BEST EVER CARNE ASADA MARINADE
This traditional Mexican carne asada marinade recipe will marinade 5 or 6 pounds of meat and can be easily halved or doubled. I've tried many carne asada recipes through the years, and this one outshines them all. The flavors are the most flavorful and authentic and the meat is pull-apart tender. I suggest marinating overnight for the best results. Muy delicioso!

CARNE ADOVADA
This classic New Mexican dish consists of chunks of pork braised in a thick chile sauce flavored with garlic, Mexican oregano, cumin, and honey. Serve over rice or in tortillas.

- Toss pork and 1 ½ teaspoons salt together in a bowl; refrigerate for 1 hour.
- Combine New Mexican chiles and 4 cups boiling water in medium bowl. Cover and let sit until chiles are softened, about 30 minutes. Adjust oven rack to lower-middle position and heat oven to 325ºF (162ºC) degrees.
- Drain chiles, reserving 2 cups soaking liquid. Process chiles, honey, vinegar, garlic, oregano, cumin, cayenne, cloves, and ½ teaspoon salt in a blender to a thick paste, about 30 seconds.
- With blender running, slowly add reserved soaking liquid and blend until smooth, about 3 minutes.
- Combine pork and chile sauce in Dutch oven, stirring to coat, then bring to a boil over high heat. Cover pot, transfer to oven, and cook until pork is tender and fork inserted into pork meets little resistance, 2 to 2½ hours.
- Using wooden spoon or rubber spatula, scrape any browned bits from sides of pot and stir into pork until sauce is smooth and homogenous. Let stand, uncovered, for 10 minutes. Season with salt to taste. Serve with lime wedges.

- In a large bowl, combine the meat, olive oil, spices and a large pinch of salt and pepper. Toss with your hands until evenly combined. Place on a baking sheet and broil on high until browned on both sides, about 5 minutes per side. You can also grill the steak on a stovetop grill pan or outdoor grill if you prefer. Transfer to a cutting board and allow to rest before dicing.
- Place a large wok or large nonstick skillet over medium-high heat. Once hot, drizzle in 1 tablespoon of sesame oil and add the onion and garlic. Cook, stirring often, until the onions are translucent, about 3 to 4 minutes. Add the diced steak and give it a stir. Push everything to one side of the wok or skillet. Drizzle in the remaining tablespoon of sesame oil and add the eggs. Cook, stirring often, until the eggs have just cooked through and have set. Add the rice, soy sauce and sriracha, stirring until evenly combined. Stir in the peas, scallions and cilantro. Give it a taste and adjust seasoning if necessary, adding more soy sauce, sriracha or sesame oil if needed. Cook for about a minute or two longer to warm up the peas. Remove from the heat and garnish with radish, more cilantro and cotija cheese. Serve with lime wedges and enjoy!
