CALIFORNIA CAESAR SALAD

*1 egg yolk
1/2 lemon, juiced
1 tin anchovies
1 tablespoon chopped garlic
1/2 cup olive oil
1/2 cup canola oil
1 tablespoon Dijon mustard
1 teaspoon sea salt
1 teaspoon cracked black pepper
1 bag romaine hearts, rinsed, patted dry and chopped (3 heads of hearts)
2 avocados, pitted, peeled and sliced
5 slices bacon, cooked crisp and crumbled
1/2 pound jumbo lump crabmeat
1 loaf focaccia bread, cubed
2 tablespoons olive oil
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 425 degrees F.
  • For the dressing:
  • In a food processor, add egg yolk, lemon juice, anchovies, and garlic. Pulse until there is an even consistency. With the machine running, slowly add olive and canola oil until emulsified. Add the mustard, salt and pepper and pulse to combine.
  • For the salad:
  • Combine all the salad ingredients and toss with dressing until evenly coated.
  • For the croutons:
  • Place cubed bread into a large bowl. Drizzle with olive oil, sprinkle with salt and pepper and toss together. Place on a baking sheet and bake for 5 to 10 minutes or until brown and crispy.
  • Serve salad with croutons on top.

This is the only dressing I will ever use for Caesar Salad. It is from the creator of the Caesar Salad, Cesar Cardini. You can make it, like I do, or you can buy it in the store. It's a large bottle for 6.99 but this dressing goes a long way. NOTE that the original salad did not have bacon, croûtons or anchovy in it, but you can add them.

2 garlic cloves, crushed
1/2 teaspoon salt
3/4 teaspoon pepper
4 1/2 tablespoons parmesan cheese, shredded not grated
3 tablespoons olive oil
1 1/2 tablespoons red wine vinegar
1/8 teaspoon Worcestershire sauce
1 egg yolk
4 1/2 tablespoons bacon bits
1 head romaine lettuce leaf, chopped

Steps:

  • Rub crushed garlic around salad bowl. (A wooden bowl is great for this.).
  • Add salt, pepper, parmesan cheese, oil, vinegar, worcestershire, egg yolk, bacon bits to bowl and mix together.
  • Toss with lettuce right before serving.
  • Garnish with shaved parmesan.
  • NOTES: If you prefer a more evolved dressing, add 2 tablespoons of lemon juice and 3-4 anchovies minced finely and then mashed into a paste and mixed well into the dressing. You can also add in croûtons.

I used to work at a very fancy restaurant while I was in college. The best part of the job was making table side salads, entrees, and dessert. This was the best Caesar salad I have ever had! If having trouble getting the anchovy to mash, add a couple of croutons. They provide sort of an anti-skid surface, and the hard edges of the croutons cut into the anchovy.

½ lemon, juiced

Steps:

  • Mash garlic with anchovies in a large salad bowl. Gradually whisk olive oil into the dressing, pouring the oil into the dressing in a thin stream while stirring constantly. Season with salt and black pepper.
  • Gently mix romaine lettuce and Parmesan cheese into the dressing until thoroughly coated; serve salad topped with croutons.

1/2 medium sized head iceberg lettuce, I use a whole head
1 medium sized radicchio
2 bunches watercress, or 2 to 3 bunches arugula, I use arugula
1/2 cup coarsely chopped genoa salami, I do more
1/2 cup diced provolone, I do more to taste
1/2 medium sized red onion thinly sliced
1/2 small cucumber peeled and cut into small chunks, I use more to taste
5 pepperoncini peppers
5 large green olives, pitted
5 black olives, pitted
3 radishes, trimmed and thinly sliced
1 large ripe tomato, cored and cut into 8 wedges
1/4 to 1/2 cup Carmine's vinaigrette
Pinch of dried oregano
Salt and pepper to taste

Steps:

  • Cut the iceberg letuce into 3 equal pieces and cut each piece into quarters. Place the lettuce in a large bowl filled with ice-cold water. Core and halve the radicchio and then cut each half into 3 pieces. Add it to the bowl. Remove the stems from the watercress or arugula and add it to the bowl. Using your hands, swish the greens around, breaking up the iceberg lettuce and radicchio leaves. Spin the greens dry or dry them with paper towels. Transfer them to a plastic bag or similar container and refrigerate them until they are cold and crispy. In a large bowl, mix together the salami, provolone, onions, cucumbers, pepperoncini, olives, radishes and tomatoes. Add the lettuce, radicchio, and watercress(arugula) and gently toss the salad to combine the ingredients. Spoon about 1/4 cup of the vinaigrette over the salad and toss it again. Add the oregano and season the salad to taste with salt and pepper. Add more dressing, if desired. Transfer the salad to a serving bowl or platter.

