2 poblano peppers, seeded and sliced
1 medium onion, sliced
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cumin
Kosher salt and freshly ground black pepper
One 4 1/2-pound bone-in pork shoulder
1 1/2 cups chicken broth
4 jalapeno peppers, sliced
2 limes, zested and juiced
1 orange, zested and juiced
For serving: corn tortillas, sliced radishes, pickled jalapeno slices, pico de gallo, hot sauce, lime wedges and fresh cilantro leaves

Steps:

  • Preheat the oven to 275 degrees F.
  • Put the poblano and onion slices in the bottom of a heavy pot. Mix the cayenne, cumin and a pinch of salt and pepper together in a bowl, then use the mixture to season the pork shoulder. Put the pork on top of the vegetables. Add the chicken broth, jalapeno slices, lime zest and juice and orange zest and juice. Cover and cook until tender, 4 to 5 hours.
  • Turn the heat up to 450 degrees F, remove the lid and cook until the surface crisps slightly, 15 to 20 minutes. Remove the pork to a board and let it rest until cool enough to handle, then remove the fat and shred the meat with 2 forks.
  • Strain the vegetables from the sauce and set aside. Put the meat in serving dish, add the vegetables and pour over some of the sauce.
  • Serve the shredded pork with warm corn tortillas, radishes, pickled jalapenos, pico de gallo, hot sauce, lime wedges and cilantro leaves.

1 boneless pork shoulder butt roast (3 to 4 pounds), cut into 1-inch cubes
6 large garlic cloves, minced
1/2 cup fresh cilantro leaves, chopped
1 teaspoon salt
Pepper to taste
3 large oranges, divided
1 large lemon
Oil for frying
12 flour tortillas (8 inches), warmed
Optional toppings: Chopped tomatoes, shredded cheddar cheese, sliced green onions, sour cream and avocado slices

Steps:

  • Place meat in a medium-size roasting pan. Sprinkle with garlic and cilantro. Season with salt and pepper. Squeeze the juice from one orange and the lemon over the meat. Slice the remaining oranges and place over the meat. , Cover and bake at 350° for about 2 hours or until meat is tender. With a slotted spoon, remove meat and drain well on paper towels. Heat a small amount of oil in a skillet and fry meat in batches until browned and crispy. , Serve warm in tortillas with toppings of your choice. Freeze option: Freeze cooled pork mixture in freezer containers. To use, partially thaw in refrigerator overnight. Fry meat in batches as directed until crispy and brown. Serve as directed.

¼ cup vegetable oil
4 pounds pork shoulder, cut into several large pieces
3 tablespoons kosher salt
1 onion, chopped
1 clove garlic, crushed
3 tablespoons lime juice
1 tablespoon chili powder
½ teaspoon dried oregano
½ teaspoon ground cumin
4 (14.5 ounce) cans chicken broth

Steps:

  • Heat the vegetable oil in a large Dutch oven over high heat. Season the pork shoulder with salt, then arrange the pork in the Dutch oven. Cook until browned on all sides, about 10 minutes. Add the onion, garlic, lime juice, chili powder, oregano, and cumin. Pour in the chicken broth, and bring to a boil. Reduce heat to medium-low, cover, and continue to simmer until pork is very tender, about 2 1/2 hours.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Transfer the pork shoulder to a large baking sheet, reserving the cooking liquid. Drizzle with a small amount of the reserved cooking liquid and lightly season with salt.
  • Bake the pork in the preheated oven until browned, about 30 minutes. Drizzle more of the cooking liquid on the meat every 10 minutes, and use two forks to shred the meat as it browns.

This is my hubby's favorite dish from his homeland (Michoacan). I found that the original recipe is too fattening. This is my revised version. You make great tacos with these carnitas. Serve them up with your favorite Mexican salsa such as pico de gallo or homemade guacamole.

