CARROT & CORIANDER SOUP

Everyone loves this super healthy soup, perfect for an easy supper

1 tbsp vegetable oil
1 onion, chopped
1 tsp ground coriander
1 potato, chopped
450g carrots, peeled and chopped
1.2l vegetable or chicken stock
handful coriander (about ½ a supermarket packet)

Steps:

  • Heat 1 tbsp vegetable oil in a large pan, add 1 chopped onion, then fry for 5 mins until softened.
  • Stir in 1 tsp ground coriander and 1 chopped potato, then cook for 1 min.
  • Add the 450g peeled and chopped carrots and 1.2l vegetable or chicken stock, bring to the boil, then reduce the heat.
  • Cover and cook for 20 mins until the carrots are tender.
  • Tip into a food processor with a handful of coriander then blitz until smooth (you may need to do this in two batches). Return to pan, taste, add salt if necessary, then reheat to serve.

This soup uses six RSC #10 ingredients, so you can omit the cream (and not use butter) for a vegan version. Serve hot. Also nice at room temperature.

2 ounces vegetable oil or 2 ounces butter
2 lbs carrots, peeled and sliced
1 large red onion, peeled and chopped
1/2 teaspoon coriander seed, crushed
1/2 teaspoon coriander, ground
1/2 teaspoon mace
2 teaspoons brown sugar
1/2 teaspoon salt (to taste)
1/4 teaspoon pepper (to taste)
4 teaspoons lemon juice
8 -10 cups vegetable stock (not all added at once)
3 tablespoons pearl barley
1 1/3 cups heavy cream (optional)
1/2 cup cilantro, chopped (to garnish)

Steps:

  • Heat oil or butter in a pan large enough to hold all the ingredients.
  • Add carrots and onion. Stir well. Cover and cook for about 5 minutes.
  • Add crushed coriander seeds, ground coriander and mace. Cook for 1 minute, stirring constantly.
  • Add 6 cups of vegetable stock, and all other ingredients except the additional stock, and the cream and cilantro. Bring to a boil, then simmer for 30-40 minutes or until carrots and barley are tender.
  • Whiz the soup in a food processor (you'll probably need to do this in at least two batches), and return to cooking pan.
  • Stir in the last 2-4 cups of vegetable stock (depending on how thin a soup you want) and the cream, if used.
  • Heat through, but do not boil.
  • Serve, garnished generously with chopped cilantro.

LOW-FAT CARROT & CORIANDER SOUP



Low-Fat Carrot & Coriander Soup image

This soup has been created in Thailand, where cooking is often done with a lot of fat - I have created this recipe to teach my cook, as they have no concept of low-fat cooking. You can of course use freshly made chicken stock instead of stock cubes

cooking spray
2 medium sized onions, chopped
325 g tomatoes
6 medium sized carrots, peeled & chopped
1 liter boiling water
2 chicken stock cubes, blended in the boiling water
1 1/2 tablespoons ground coriander
salt and black pepper
3/4 cup fresh coriander (parsley & chives)
low-fat yogurt, for presentation

Steps:

  • Spray a little oil into base of stock pot (although you can dry-fry the onions).
  • Add the onions and gently cook for a few miniutes.
  • Add the ground coriander and gently stir this in, cook for a further minute.
  • Stir in the tomatoes & carrots and cook for 5 minutes.
  • Add the chicken stock and plenty of black pepper, according to taste.
  • Simmer for 25 minutes with the lid on.
  • Put the soup through a blender, blend to preferred consistency.
  • Add the coriander (parsley & chives if no coriander is to be found)near the end of the process, so that the leaves are roughly chopped.
  • Reheat and season to taste.
  • Serve in bowls and swirl in the low fat cream for presentation purposes only.
  • Serve with warm crusty bread.

This soup is only available in the most fine dining restaurants. It is the most delicious soup you could ever think of, tasting of fresh coriander n lemon. You could add the vegetables or just leave them out and add only chicken if using the non veg version. Its so simple to make and if you prepare it on a dinner party, it would be an instant star try it !!!!!

7 1/2 cups water (veg version) or 7 1/2 cups prepared chicken stock (non veg version)
6 bunches fresh coriander, roots clipped with about two inches stems (root has the basic flavor)
1/2 lemon, zest of, grated a
6 peppercorns
2 inches gingerroot, skin
1/4 teaspoon salt
6 1/2 cups prepared stock (from the above ingredients)
1 teaspoon salt
2 beans (almost shredded)
1/2 small carrot (cut in round very thin slices then halve it in semi circles)
1 mushroom (almost shredded)
1 teaspoon green portion green onion (almost shredded)
1 garlic clove, chopped (please don't exceed this soup should be tasting of lemon and coriander garlic and ginger if exceeded)
2 leaves cabbage (hard portion removed finely shredded)
2 spinach leaves (finely shredded)
1/2 cup coriander leaves (cilantro)
1/3 cup coriander leaves (cilantro)
5 teaspoons lemon juice
1 teaspoon sugar
1/2 teaspoon msg
1/3 teaspoon white pepper or 3 green chilies, finely shredded
4 teaspoons cornflour
1/4 cup water (for mixing cornflour)
1/2 cup shredded cooked chicken (if using non veg version)

Steps:

  • Stock:.
  • Boil water or prepared stock with salt on a high flame.
  • Add lemon zest, coriander roots, peppercorns, ginger skin.
  • When it starts to boil, boil it for 3 minutes, then turn off flame let it stand one minute.
  • Pass it through a sieve and return the stock to the pan. Note: will be of a very light green colour.
  • Soup: (cooked on high flame).
  • Boil the sieved stock with 1 tsp salt.
  • When it starts boiling, add the vegetables and boil for 1 minute.
  • Add msg and pepper / green chillies; cook for another minute.
  • Mix cornflour in water or remaining stock if there is any. Add 1/2 cup coriander leaves to the soup mix well now immediately add cornflour.
  • Cook till it boils.
  • Reduce heat and add lemon juice, sugar, boiled pieces of shredded chicken.
  • Cook for 4 minutes only (do not overcook).
  • Turn off flame add 1/3 cup remaining coriander leaves; mix well.
  • Serve immediately.
