Bran Flax Muffins image

Oatmeal muffins with carrots, apples, raisins and nuts. These muffins are low in fat, have lots of fiber and are even delicious.

1 ½ cups all-purpose flour
¾ cup ground flax seed
¾ cup oat bran
1 cup brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons ground cinnamon
¾ cup skim milk
2 eggs, beaten
1 teaspoon vanilla extract
2 tablespoons vegetable oil
2 cups shredded carrots
2 apples, peeled, shredded
½ cup raisins
1 cup chopped mixed nuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease muffin pan or line with paper muffin liners.
  • In a large bowl, mix together flour, flax seed, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon. Add the milk, eggs, vanilla and oil; mix until just blended. Stir in the carrots, apples, raisins and nuts. Fill prepared muffin cups 2/3 full with batter.
  • Bake at 350 F (175 degrees C) for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

1 cup carrots (peeled (~2 medium carrots))
2 apples (peeled and cored)
2 egg whites
1/2 cup unsweetened applesauce
1/4 cup extra virgin olive oil
1 1/2 cups Gluten Free 1 to 1 baking flour
1/4 cup flax meal
1 tsp cinnamon
1 1/2 tsp baking powder
1/3 cup coconut sugar

Steps:

  • Preheat oven 350 F. Line a muffin tin with muffin liners or spray with avocado oil spray or olive oil spray.
  • In a food processor, add the carrots and apples. Pulse a few times until shredded. Set aside.
  • In a standing mixer or using a hand mixer, add egg whites, olive oil, applesauce and cinnamon. Mix until eggs become frothy.
  • Add sugar, baking powder and flax and mix to combine. Then slowly add flour to the mixture while mixing on low.
  • Fold in the apples and shredded carrots into the batter.
  • Spoon batter into muffin cavities 3/4 full. Bake at 375 F 25 to 30 minutes until a toothpick can be removed clean. Remove from the oven and cool muffins in the pan 10 minutes before removing from the baking pan.
  • Store in the refrigerator in a sealed container up to 7 days or in the freezer up to 60 days.

1 1/2 cups milled flax seeds
2/3 cup brown sugar
1 tablespoon baking powder
3/4 teaspoon salt

1/2 cup raisins
1 cup chopped walnuts
3/4 cup milk
2 eggs
2 teaspoons vanilla

Steps:

  • Preheat oven to 350 and line muffin tins with paper.
  • Combine dry ingredients.
  • Mix in carrots, raisins, and walnuts one at a time.
  • In separate bowl, whisk eggs, milk, and vanilla.
  • Fold wet ingredients into dry ingredients just until combined.
  • Scoop into muffin tins.
  • Bake 20-25 minutes.

  • Preheat your oven to 325 degrees Fahrenheit. Grease a muffin tin (or line it with paper muffin liners). Note: this recipe makes 13 to 15 muffins. It’s okay if you only want to make 12, but if you have two muffin pans and want to make use of all the batter, then grease 1 whole pan and 3 more muffins in a second pan.
  • To the bowl of a food processor that’s attached with the S blade, add the rolled oats. Blend the oats for about 5 minutes, or until you have a fine-ish looking flour (see photos in the post).
  • to the oat flour add the remaining dry ingredients: corn starch, xanthan gum, baking soda, baking powder, kosher salt, cinnamon, ginger, cloves, and nutmeg. Pulse to blend the dry ingredients together.
