2 russet potatoes
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon salt
½ teaspoon pepper
1 teaspoon chili powder
½ teaspoon dried oregano
2 cloves garlic, minced
2 tablespoons fresh cilantro, minced
½ cup fresh orange juice
¼ cup fresh lime juice
½ lb flank steak
1 tablespoon canola oil
½ cup shredded Pepper Jack cheese
sour cream
guacamole
1 tomato, diced
fresh cilantro leaf
cotija cheese, grated

Steps:

  • Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper.
  • Cut the potatoes into wedges. In a large bowl, combine the potatoes, olive oil, salt, garlic powder, and paprika until each fry is fully coated.
  • Place the fries on the baking sheet and bake for 30-35 minutes, or until the fries are crispy and golden brown.
  • In a medium bowl, combine the salt, pepper, chili powder, oregano, garlic, cilantro, orange juice, and lime juice. Add the flank steak and marinate for 20 minutes.
  • Heat a cast-iron skillet with the canola oil over medium heat. Cook the steak for 3 minutes on both sides for medium-cooked steak. Remove the steak and let it rest for 10 minutes.
  • After 10 minutes dice the steak.
  • In an ovenproof skillet, place the baked french fries, Pepper Jack cheese, and diced carne asada, then broil until the cheese is melted.
  • Before serving, top with sour cream, guacamole, diced tomatoes, cilantro, and grated cotija cheese.

4 ounces flank steak
¼ tsp salt
⅛ tsp black pepper
⅛ tsp garlic powder
1 tsp vegetable oil
1 Roma tomato ((chopped))
2 tbsp red onion ((diced))
1 tbsp cilantro ((chopped))
1 clove garlic ((minced))
1 Serrano pepper ((sliced))
pinch salt
½ small lime
½ avocado
1 tbsp sour cream
½ small lime
pinch salt
1 clove garlic ((minced))
non-stick cooking spray
8 ounces frozen French fries
pinch Tajin seasoning
½ cup shredded cheddar cheese
2 tbsp cotija cheese ((crumbled))
2 tbsp sour cream
¼ cup sliced pickled jalapenos

Steps:

  • Dice the meat and season with salt, black pepper, and garlic powder. Set aside to allow the flavors to develop while you work on the pico de gallo and creamy guacamole.
  • Chop tomato, onion, garlic, and cilantro and add to a small bowl. Add sliced serrano pepper. Season with salt and a squeeze of lime juice. Set aside until needed.
  • Mash avocado in a bowl. Add lime juice, sour cream, salt, and garlic. Mix until creamy, then set aside.
  • Preheat oven to the temperature specified on the fries bag. If you plan on frying the frozen fries or using fresh potatoes, you can skip this step.
  • Line a cookie sheet with foil and lightly spray with non-stick cooking spray. Add frozen fries and sprinkle with Tajin seasoning. Bake according to instructions on the bag.
  • Meanwhile, heat one teaspoon of oil in a cast-iron skillet. When the pan is very hot, add the seasoned meat and cook until charred. Set aside.
  • When the fries are ready, add to an oven-safe serving dish. Top with shredded cheese and pop back into the oven for a few minutes until the cheese melts.
  • (If the meat has cooled off add it on top of the cheese before popping the fries back into the oven).
  • Top the hot fries with Pico de Gallo, cotija cheese, sour cream, guacamole, and jalapeno slices.
  • Drizzle with your favorite hot sauce and serve while sizzling hot!

