SCRUMPTIOUS CHICKEN

This was adapted from "Fix-it and Forget-it Recipes for Entertaining - Slow Cooker favorites for all Year Round". The original recipe called for eight chicken breasts but I only use four and just make it extra "saucy".

Number Of Ingredients 5

4 skinless chicken breast halves
10 3/4 ounces cream of mushroom soup
16 ounces sour cream
1 package lipton dry onion soup mix
fresh basil or oregano, chopped

Steps:

  • Grease the bottom and sides of slow cooker.
  • Place chicken in slow cooker.
  • Combine all the remaining ingredients except fresh herbs. Pour over chicken.
  • Cover. Cook on low for 6 hours. (If convenient, stir after 3 hours of cooking.).
  • Sprinkle with fresh herbs just before serving.
  • Serve with rice, couscous, or over toast as a SOS meal.

  • 2. Mix the onion powder, garlic powder, paprika and cayenne in a small bowl. Season the chicken generously with salt, then sprinkle with the spice mixture. If you have time, cover and refrigerate for at least 1 hour and up to overnight.
  • 3. Toss the onions and garlic in a 3-quart shallow glass or ceramic baking dish. Spread in an even layer and put the chicken skin side up on top. Pour the stock all around. Cover the dish tightly with foil.
  • 4. Bake until the chicken is cooked through, about 1 hour. Uncover and turn the chicken in the pan juices. Arrange them skin-side up again. Bake until the meat is fork-tender and the skin is lightly browned, about 30 minutes longer.

  • To brine the chicken: In a large bowl, whisk the water, hot sauce, salt, and sugar until the sugar dissolves. Submerge the chicken in the liquid and refrigerate for at least 1 hour and up to 6 hours.
  • To prepare the fried chicken: Heat the oil in a small saucepan over medium heat until shimmering. Add the cayenne, paprika, garlic powder, sugar, and 1 teaspoon salt.
  • In a large resealable plastic bag or paper bag, combine the flour with 1/2 teaspoon salt and 1 teaspoon freshly ground black pepper. Add the chicken in batches and shake well until all the pieces are evenly coated.
  • Add enough oil to a cast-iron or other heavy skillet to come 1/2 inch up the sides. Heat the oil over medium heat until it reaches 365°F. The oil’s ready when a little flour dropped in bubbles and sizzles steadily.
  • Remove the chicken from the flour, shaking off excess. Carefully place the chicken in the oil, skin side down. Repeat, adding just a few more pieces to the pan.
