STRAWBERRY BANANA BREAD
Steps:
- Preheat the oven to 350 degrees F. Grease an 8-by-4-inch loaf pan with butter and line the bottom and 2 sides with parchment paper.
- In a medium bowl, combine the flour, baking powder, baking soda and salt. In a large bowl, cream together the granulated sugar and eggs. Stir in the mashed bananas, oil and vanilla. Stir in the flour mixture a third at a time and mix until just combined. Remove 1 cup batter to a separate bowl and stir in the strawberry preserves and half of the freeze-dried strawberries.
- Pour the plain batter into the prepared pan, alternating occasionally with a spoonful of the strawberry batter. Use a skewer to swirl the batters. Bake until a clean skewer inserted in the center comes out mostly clean (some moist crumbs should stick to it), about 1 hour 15 minutes. Let cool completely, then remove the bread from the pan.
- Mix together the confectioners' sugar, lemon juice and remaining freeze-dried strawberries in a small bowl. Drizzle the mixture over top of the banana bread before serving.
STRAWBERRY BANANA BREAD

- Preheat oven to 375F degrees. Spray two 9x5 loaf pan with nonstick spray. Set aside.
- In a large bowl, using a KitchenAid Stand Mixer with paddle attachment cream butter and sugar together until light and fluffy.
- In a small bowl, beat eggs using a fork. Add eggs to sugar mixture and beat until combined. Add mashed bananas and mix until combined.
- Sift all dry ingredients: flour, baking soda, and salt. Slowly add sifted dry ingredients to banana mixture and mix until flour is just combined. DO NOT OVER MIX! Fold in floured covered strawberries.
- Pour batter into prepared loaf pans and bake at 375*F for 15 minutes. REDUCE heat to 350*F and bake for an additional 30 minutes until edges are slightly brown or until toothpick inserted into center comes out clean. Let cool completely before removing from loaf pans.

- Preheat the oven to 350 degrees F. Grease a 9- by 5-inch loaf pan.
- Roughly chop 1/2 cup of the walnuts, and finely chop the remaining 2 tablespoons, keeping them separate.
- Whisk together the flour, sugar, roughly chopped walnuts, baking powder, cinnamon, nutmeg and salt in a medium bowl.
- Whisk together the oil, eggs, vanilla and zest. Fold in the bananas and strawberries. Fold the oil mixture into the flour mixture until just combined (it's OK if there are some lumps). Transfer the batter to the prepared pan, and sprinkle the top with the finely chopped walnuts.
- Bake until the bread is golden brown and a toothpick inserted in the center comes out clean, 1 hour to 1 hour 10 minutes. Run a knife around the edges, and let cool completely in the pan on a rack. The bread can be stored at room temperature in an airtight container for up to 3 days.
CAROB STRAWBERRY BANANA BREAD
Steps:
- Preheat oven to 350 Mix first 5 ingredients in a large bowl. Using a mixer, beat at a medium speed. Mix bananas, oats, and milk seperately. Then add to sugar mixture. Beat well. Combine flours, bran, baking powder, baking soda, salt, and cinnamon in a medium bowl. Add to sugar mixture and stir until just combined. Fold in Strawberries and Carob chips. Coat a 9X 5 loaf pan with cooking spray and spoon batter into it. Bake at 350 for an hour and 15 minutes, or until a toothpick inserted in center comes out clean (with the exception of melted chocolate on in). Cool in pan for 30 minutes and then let cool completely on wire rack. Cooks note: I mash 3 bananas and cut up the fourth, so there are small pieces of banana in the bread. You can also vary this recipe by omiting the strawberries and carob chips, adding walnuts or pecans, adding blueberries, raspberries, or peach slices, etc.
CAROB FUDGE BROWNIES
These brownies feature neither sugar nor chocolate, rather they are sweetened with honey and use carob powder and brewed tea to give flavor.
