ULTIMATE AMISH STYLE MACARONI SALAD



Ultimate Amish Style Macaroni Salad image

A classic Amish style macaroni salad loaded up with hardboiled eggs and cheese. This one is so amazing I even made it onto CityLine with it! A daytime TV show here in Toronto!

Number Of Ingredients 14

1 lb (16oz) elbow macaroni
1 medium red onion, diced fine
3 celery stalks, chopped fine
2 tbsp sweet pickle relish
2 cups miracle whip dressing
3 tbsp yellow mustard
¼ cup sugar
3 tsp white vinegar
¼ tsp salt
¾ tsp celery seed
¾ tsp paprika
3 hard boiled eggs, chopped
1 cup finely shredded cheddar cheese
finely chopped chives to top (optional)

Steps:

  • Bring a large pot of salted water to a boil and add the macaroni. Boil for 8 - 10 minutes, until tender, but not super soft. Drain, rinse with cool running water to stop the cooking, and set aside.
  • In a very large bowl, whisk together the red onion, celery, relish, miracle whip, mustard, sugar, vinegar, salt, celery seed, and paprika. When the mixture is uniform, add the chopped egg and cheese, and whisk to distribute.
  • Add the cooked macaroni, and toss with a spatula or wooden spoon to evenly coat all the macaroni with the dressing. Top with chopped chives if you want.
  • Cover tightly with plastic wrap and keep refrigerated until serving. Can be eaten right away, but is the best after it has sat overnight.

This recipe comes from kraftfoods.com. This salad is so easy and can be increased as needed to serve many. This is great for potlucks or when cooking for a crowd. The original recipe calls for sandwich spread; however, that is very expensive and I use the alternative of Miracle Whip Salad Dressing and chopped sweet pickles.

1 (7 1/4 ounce) package macaroni & cheese dinner mix
1/4 cup butter
1/4 cup milk
1/3-1/2 cup Miracle Whip
2 -3 hard-boiled eggs, chopped
1 small green pepper, chopped
1 small onion, finely chopped
1 -2 sweet gherkin, chopped
black pepper
paprika

Steps:

  • Boil the macaroni, drain thoroughly.
  • To the macaroni add the butter, milk and cheese packet mixing well.
  • Add the Miracle Whip, eggs, pepper, onion, sweet pickles and black pepper; mix lightly.
  • Sprinkle with paprika, cover and chill several hours or overnight.

1 cup uncooked elbow macaroni
1/4 cup mayonnaise
1 teaspoon sugar
1 teaspoon cider vinegar
1/2 teaspoon salt
1/2 teaspoon prepared mustard
Dash pepper
1 celery rib, chopped
2 tablespoons chopped onion
1 hard-boiled large egg, chopped

Steps:

  • Cook macaroni according to package directions; drain and rinse in cold water., In a small bowl, combine the mayonnaise, sugar, vinegar, salt, mustard and pepper. Stir in celery and onion. Fold in macaroni and egg. Refrigerate until serving.
