CAROB ALMOND FREEZER FUDGE

Carob Almond Freezer Fudge image

Ready in 30 minutes, this carob freezer fudge is low in sugar while still tasting quite decadent. Feel free to change up the nut butter, sweetener, and mix-ins as you see fit. The coconut oil is necessary in this recipe though as it helps solidify the fudge when chilled. It melts quickly so be sure to enjoy it straight from the freezer and don't let it sit on the counter for more than a couple minutes.

Time 10m

SUGAR-FREE COCONUT CAROB BARS

Sugar-Free Coconut Carob Bars image

Easy-to-make, 6-ingredient coconut carob bars made without sugar or sweetener! A nutrient-rich, high-fat low-sugar treat with rich chocolate flavor.

Provided by Minimalist Baker

Categories     Dessert

Time 30m

Number Of Ingredients 8

1/2 cup coconut butter
3 Tbsp coconut oil ((melted))
4 Tbsp toasted carob powder
1 1/2 Tbsp maca powder
1-2 Tbsp coconut flour ((for thickening // or sub almond flour))
1 healthy pinch sea salt
1/2 tsp vanilla extract
Stevia* ((optional // to taste // I didn't find it necessary))

Steps:

  • Add all ingredients to a food processor and blend to combine until completely smooth, scraping down sides as needed.
  • Taste and adjust flavor as needed, adding more carob powder for "chocolate" flavor or sweetness, maca powder for caramel flavor, salt for saltiness, vanilla for vanilla flavor, or coconut butter for creaminess. If it appears too liquidy, add an additional 1 Tbsp (9 g // as recipe is written // adjust if altering batch size) coconut flour. You're looking for a pourable liquid, but not too watery.
  • Pour into cupcake liner molds, a lined loaf pan, or silicone chocolate molds like these or these, and let cool until firm. Depending on the temperature of your home, they may solidify at room temperature. If not, carefully transfer to the refrigerator until firm. Then remove from molds and enjoy. Because coconut butter chilled has some texture, don't be worried if the tops of your bars have a bit of ridging to them - that's totally normal!
  • Store in a sealed container in the refrigerator up to 2 weeks or in the freezer for 1 month or longer. Let thaw slightly before enjoying for best texture.

COOKING WITH CAROB POWDER: 5 REASONS TO SWITCH FROM CACAO ...

From scratchmommy.com
  • No caffeine. While cacao is loaded with alkaloids like ethylxanthines and theobromine, which can over-stimulate the central nervous system, carob doesn’t contain any caffeine.
  • Improves Digestion. One tablespoon of carob powder has 10 percent of your daily recommended fiber intake. Fiber acts as an internal broom, pushing digested food through the large intestine, keeping it clean and healthy, easing bowel movements, and flushing harmful carcinogens out of the body.
  • Contains Antioxidants. Carob contains an array of potentially beneficial polyphenol compounds (gallotanins, gallic acid, quercitin, myrecitin, cinnamic acid) that act as antioxidants, scavenging free radicals and inhibiting lipid peroxidation in the body.
  • Weight Loss. Carob has less fat than chocolate. According to the National Nutrient Database for Standard Reference, 1 ounce of unsweetened chocolate contains 15 grams of fat, while 1 ounce of carob flour, which is about 1/4 cup, contains 0 grams of fat.
  • Cheaper Than Cacao! I might be cheating with this one. The real raw cacao powder that dark chocolate is made with costs much more than organic carob powder.

SUBSTITUTIONS - USING CAROB AS A SUBSTITUTE FOR COCOA ...
I learned that I can substitute carob powder for cocoa powder within limits. Example: If a cake recipe calls for 4 squares of chocolate and I use 1 cup of carob powder, it's too sweet even though I use 1/2 cup of Agave as a substitute for cup of sugar. I find: 1/2 cup cocoa or 2 squares of cocoa will equl 1/2 cup carob powder.
