"My grandma frequently fixed the salad when she was asked to bring a dish to a family gathering," writes Sue Gronholz of Beaver Dam, Wisconsin. "Now I make it often since it's a favorite of our kids. It's a fun way for them to get a fruit and vegetable."

Number Of Ingredients 7

1 can (8 ounces) unsweetened crushed pineapple
1 package (.3 ounce) sugar-free lemon gelatin
1 cup boiling water
1/2 cup cold water
1 teaspoon white vinegar
1/8 teaspoon salt
2 medium carrots, grated

Steps:

  • Drain pineapple, reserving 1/2 cup juice; set pineapple and juice aside. In a bowl, dissolve gelatin in boiling water. Stir in cold water, vinegar, salt and reserved juice. Chill until partially thickened, about 45 minutes. Stir in carrots and reserved pineapple. Pour into a 3-cup mold coated with cooking spray. Chill until firm. Unmold to serve.

Orange Carrot Gelatin Salad is a tried-and-true family recipe we enjoy at summer gatherings that's perfect for picnics and barbecues, or even a Memorial Day family gathering.

3 oz orange flavored gelatin
1 cup boiling water
7 large ice cubes
1 1/2 cups coarsely grated carrots
16 oz pineapple tidbits (drained)
11 oz mandarin oranges (drained)

Steps:

  • Gather all your ingredients so that you have everything close at hand on the counter or table. Prepare your ingredients.
  • Peel and grate the carrots. Using a colander, drain the pineapple tidbits and mandarin oranges. (Save the juices for use later in a beverage of your choosing.)
  • Boil water in a tea kettle.
  • While waiting for the water to boil, place the orange gelatin in a medium-sized serving bowl.
  • Measure out the boiling water and pour into the bowl. Stir the mixture with a wooden spoon until the gelatin has completely dissolved.
  • Add ice cubes to the gelatin and stir until the ice has melted.
  • Carefully stir into the liquid gelatin mixture the grated carrots and the drained fruit.
  • Cover with plastic wrap and place the bowl in the refrigerator to set. Allow the salad to set at least 8 hours or overnight.
  • This gelatin salad will serve 6-8 people.

1 package (3 ounces) orange gelatin
1 cup boiling water
1 can (8 ounces) crushed pineapple in juice
1 can (11 ounces) mandarin oranges, drained
1 cup grated carrots

Steps:

  • In a bowl, dissolve gelatin in water. Drain pineapple, reserving juice; set pineapple aside. Add enough water to juice to make 1 cup; stir into gelatin. Chill until partially set. Fold in oranges, carrots and pineapple. Pour into a 5-cup serving bowl. Chill until firm.

For a refreshing and soothing finish to a spicy meal, serve this blend of fresh fruit with lime flavored gelatin.

1 cup boiling water
1 package (3 ounces) lime- or lemon-flavored gelatin
1/2 cup cold water
1 can (8 ounces) crushed pineapple, undrained
1/2 cup shredded carrot
Mayonnaise or whipped cream, if desired

Steps:

  • Pour boiling water on gelatin in medium bowl; stir until gelatin is dissolved. Stir in cold water and pineapple. Refrigerate about 45 minutes or until thickened but not set.
  • Lightly brush six 1/2-cup salad molds with vegetable oil. Stir carrot into thickened gelatin; pour into molds. Refrigerate about 4 hours or until firm.
  • To unmold salads, dip molds into hot water for 10 seconds. Place salad plate upside down onto each mold; turn plate and mold over, then remove mold. Top salads with mayonnaise.
