CAROTTES RâPéES OR GRATED CARROT SALAD
Very popular in France- you'll find it on any bistro menu. A simple salad of grated carrots and parsley, with a few other ingredients. The most important thing is the size of the carrots- they must be grated very thin. This salad is best with carrots alone. I would recommend storing the dressing and the salad separately until time to eat. You may want to add more oil or lemon, etc. But do not overdress. It should glisten, but not be swimming in dressing.

- Peel and grate 7 large carrots. Coarsely chop the parsley and combine with carrots.
- To make the dressing: mix together the juice of 2 lemons, 2 or 3 tablespoons of olive oil, and 2 teaspoons of sugar, some salt, and fresh ground pepper. You may add a dab of Dijon.
- Toss with Carrots then taste; you may add ingredients to your liking.

JULIENNE CARROT SALAD
Sometimes a classic, masterfully executed salad is just what you want, and the easier the better. Enter this simple French salad, also known as called carottes râpées. It is grated carrots dressed with a simple vinaigrette; a lemony one works well. I prefer to cut the carrots into a fine julienne rather than use a box grater, which makes them a bit raggedy. The julienne carrots have a more appealing texture, and they look gorgeous piled on a platter, scattered with chives. It's not necessary to stay absolutely traditional with this salad. I often veer North African with it, adding pinches of cumin, cinnamon and hot pepper. Nor would it be out of place to introduce Vietnamese seasonings like cilantro, mint, fish sauce and lime.

- Peel carrots and cut into fine julienne. Place in a medium bowl.
- Put shallot, lemon juice and garlic in a small bowl. Stir in olive oil and season with salt and pepper.
- Lightly salt carrots, add vinaigrette and toss well. Let marinate for 5 to 10 minutes. Taste and adjust seasonings. Pile the carrots onto a serving platter and sprinkle with chives.

FRENCH GRATED CARROT SALAD

If you have it handy, you'll be eating carrots every day. This classic version is made with a salad oil rather than stronger-tasting olive oil. You have a choice here, as extra-virgin olive oil has health benefits that canola oil may not. Still, choose a mild-tasting olive oil rather than a strong green one. For a twist on this version, try it curried, bolstered with capers, cumin and curry powder.