1 ½ lbs flat iron steak
1 tablespoon olive oil
1 teaspoon cumin
1 teaspoon oregano
1 1/2 teaspoons chili powder
1 teaspoon paprika
½ teaspoon cayenne pepper
¾ teaspoon salt
1/4 cup cubed processed cheese
2-3 tablespoons milk
1 large package frozen french fries
1/2 cup corn
2 Roma tomatoes, diced
2 tablespoons chopped red onions
2 tablespoons crumbled queso fresco

Steps:

  • Prepare french fries according to package directions.
  • Preheat an outdoor grill to medium heat.
  • Rub steak with olive oil. Combine spices in a small bowl and rub over the beef.
  • Grill beef for 5-7 minutes per side or until desired degree of doneness. 135 degrees for medium rare and 145 for medium.
  • Remove steak and allow it to rest for 5 minutes before cutting steak into bite sized pieces.
  • While steak cooks, prepare cheese sauce.
  • Combine the cheese and the milk in a small saucepan over medium low heat. Whisk until melted and smooth. Keep warm.
  • Arrange cooked fries on a platter. Drizzle fries with cheese sauce. Top the fries with the steak, corn, tomatoes, onions and guacamole. Sprinkle with Queso fresco.
  • Serve immediately.

1/4 cup lime juice
1/4 cup orange juice
1/4 cup olive oil
4 teaspoons minced garlic
1 teaspoon kosher salt
1 teaspoon ground black pepper
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1 1/2 pounds skirt steak
1 (16 - 20- ounce) bag frozen seasoned fries, baked according to package directions
3 tablespoons butter
3 tablespoons all purpose flour
1 1/4 cup milk
1/2 teaspoon garlic salt
8 ounces sharp cheddar cheese, grated (not pre-grated)
Avocado
Pico de Gallo
Sour Cream
Cilantro
Sliced Jalapeno

Steps:

  • Combine the lime juice, orange juice, olive oil, garlic, salt, black pepper, cumin, and oregano in a small mixing bowl. Place the steak in a zip-top bag or a shallow container and pour the marinade over top. Allow the steak to marinate 6 hours or overnight.
  • When you're ready to cook the meat, preheat your grill to medium-hight heat and grill the steak for 3-4 minutes on each side or until the steak reaches 125°F - 130°F for medium rare. Cook longer if you prefer it more well done. Alternately you can cook the steak in a cast iron skillet. Preheat skillet to medium-high. Add the steak to the skillet and cook for 4 minutes on each side, or until desired doneness.
  • Transfer the meat to a plate, cover with foil, and set aside.
  • Cook the fries in the oven according the directions on the package.
  • While the fries are cooking, melt the butter into a medium saucepan over medium heat. When the butter is melted, add in the flour and whisk constantly for 2 minutes, cooking the flour. Slowly add in the milk and garlic salt, whisking constantly for 3-4 minutes, until the sauce is thickened.
  • Add in the cheese in two portions, whisking constantly until melted and smooth. Remove the sauce from the heat, and cover until you're ready to assemble the fries. If the cheese sauce gets too thick as it cools, simply place it back on medium-low heat, and stir until warm and smooth.
  • Slice the steak into bite size pieces, making sure to slice against the grain. When the fries are done remove them from the oven. You can make individual servings or serve on the sheet pan.
  • Drizzle the some of the cheese sauce on top of the fries, top with steak, and more cheese sauce.
  • Add avocado, pico de gallo, sour cream, cilantro, and jalapeño as desired.

1 pound beef skirt steak, thinly sliced
1 (12 fluid ounce) can or bottle lager beer (such as Corona®)
½ (1.41 ounce) package sazon seasoning with coriander and annatto (such as Goya®)
1 (26 ounce) package frozen French fries
1 cup queso blanco sauce
¼ cup diced onion
¼ cup chopped cilantro

Steps:

  • Place steak, beer, and sazon seasoning in a gallon-sized resealable bag. Refrigerate for 8 hours, or overnight.
  • Preheat the oven to 450 degrees F (230 degrees C). Spread French fries evenly on a baking sheet.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Cook steak for 5 minutes, flipping halfway through. Transfer to a plate and let rest for 10 minutes.
  • Bake fries in the preheated oven until light golden in color, 11 to 15 minutes. Divide among 4 serving plates and drizzle queso over the top.
  • Slice steak across the grain into bite-sized pieces and scatter over the fries. Garnish with onion and cilantro.
