batches until smooth. Divide into eight soup bowls; garnish each portion with about 1/2 tablespoon heavy cream and a sprig of parsley.

- 1. In a large pot over medium-high heat, add butter. When it starts foaming, add onions and stir just enough to coat them with butter. Cover, reduce heat to medium-low and cook for 3 minutes
- 2. Add carrots, stir well, cover, increase the heat to medium and cook for 5 minutes. A couple minutes later, quickly stir well.
- 3. Add leftover mashed potatoes, combine them with the ingredients before pouring in the chicken broth. Add Herbes de Provence, rosemary, paprika, thyme and white pepper; stir well. Add bay leaf and bring the mixture to a boil, whisking often. Reduce heat to medium-low and simmer gently for 30 minutes, stirring occasionally.
- 4. When time is up, turn off the heat and let the mixture rest for 5 minutes. Remove the bay leaf and discard it. Using an immersion blender, process until the soup is smooth with no lumps in it; taste and adjust if necessary.
- 5. Portion soup in warm bowls and drizzle 1 tbsp. per bowl with heavy cream and garnish with a parsley

- Place the chopped carrots, parsnips, and potatoes into a large pot with a lid. Add about 1.5 cups of water and bring to a boil.
- Once water is boiling, cover the pot, reduce heat, and let the veggies steam for about 20-25 minutes, or until you can easily pierce them with a fork.
- When the veggies are cooked, drain the remaining liquid. Return the vegetables to the pot and add minced garlic, almond milk, butter, thyme, cinnamon, nutmeg, salt, and pepper.
- With a potato masher, mash all ingredients together until your desired texture is achieved. The carrots, parsnips, and potatoes should be fluffy but textured. Adjust seasonings as needed!
- Transfer mash to a serving bowl. Add optional garnish, if desired.

- In a large soup pan, over medium heat, saute the garlic and onions in the olive oil until softened, about 5 minutes. Add the carrots, potatoes, ginger, cumin and broth, cover and simmer for 20 minutes, or until the carrots are tender but not mushy.
- Remove the pot from the heat. Puree half this mixture in a food processor or blender. Combine the pureed and unpureed parts of the soup together to create one nicely textured whole. CARROT POTATO SOUP
An easy and healthy carrot potato soup recipe that's simple enough to make for a weeknight dinner. It's even easier if you have a pressure cooker to work with.

- Peel and cube the potatoes and carrots. I used the red washed potatoes so didn't peel them, this is up to you
- Place the cubed vegetables in a pressure cooker or heavy-bottomed cooking vessel with a lid
- Add 1 tbsp butter and enough water to submerge the vegetables
- If using a pressure cooker, close the cooker and let it cook for 3 whistles or 15-20 minutes
- Let the pressure release
- If using a regular cooking vessel, cover and cook on low flame until the carrots and potatoes are completely tender
- In the meantime, grind the coriander leaves coarsely using a pestle and mortar or small blender
- Once the vegetables are done, if you have a stick blender, blend the vegetables while they are still hot into a soft mush. You can leave some small chunks of vegetables as is if you'd like some texture in the soup
- If using a regular blender, wait until the vegetables are cool before blending
- In a separate pan, heat 1 tsp butter and add the coriander leaves paste
- Cook for ten seconds until fragrant and then add the pureed vegetable mix
- Add water and adjust to your desired consistency
- Bring to boil and add salt, sugar, and freshly cracked black pepper
- There's no need to boil the soup for too long
- Serve hot garnished with chopped coriander leaves and more black pepper
