With four kids (one child whose birthday is November 1), we celebrate Halloween in style around our house. These caramel apples are a tried-and-true favorite year after year. -Gail Prather, Bethel, Minnesota

1/2 cup butter, cubed
2 cups packed brown sugar
1 cup light corn syrup
Dash salt
1 can (14 ounces) sweetened condensed milk
1 teaspoon vanilla extract
10 to 12 Popsicle sticks
10 to 12 medium tart apples, washed and dried
1 cup salted peanuts, chopped

Steps:

  • In a large heavy saucepan, melt butter; add the brown sugar, corn syrup and salt. Cook and stir over medium heat until mixture comes to a boil, about 10-12 minutes. Stir in milk. Cook and stir until a candy thermometer reads 248° (firm-ball stage). Remove from the heat; stir in vanilla. , Insert Popsicle sticks into apples. Dip each apple into hot caramel mixture; turn to coat. Dip bottom of apples into peanuts. Place on greased waxed paper until set.

2 tablespoons milk

Steps:

  • Remove the stem from each apple and press a craft stick into the top. Butter a baking sheet.
  • Place caramels and milk in a microwave safe bowl, and microwave 2 minutes, stirring once. Allow to cool briefly.
  • Roll each apple quickly in caramel sauce until well coated. Place on prepared sheet to set.

Candy apples are a classic fall dessert that family and friends are sure to love. Use your apple-picking haul to make the ultimate Halloween treat, complete with a sticky-sweet caramel coating.

Yield Makes 6 medium or 12 mini candy apples

Number Of Ingredients 6

Unsalted butter, for parchment paper
2 cups sugar
3/4 cup water
1/2 cup light corn syrup
1/2 teaspoon red food coloring, (optional)
6 medium apples, or 12 lady apples

Steps:

  • Line a baking sheet with parchment paper; butter parchment, and set aside. In a medium heavy-bottomed saucepan, combine sugar, 3/4 cup water, corn syrup, and food coloring, if using. Bring to a boil over high heat; reduce heat to medium-high. Insert candy thermometer and continue to boil until temperature reaches between 300 degrees and 310 degrees (hard crack stage), about 20 minutes.
  • Meanwhile, insert a wooden stick into the top of each apple, pushing about halfway through; set aside. When mixture reaches temperature, immediately remove from heat. Working quickly, dip apples in sugar mixture until completely coated. Transfer to prepared baking sheet; allow to cool.

OLD-FASHIONED RED CANDIED APPLES

These are the kind you found at the circus or carnival! Not the newer version covered with cramel. ;) Candy thermometer is needed for this, as well as popsicle sticks. The number of apples needed depends on the size of the apples, probably 4 medium ones. The recipe states that each batch candies approximately 1 dozen medium apples. I'm not sure I trust that. Steps:

  • Mix 1st 3 ingredients in saucepan.
  • Put on high heat with candy thermometer positioned in center of fluid level.
  • While it is boiling, thoroughly wash and dry your apples, and spear with the sticks.
  • Boil mixture until reaches hard crack (300ºF), then immediately add red food coloring and stir.
  • Quickly immediately dip the apples, twisting to cover, and set on a greased cookie sheet.

Steps:

  • Lightly grease cookie sheets. Insert craft sticks into whole, stemmed apples.
  • In a medium saucepan over medium-high heat, combine sugar, corn syrup and water. Heat to 300 to 310 degrees F (149 to 154 degrees C), or until a small amount of syrup dropped into cold water forms hard, brittle threads. Remove from heat and stir in food coloring.
  • Holding apple by its stick, dip in syrup and remove and turn to coat evenly. Place on prepared sheets to harden.

Super easy to make, these would be great to have at a kid's party or for Halloween. We loved these with a crisp red apple, but have fun experimenting with different types of apples.

1/2 tsp cinnamon oil, at most
1 tsp red food coloring
15 small apples
15 popsicle sticks

1/2 cup butter
2 cups brown sugar, firmly packed
1 cup light corn syrup
1 dash salt
14 ounces sweetened condensed milk
1 teaspoon vanilla
10 -14 tart apples, washed, dries
1 cup salted peanuts, chopped

Steps:

  • in 2 qt saucepan melt butter, add brown sugar, corn syrup and salt, cook over med heat stirring occasionally until mixture comes to a full boil 10 to 12 minutes.
  • stir in sweetened condensed milk.
  • continue cooking stirring occasionally until candy thermometer reaches 245*F or small amount of mixture forms a firm ball 20 to 25 minutes.
  • remove from heat, stir in vanilla.
  • dip apples in caramel mixture, dip end of apples in chopped peanuts.
  • place on greased waxed paper.
  • refrigerate until firm, about 10 minutes.

This receipe was given to me when I was 8 yrs old by our neighbors mom. Every year at the towns Halloween Carnival, she would make hundreds of these to sell at one of the booths. These were my favorite thing to make for my own kids while they were growing up. This receipe has always been part of my childhood!!!

