QUICK & EASY FRIED DOUGH RECIPE - (3.9/5)

Quick & Easy Fried Dough Recipe - (3.9/5) image

Provided by Late2Serenity

Number Of Ingredients 6

2 cups King Arthur Unbleached All-Purpose Flour, 8 1/2 ounces
2 teaspoons baking powder
1 teaspoon salt
2 tablespoons cold butter
3/4 cup lukewarm water
Vegetable oil, for frying

Steps:

  • Mix the flour, baking powder, and salt. Work in the cold butter, using a pastry blender, your fingers, or a mixer. Stir in the warm water to make a soft dough. Cover and let rest for 15 minutes. Divide the dough into eight pieces. Working with one piece at a time, roll into a thin 5" round. Heat 1/4" vegetable oil to 375°F in an electric frying pan, or in a pan over a burner. If you're not using an electric frying pan, you'll have to guesstimate the temperature of the oil in your stove-top pan. Pick up one dough disk, and carefully lower it into the pan. Let it cook for 45 to 60 seconds (it'll puff up on top and become brown on the bottom), then flip it over and cook till brown on the other side, about 45 seconds. Remove from the oil and set on a paper towel-lined baking sheet. Place in a 200°F oven to keep warm while you make the remaining fried doughs. Serve warm, with maple syrup or cider syrup; confectioners' sugar, or cinnamon sugar; or the topping of your choice.

NEW HAMPSHIRE COUNTY FAIR FRIED DOUGH

New Hampshire County Fair Fried Dough image

So, you think you need a deep fryer and some kind of special county fair chef expertise to make fried dough? Think again! This easy version uses a simple baking powder dough, and fries in just 1/4" of vegetable oil - no messy deep frying necessary. TIP: Peanut oil is my favorite deep-frying oil; it has a higher smoke point,...

Time 45m

Number Of Ingredients 5

2 c king arthur unbleached all-purpose flour
2 tsp baking powder
3/4 tsp salt
2 Tbsp cold unsalted butter, in 1/2" cubes
3/4 c lukewarm water

Steps:

  • 1. Mix the flour, baking powder, and salt.
  • 2. Work in the cold butter, using a pastry blender, your fingers, or a mixer.
  • 3. Stir in the warm water to make a soft dough. Cover and let rest for 15 minutes.
  • 4. Divide the dough into eight pieces. Working with one piece at a time, roll into a thin 5" round, about 3/8" thick.
  • 5. Heat about 3/8" vegetable oil to 375°F in an electric frying pan, or in a pan over a burner. If you're using a 10" diameter pan, this is 2 cups of vegetable oil. If you're not using an electric frying pan, use a candy thermometer to take the temperature of the oil; or guesstimate it by seeing if the first piece of dough fries nicely in the time specified.
  • 6. Pick up one dough disk, and carefully lower it into the pan. Let it cook for 60 seconds (it'll puff up on top and become light brown on the bottom), then flip it over and cook until light brown on the other side, about 60 seconds. You don't want to cook these too dark; they'll become overly crisp.
  • 7. Remove from the oil and set on a paper towel-lined baking sheet. Place in a 200°F oven to keep warm while you make the remaining fried doughs.
  • 8. Serve warm, with maple syrup or cider syrup; confectioners' sugar, or cinnamon sugar; or the topping of your choice - some folks enjoy a savory version, with marinara sauce and cheese.

  • Lightly flour a work surface, and keep a little extra flour nearby. Tip the dough onto the floured surface. Sprinkle the top with flour, then roll out the dough. It doesn't have to be super thin - aim for ½-¾ inch thick.
  • When the oil is ready at 350° F, get one of your pieces of dough. If it's sticky, dust the dough and your fingers with a little flour to make it easier to handle.

  • Pour the flour onto a wooden pastry board or on a large working surface, make a well in the centre and add all the other ingredients.
  • Knead all the ingredients with your hands, as if to make homemade pasta. Knead it at least 10 minutes, until the dough becomes very elastic and smooth, and it no longer sticks to your hands. Let the dough rest for about 30 minutes, wrapped in a kitchen towel.
  • Roll out the dough with a rolling pin or with the pasta machine to make long and paper-thin sheets of pasta, about 1 or 2 mm thick, so that the cenci will be feather-light when fried. Use a tiny amount of flour to help to roll out the dough, but try to dust it off or shake it off from the cenci, because it will be the first thing to burn in the hot frying oil, giving an unpleasant burnt flour taste to our cenci.

CENCI - ITALIAN CARNIVAL FRIED DOUGH - HONEST COOKING
2014-01-03 In Tuscany during Carnival days we traditionally eat cenci (litteraly rugs, fried dough) and rice fritters, and I really wouldn’t be able to choose which one I prefer. This year, feeling brave, I sat mum and grandma at a table with two significant Tuscan cookbooks, Pellegrino Artusi and Giovanni Righi Parenti, to scribble down two valid recipes for our traditional Carnival sweet treats, in ...
