Steps:

  • Place carrots and raisins in a large bowl. In a small bowl, whisk together the mayonnaise, sugar and enough milk to achieve the consistency of a creamy salad dressing. Pour over carrot mixture and toss to coat.

1 cup chopped unpeeled Fuji apple (about 1 medium)
1/2 cup raisins
1 tablespoon chopped pecans, toasted
1/4 cup plain fat-free yogurt
1/4 cup reduced-fat sour cream
1/4 cup reduced-fat mayonnaise
1 tablespoon honey
1/4 teaspoon grated lemon peel
1 teaspoon fresh lemon juice
1 teaspoon grated gingerroot
1/8 teaspoon salt
Additional chopped pecans, toasted, if desired

Steps:

  • In large bowl, toss carrots, apple, raisins and 1 tablespoon pecans.
  • In small bowl, mix yogurt, sour cream, mayonnaise, honey, lemon peel, lemon juice, gingerroot and salt. Spoon over carrot mixture; toss gently to coat. Serve, or cover and refrigerate up to 2 hours. Garnish with additional chopped pecans.

1 1/2 pounds carrots, coarsely grated (about 12 medium carrots)
1/4 cup golden raisins
1/4 cup fresh orange juice
4 teaspoons fresh lemon juice
1/4 cup extra-virgin olive oil
Coarse salt
Pinch of cayenne pepper (optional)
1/2 cup loosely packed fresh cilantro

Steps:

  • Toast cumin seeds in a small skillet over medium heat, tossing occasionally, until they are fragrant and a shade darker, about 2 minutes. Lightly crush cumin seeds using a mortar and pestle, or using the flat side of a large knife. Set crushed seeds aside.
  • Toss grated carrots, golden raisins, and orange and lemon juices together in a medium bowl. Add oil and crushed cumin seeds; season with salt. Add cayenne, if desired; toss in cilantro.

1 teaspoon rice wine vinegar
1 tablespoon honey (or maple syrup)
1/2 teaspoon kosher salt
4 cups shredded carrots (about 4 large carrots)

Steps:

  • Place the raisins in a small mixing bowl and cover with hot water. Let the raisins sit in the hot water to plump up for 5 to 10 minutes. Once raisins have plumped up, drain off the water.
  • Drain the pineapple tidbits, reserving 2 tablespoons for the dressing.
  • In a large mixing bowl, mix together the rice wine vinegar, honey, salt, and 2 tablespoons of reserved pineapple juice. for the dressing. Add the carrots, pineapple tidbits, and plumped raisins to the dressing and toss well to combine.
  • Cover and refrigerate for at least one hour before serving.