1 cup cubed French bread pieces
Olive oil
2 ounces anchovy fillets
1 egg yolk (see note)
1 teaspoon finely chopped parsley
1 tablespoon finely chopped garlic (or less to taste)
1 cup extra-virgin olive oil
1/4 cup grated Parmesan cheese
1/4 cup red-wine vinegar
1 head romaine lettuce, cut, washed and drained

Steps:

  • Preheat the oven to 300 degrees. Spread the bread on a baking sheet, drizzle with olive oil and bake 4 to 5 minutes, stirring once or twice, until golden. Set aside.
  • In a stainless-steel bowl, crush the anchovy fillets with a fork until they are well mashed. Add the egg yolk and stir with a wire whisk for 2 to 3 minutes. Stir in the parsley and garlic. Slowly add the olive oil in a steady stream while whisking to incorporate. Add the vinegar and 2 tablespoons of the Parmesan and stir briskly with the whisk.
  • In a large bowl, toss the lettuce with the dressing and the croutons. Sprinkle remaining cheese on top.

6 oil-packed anchovy fillets, drained and roughly chopped
¼ teaspoon kosher salt, plus more to taste
2 large pastured egg yollks
2 teaspoons dijon mustard
6 tablespoons vegetable oil
¼ cup extra virgin olive oil
2 tablespoons lemon juice
¼ cup freshly grated parmigiano-reggiano cheese
½ teaspoon freshly ground black pepper
2 cups bread, torn into 1 in (2.54 cm) pieces
2 tablespoons olive oil
½ teaspoon kosher salt
freshly ground black pepper, to taste
10 oz little gem lettuce, leaves separated or torn
kosher salt, to taste
½ cup Parmigiano-Reggiano cheese, plus more for topping

Steps:

  • Make the classic caesar dressing: On a cutting board, chop the garlic and anchovies together to combine. Sprinkle with the salt. Use the side of a knife to chop and mash the mixture into a smooth, homogeneous paste. Transfer the paste to a medium bowl.
  • Add the egg yolks and mustard to the bowl with the garlic anchovy paste. Whisk until the egg yolks lighten in color and become airy, about 2 minutes. While whisking continuously, drizzle in the vegetable and olive oils until the dressing is thick and emulsified. Whisk in the lemon juice; the dressing should loosen a bit but will still be thick enough to liberally coat the back of a spoon and should fall in ribbons when drizzled. Stir in the Parmigiano-Reggiano cheese, black pepper, and salt to taste. The dressing will keep in an airtight container in the refrigerator for up to 3 days.
  • Make the croutons: Preheat the oven to 400°F (200°C).
  • In a medium bowl, toss the torn bread with the olive oil, salt, and pepper. Scatter across a baking sheet and bake for 8-10 minutes, turning the pan halfway through, until the croutons are golden brown and crispy on the outside but still tender on the inside.
  • Assemble the salad: On a serving platter or in a large bowl, arrange half of the little gem leaves and season with a pinch of salt. Drizzle with ⅓ cup of the dressing and top with half of the Parmesan the croutons. Repeat with the remaining ingredients to make another layer, adding more dressing to taste. Season with pepper. If desired, top with the protein of your choice, such as chicken, salmon, or shrimp. Serve immediately.

1 garlic clove, minced

1/4 teaspoon ground mustard

1 large bunch romaine, torn

  • Place the first 10 ingredients in a blender or food processor; process until egg is chopped. Add oil and blend until smooth. , In a large bowl, toss romaine, croutons and Parmesan cheese. Add dressing; toss to coat. Top with anchovies if desired.

Particular care was taken to lay the tender, elongated cos leaves all in the one direction." Times are estimated.

1 cos lettuce
1 small baguette (to make croutons)
2 anchovy fillets
1 garlic clove (minced or put through a garlic press to crush)
15 g butter
1 lemon (juice of)
1/3 cup olive oil
1 teaspoon Worcestershire sauce (Lea & Perrins recommonded)
salt (to taste)
pepper (freshly ground to taste)
1/4 cup parmesan cheese (grated or shaved)
1 coddled egg (see below)

Steps:

  • Remove tough outer leaves of the lettuce.
  • Wash the tender leaves, sprin dry (or dry in a large clean tea towel) and place in a plastic bag and put in the refrigerator to crisp.
  • To make croutons -.
  • Preheat oven to 180°C.
  • Cut baguette into thick slices.
  • Mash the anchovy fillets and garlic with the butter and spread over the bread slices.
  • Place on a baking tray and bake until pale and gold and crisp.
  • For the Dressing -.
  • With the exception of the egg mix/whisk or put in a jar, seal and shake, all the ingredients together to make the dressing.
  • Coddled egg -.
  • Lower the egg into a small saucepan of simmering water and simmer for 1 minute, lift out with a slotted spoon.
  • Arrange the crisp lettuce leaves in a bowl.
  • Add the croutons and break in the coddled egg and add the dressing and turn the salad gently, until the dressing coats the lettuce leaves evenly.
  • Serve as soon as possible after dressing (better immediately) - keeps o'kay but not the best. (haven't done myself but from family members that have).

