CINNAMON CARROT BREAD
I don't remember where I got this recipe, but I have had it for about 20 years. It is a real good bread.

Steps:
- Preheat oven to 350 degrees F (175 Degrees C). Grease and flour a 9 x 5 inch loaf pan.
- In a large bowl, beat together the sugars and sunflower oil. Sift flour, baking powder, baking soda, cinnamon, and salt into the bowl while stirring occasionally. Beat the eggs together, and gradually stir into the batter until everything is combined. Mix in carrots, pecans, and vanilla until well combined. Pour batter into prepared pan.
- Bake on middle rack for 60 minutes, or until it tests done. Cool in pan for 10 minutes, and then turn out onto wire rack to cool completely.

Steps:
- Measure carefully, placing all ingredients in bread machine pan in the order recommended by manufacturer, adding carrots with milk.
- Select Basic/White cycle.
- Use Medium crust color.
- Adjust dough consistency, if needed.
- Check dough after 5 minutes of mixing; it should form a soft, smooth ball around the blade.
- If dough is too stiff or dry, add additional liquid, 1 teaspoon at a time, until dough is of the right consistency.
- If dough is too soft or sticky, add additional bread flour, 1 teaspoon at a time.
- Remove baked bread from pan and cool on wire rack.

- 1. Measure all ingredients and set on counter within easy reach. IMPORTANT: If you don't have a theremometer to check the water temperature, sprinkle a few drops on the inside of your wrist.(Think baby formula) It should just be barely lukewarm. If water is too hot, it will kill the yeast action. Pour water into bread machine pan
- 2. Whisk the molasses and oil together until well blended. Pour into bread machine on top of water Add carrots and poppy seeds Carefully add flour, making certain that liquid is completely covered by flour Make a small well in the top of flour and pour the yeast into the depression
- 3. Start bread machine for cooking This bread can be cooked on either regular or rapid cycle.