2 lbs boneless pork shoulder, cut in 4 inch pieces
1 orange, zest of, cute into wide strips
3/4 cup orange juice
1 teaspoon ground cumin
2 bay leaves
1 medium Spanish onion, chopped
1 head garlic, chopped
2 tablespoons beef bouillon (I recommend Knorr)
2 tablespoons lard (such as Morrell)
1 cup water, as needed
12 corn tortillas
salt and pepper

Steps:

  • Start with removing any excess pieces of fat from the pork.
  • In a large,heavy saucepan, place the pork along with the orange zest, orange juice, cumin, bay leaves, onion, garlic and bouillon.
  • Fill with water just so it barely covers the pork.
  • Cover and bring to a boil over medium heat.
  • Reduce heat to medium low and simmer for about 2 hours.
  • Turn off the heat and allow the meat to cool and any excess fat to raise to the top.
  • Remove the excess fat, and place the cooled pork in a large bowl.
  • Add salt and pepper to taste.
  • In a separate fry pan, heat the lard and fry the pork pieces for about 6 minutes, just so they turn golden; allow them to cool.
  • Using your hands, pull the meat apart.
  • In a comal over medium heat, heat the tortillas.
  • Once you heated all of the tortillas, make tacos with the shredded meat and add your own favorite Mexican salsa.

CARNITAS MICHOACAN

There are many variations on this classic Mexican pork dish. This is the way my ex, who is from Michoacan, prepares it. We served this in our Mexican restaurant and it was a BIG hit! The nice thing about making it daily for the restaurant was that we could reuse both the cooking water and the lard multiple times, which multiplied the flavor! It's very simple to make. The short list of ingredients doesn't make for bland eating here! Substitutions can be made for the lard, but the result won't be quite the same. I think it has to do with the sensitivity of the various fats to heat, but frankly I'm not sure. This is NOT a low fat food! In fact, we refer to it as a "cholesterol nightmare," so we eat it seldom, but we REALLY enjoy it when we do!

4 lbs pork roast (butt or shoulder)
1 medium white onion
1 tablespoon salt
1/2 lb bacon (or roughly 1/4 cup bacon fat)
2 lbs lard

Steps:

  • If the roast has skin or bone, leave them on. Rinse the roast and place in a large pot. Add enough water to barely cover.
  • Chop the onion into large pieces (about 8) and add to the pot. Add the salt.
  • Bring the water to a boil, then cover and simmer until the roast is tender, but not quite falling apart, about 2 hours.
  • Remove the roast and drain, discarding the onion. Remove any skin or bones. Cut or separate into large cubes of about 4 inches.
  • Put the lard in a heavy pot, melt and raise to a medium-high temperature. Test the temperature by dropping in a slice of bacon. It should boil immediately and take about 2 minutes to cook.
  • Cook all of the bacon in the lard, remove it and set it aside for another use. (This step is to flavor the lard). If using bacon fat, add it at this time and skip cooking any bacon.
  • Add the pork cubes a few at a time to the lard. Cook until they are starting to get crispy on the outside. I prefer to remove them when they are roughly halfway between totally crispy and not crispy at all, but that's a matter of personal preference.
  • Drain the pork, and salt if desired.
  • Use the carnitas for tacos, burritos or by itself with sides of rice and beans.
  • The lard can be cooled and reused. Store it in the refrigerator and smell before reusing. If stored too long, even in the refrigerator, it will go rancid.