12 ripe granny smith apples
2 c sugar
1 c kero (white) syrup
1/2 tsp vanilla
Dash of cream of tarter
1/4 tsp cinnamon
3 Tbsp red food coloring
12 popsickle sticks
cooking spray

Steps:

  • 1. Grease 2 cookie sheets. Wash and dry apples and put popsickle sticks in them and have them ready to be dipped into the hot candy.
  • 2. Spray a large pot with cooking spray.Put a candy thermometer on side of pot(do not let it touch bottom). On high temperature, mix all ingrediants, STIRRING CONSTANTLY(this will take awhile).Allow temperature to reach 277 degrees(or soft crack). DO NOT OVERCOOK.You know candy is ready when it forms a ball when a little dropped in a glass of cool water.
  • 3. Immediately remove from heat. And start dipping apples in the HOT candy.BE CAREFULL, THE CANDY IS EXTREMELY HOT!!!After dipping apples in candy, swirl apple around to keep candy on apple and let the apple drip for a few seconds and put them on the greased cookie sheets.WORK FAST, as the hot liquid as it cools will get hard.
  • 4. When finished dipping all the apples, make sure you put some HOT water in your pot and get the candy out as soon as possable, or you will have a big mess. Also clean all candy drippings, spoons, etc. This candy when dry, dries like glue.
  • 5. If you want to cool fast, put in refrigerator for a few minutes. But do not store in refrigerator, because the candy will slide right off the apple. Keep in airtight container when hard or wrap in wax paper.

HOMEMADE CANDY APPLES

2 cups white sugar
3/4 water
1/2 cup white corn syrup
6-8 apples
red food colouring

Steps:

  • We used small apples from an orchard that were not coated in wax. If you are using store bought apples that are coated in wax, you'll have to remove the wax to help the candy stick to the apples. For the stick for the apple, we used some sticks we cut from a tree branch. Cut them to about 6 inches. Twist off the apple stem an push the stick into the centre of the apple. Prepare a baking sheet with parchement paper that has been sprayed with non-stick cooking spray.
  • Next, to make the candy, add the sugar, water, and corn syrup to a medium saucepan and combine. Bring it to a boil over high heat. Reduce the heat to medium-high and add a candy thermomter to the mixture. Contiune to boil until the candy reaches a temparture between 300-310 degrees. Occassionaly brush down the sides of the pan with cold water and a pastry brush to help prevent re-crystalization.
  • When the candy reaches 300-310 degrees remove from the heat, and add the food colouring. We added around a 1/2 teaspoon of red colouring to acheive the bright red colour.
  • Finally, working carefully and quickly because the candy starts to cool and set, tilt the pan and dip each apple individually. Coat the apple completely, and then let it drip off slightly to avoid a large pudddle of candy at the base of the apple. Place the dipped apples on the parchement lined baking sheet to set. Take care working with the candy as it's very hot. Have a bowl of ice water standing by incase of any burns.

1 (14-ounce) package strawberry glaze
1 1/2 cups corn syrup
1 (3-ounce) box cherry gelatin dessert mix
1/2 cup hot water
6 Granny Smith apples, washed and dried
6 wooden candy apple sticks
1 cup chopped nuts

Steps:

  • In a saucepan over medium-low heat, combine glaze and corn syrup. Simmer for 20 minutes.
  • Dilute gelatin mix in hot water and pour in saucepan with glaze. Stir and continue to cook until temperature on a candy thermometer is between 180 and 200 degrees F.
  • Shove wooden candy sticks into bottom of apples, far enough to secure inside. Dip each apple in syrup and turn until completely coated. Immediately roll bottom half of apples in nuts. When cool arrange on parchment-lined tray.

8 apples (preferably tart, like Granny Smith)
8 wooden skewers
2 cups granulated sugar
1 cup light corn syrup
1/2 cup hot water
1/2 cup red cinnamon candies (like Red Hots)

Steps:

  • Gather the ingredients.
  • Prepare a baking sheet by lining it with aluminum foil or parchment paper and lightly spraying with nonstick cooking spray.
  • Wash and dry apples carefully. Make sure that no water remains on the apples.
  • Remove stems and firmly stick skewers in stem ends.
  • Combine sugar, corn syrup, and hot water in a medium saucepan over medium-high heat.
  • Stir until sugar dissolves, then continue to cook, without stirring, until mixture reaches 250 F on a candy thermometer .
  • Wipe down the sides of the pan with a wet pastry brush occasionally to prevent crystallization.
  • Once candy reaches 250 F, add cinnamon candies and stir briefly until candies melt and incorporate into sugar syrup.
  • Continue to cook candy coating, occasionally washing down sides with wet pastry brush, until mixture reaches 285 F.
  • Remove pan from heat and stir mixture so that it is smooth and even.
  • Immediately start to dip apples. Hold an apple by skewer and dip in candy coating, tilting pan at an angle and rotating apple to cover it completely with a smooth, even layer of red candy.
  • Pull apple out of pan and twirl it to remove any excess. Set it stick-side up on prepared baking sheet.
  • Repeat with remaining apples.
  • Allow apples to cool at room temperature before serving. Candy apples are best enjoyed within 24 hours.

  • In a heavy-bottomed saucepan mix together sugar, water, corn syrup, food coloring and extract (if using). The mixture will be bright red.
  • Set up your candy thermometer so that the tip is in the mixture and is not touching the bottom of the pot. Put it over high heat and bring it to a boil. Leave it bubbling on high until it gets to be between 300ºF and 310ºF. It will take around 20 minutes but keep your eye on it. It gets really fast at the end.
  • While the sugar mixture is coming to temperature, line a baking sheet with parchment paper and spray it with baking spray. Wash and dry your apples. Stick the sticks down into the tops of the apples. You want to get a good ways in. If your sticks are long, go all the way but not through the other end. If they’re shorter, getting halfway into the apple is good enough.
