CAROB ALMOND FREEZER FUDGE



Carob Almond Freezer Fudge image

Ready in 30 minutes, this carob freezer fudge is low in sugar while still tasting quite decadent. Feel free to change up the nut butter, sweetener, and mix-ins as you see fit. The coconut oil is necessary in this recipe though as it helps solidify the fudge when chilled. It melts quickly so be sure to enjoy it straight from the freezer and don't let it sit on the counter for more than a couple minutes.

Yield 10 large or 16 smaller squares

Number Of Ingredients 8

1/2 cup virgin coconut oil, melted
1/4 cup creamy natural almond butter (roasted or raw are both fine)
1/4 cup carob powder, sifted
1 tablespoon unsweetened cocoa powder, sifted
2-3 tablespoons pure maple syrup (or liquid sweetener of choice), to taste
1 teaspoon pure vanilla extract
1/8-1/4 teaspoon fine grain sea salt
1/2 cup gluten-free rice crisp cereal (to add crunch - optional)

Steps:

  • Line a very small loaf pan (4" x 8") with plastic wrap for easy removal.
  • Mix all ingredients together in a large bowl until smooth.
  • With a spatula, scoop the mixture into the prepared pan and smooth out.
  • Freeze for about 20 minutes, or until solid.
  • Slice into squares and enjoy! Store leftovers in a container in the freezer as it melts quickly at room temperature.

1 cup raw sugar
2/3 cup full-fat, canned coconut milk (See note #1)
1 teaspoon Teeccino Vanilla Nut Naturally Caffeine-Free Herbal Coffee Granules
1 cup natural (no sugar-, no oil-added) peanut butter
1/2 teaspoon vanilla
1/4 cup roasted carob powder (See note #2)

Steps:

  • Place sugar, coconut milk, and herbal coffee in a saucepan and whisk together.
  • Bring to boil over medium-high heat stirring constantly (about 1 to 2 minutes).
  • Cook at a full boil for 2 minutes, stirring constantly.
  • Remove from heat and stir in peanut butter and vanilla.
  • Stir in carob powder.
  • Transfer mixture to an 8-inch x 4-inch dish. I use a loaf pan and line it with parchment paper to make it easy to remove the fudge.
  • Chill before serving.

3 tablespoons chia seeds
½ cup water
1 tablespoon water
½ cup agave nectar
¼ cup sucanat
3 tablespoons olive oil
1 teaspoon gluten-free vanilla extract
1 cup chopped walnuts
¾ cup carob powder
¾ cup brown rice flour
½ cup almond flour
1 teaspoon baking powder
½ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking dish with cooking spray.
  • Place chia seeds in a blender; grind into a meal. Mix in 1/2 cup plus 1 tablespoon water; let stand until thickened, about 5 minutes. Add agave nectar, sucanat, olive oil, and vanilla extract; blend until combined.
  • Mix walnuts, carob powder, brown rice flour, almond flour, baking powder, and salt together in a bowl. Pour in chia seed mixture; mix until batter is smooth.
  • Spread batter in the greased baking dish. Wet hands and pat down evenly.
  • Bake in the preheated oven until a toothpick inserted the center comes out clean, 40 to 45 minutes.

Here is a fudge you Will enjoy and not feel guilty about eating it. It is healthy and very good. This fudge is my sisters favorite after I made some for her. It is easy and yummy too! You can substitute ingredients too if you wish,like...flax seeds, oat bran, powdered milk.

  • Melt honey in a double boiler over low heat.

These are dense, moist, and deeply carob-y. I like to serve them chilled very cold with whipped cream. They are more fudgelike than cakelike. This recipe comes from my sister who served them to me after my son was born. I believe she got this from the "Deaf County Country Cookbook."

  • Mix flours, carob powder, and salt together in a large bowl.
  • In a small bowl combine egg yolks, molasses, oil, water, and vanilla.
  • Add to the flour and mix well.

  • Beat the egg whites until stiff and fold into batter.
  • Spread in an oiled 8 inch square pan.