3 tbsp. lard or canola oil
3 lb. skinless, bone-in pork shoulder, cut into 3" pieces (have your butcher do this)
Kosher salt, to taste
3 ⁄4 cup whole milk
8 cloves garlic, peeled and smashed
6 canned or jarred whole pickled jalapeños
1 ⁄3 cup jalapeño pickling liquid, from above
1 large white onion, roughly chopped
2 limes, juiced
2 oranges, juiced
For the Salsa and Serving
6 tomatillos, husked and cored
3 cloves garlic
2 plum tomatoes, cored
1 canned or jarred whole pickled jalapeño, stemmed
3 tbsp. jalapeño pickling liquid, from above, plus more for serving

Corn tortillas, warmed, for serving
Roughly chopped cilantro and thinly sliced radishes, for garnish
Orange wedges, for serving

Steps:

  • Make the carnitas: Melt lard in an 8-qt. saucepan over medium-high. Season pork with salt; cook, turning as needed, until browned, 10-12 minutes. Add milk, garlic, jalapeños and pickling liquid, onion, and lime and orange juices; boil. Reduce heat to medium-low; cook, covered, until pork is tender, about 2 hours. Let pork cool and transfer to a cutting board; chop into bite-size pieces. Strain cooking liquid and return to pan; stir in pork and keep warm. Make the salsa and serve: Heat a 12" cast-iron skillet over medium-high; cook tomatillos, garlic, and tomatoes, turning as needed, until blackened all over, 12-15 minutes, and transfer to blender. Add jalapeño and pickling liquid, and salt; purée until smooth. Serve carnitas on tortillas with salsa; garnish with cilantro and radishes. Serve with more pickled jalapeños and the orange wedges.

  • To a large pot, add the cubed pork shoulder, onions, avocado leaves, pepper, salt, garlic, and bay leaves. Add enough cold water to cover all the meat. Bring to a boil over high heat, then continue to boil for 20 minutes.
  • Add the orange juice, milk, and cola, return to a boil, and simmer until the liquid has reduced by half, about 1 hour.
  • Add the lard, let it melt, then boil off the rest of the liquid until the meat begins to fry, 1 hour more.
  • Once the meat turns dark golden brown and is crispy, scoop it out of the pot and onto a paper bag or paper towel-lined baking sheet to drain.
  • Serve with corn tortillas, guacamole, pickled vegetables, cilantro, lime wedges, cilantro rice, and pinto beans.

  • Add 2 quarts cold water to a mixing bowl along with 1/2 cup kosher or sea salt. Stir to dissolve. Cut the pork shoulder into 2" chunks. Add the pork chunks to the brine, cover, and store in the fridge for an hour. If the pork isn't completely submerged just add a bit more water.
  • Once brined, remove the pork chunks and pat them dry. Add them to a clean mixing bowl along with: 2 teaspoons Mexican oregano, 1 teaspoon cumin, 1/2 teaspoon chipotle powder (optional), 1 teaspoon salt, freshly cracked black pepper, and 2-3 tablespoons oil. Combine well.
  • Add pork pieces to a casserole dish along with the juice of 1 orange, the juice of 1 lime, 1/2 onion cut into chunks, 1 jalapeno sliced in half, and 4 peeled garlic cloves. I usually put the leftover orange pieces in the pan as well. Cover tightly with foil and bake at 300F for three hours.
  • After three hours give it the fork tender test. If you can insert a fork into the pork with no resistance then it's done. If the chunks are still firm give it another half hour.

  • Cut the meat into large chunks, or leave it on the bone if the hunks will fit in the pot you are using. Salt them well.
  • Fill your pot with the lard and heat it to about 200°F or thereabouts. You might need more than 3 quarts. Remember, you will be able to reuse this lard later, and almost all of it will stay in the pot, so fear not.
  • When the lard hits temperature, add the pork. Now, there is an order to things. Different pieces cook at different rates. Longest cooking bits, in order, are: hocks, feet, tongue, heart, jowls, shoulder, ribs, hind leg, skin, belly, loins. Depending on what you are using, add the longest cooking bits in first. In general, wait 30 minutes before you put in the next item. Even loin will ultimately need 1 hour, though, so keep this in mind. Carnitas is a process.
  • Once you put in the first pork item, add all the remaining ingredients and let things cook at about 195°F, more or less, until all the various piggy bits are soft and tender. Normally this takes about 4 hours, but could be more with wild hogs.