Steps:

  • Using back of spoon, mash anchovy to puree in small bowl. Whisk in grated Parmesan cheese, mayonnaise, fresh lemon juice, Dijon mustard, minced garlic, and Worcestershire sauce. Gradually whisk in 1/4 cup olive oil. (Dressing can be made 1 day ahead. Cover and refrigerate. Bring to room temperature and rewhisk before using.)
  • Heat 3 tablespoons oil in medium nonstick skillet over medium-low heat. Add flattened garlic and sauté until golden, about 4 minutes; discard garlic. Add sourdough bread cubes and sauté until golden brown and crisp, about 9 minutes. Transfer bread cubes to paper towels and drain. (Can be made 1 day ahead. Cool completely, then store airtight at room temperature.)
  • Arrange 4 large romaine lettuce leaves on each of 2 plates. Top each with 4 smaller leaves. Top lettuce with tomatoes. (Can be made 3 hours ahead. Cover with plastic wrap and refrigerate.) Drizzle salads with dressing. Top with croutons and Parmesan shavings. Season generously with pepper and serve.

Making the dressing for Caesar salad is an exercise in the art of layering salty ingredients to build flavor; there are anchovies, Parmesan and Worcestershire sauce, in addition to the salt itself. (There is also garlic, which is pounded with a pinch of salt using a mortar and pestle to make a smooth paste.) Since a delicious balanced dressing depends on working in the right amounts of each of those ingredients - and the other, unsalted elements - refrain from adding the salt crystals until you've added the right amount of everything else. This recipe is adapted from "Salt, Fat, Acid, Heat" by Samin Nosrat, and it's absolutely worth making the torn croutons - store-bought croutons can't compete, and you'll have leftovers for another salad.

1-pound loaf day-old country or sourdough bread
1/3 cup extra-virgin olive oil

1 egg yolk at room temperature
3/4 cup neutral oil, such as grapeseed
3 to 4 tablespoons lemon juice, more if needed for mayonnaise
8 anchovy fillets
1 garlic clove, finely grated or pounded with a pinch of salt
1 teaspoon white wine vinegar
1 3-ounce chunk of Parmesan, finely grated (about 1 cup), plus more for serving
3/4 teaspoon Worcestershire sauce
Salt and ground black pepper
Romaine lettuce, Little Gem lettuce, chicories, raw or blanched kale, shaved brussels sprouts or Belgian endive

Steps:

  • Make the torn croutons: Heat oven to 400 degrees. Remove the crusts from the bread, then cut into inch-thick slices. Cut each slice into inch-wide strips, and tear each strip into inch-size pieces. Toss with olive oil to coat them evenly, then spread pieces out in a single layer on a baking sheet. (Use a second sheet if needed to prevent crowding.) Toast for 18 to 22 minutes, checking them after 8 minutes. Rotate pans, switch their oven positions and use a metal spatula to turn the croutons so they brown evenly. Bake until they're golden brown and crunchy on the outside, with just a tiny bit of chew on the inside. Season with a light sprinkling of salt if needed. Use immediately; store leftovers in an airtight container for up to 2 days.
  • Meanwhile, make mayonnaise: Place the egg yolk in a deep, medium metal or ceramic bowl. Dampen a tea towel and roll it up into a long log, then form it into a ring on the counter. Place the bowl inside the ring; this will hold the bowl in place while you whisk. (And if whisking by hand is simply out of the question, use a blender, stand mixer or food processor.)
  • Use a ladle or bottle with a nozzle to drip in the neutral oil a drop at a time, while whisking the oil into the yolk. Go. Really. Slowly. And don't stop whisking. Once you've added about half the oil, you can start adding a little more oil at once. You want the mayonnaise to be stiff, but if it thickens so much that it's impossible to whisk, add a teaspoon or so of lemon juice to help thin it out.
  • Prepare the dressing: Coarsely chop the anchovies and then pound them into a fine paste using a mortar and pestle. The more you break them down, the better the dressing will be.
  • In a medium bowl, stir together the anchovies, mayonnaise, garlic, lemon juice, vinegar, Parmesan, Worcestershire and pepper. Taste with a leaf of lettuce, then add salt and adjust the acid (the lemon juice and vinegar) as needed, or add a little of each salty ingredient (Worcestershire, anchovies, Parmesan) to the dressing, bit by bit. Adjust the acid, then taste and adjust the salty ingredients until you reach the ideal balance of salt, fat and acid.
  • Use your hands to toss the greens and torn croutons with an abundant amount of dressing in a large bowl to coat evenly. Garnish with Parmesan and black pepper and serve immediately. Refrigerate leftover dressing, covered, for up to 3 days.
