This dish has incredible flavor from the combination of orange, rum and chili pepper. Serving this over rice is optional but the rice IS a great base for the sauce. Fried plantain goes well with this meal.

2 large oranges, peeled,divided into segments
2 tablespoons vegetable oil
1 1/2 lbs pork tenderloin, sliced into 1/2 inch medallions
1/2 teaspoon salt
fresh ground pepper
2 tablespoons butter
3 shallots, chopped
1 red bell pepper, seeded,diced
1 jalapenos or 1 habanero pepper, seeded,diced
1 clove garlic, minced
1/2 cup chicken broth
1/4 cup light rum or 1/4 cup dark rum
2 tablespoons brown sugar
1/2 teaspoon ground ginger
2 limes, juice of
rice, for serving (optional)

Steps:

  • Remove the white membranes and seeds from the orange segments; set aside.
  • Heat oil in a skillet over mdim-high heat.
  • Season pork medallions with salt and pepper; add to pan and cook, turning once, until pork loses its pink color, about 6 minutes Remove from pan and set aside.
  • Heat butter in the skillet; cook shallots, bell pepper and chili until softened, about 3 minutes.
  • Add garlic; cook 1 minute, stir in broth, rum, brown sugar, ginger and lime juice.
  • Cook to reduce by half; about 3 minutes.
  • Return pork to pan with orange segments; cook to heat through, 3 minutes.
  • Serve over rice if desired.

1/4 cup olive oil
2 tablespoons orange juice
2 tablespoons lime juice
2 -4 garlic cloves, minced
1/2 cup finely chopped onion
2 teaspoons ground black pepper
1 teaspoon ground cumin
1 teaspoon salt
1 teaspoon ground ginger
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1 dash ground cloves
1 teaspoon chili powder

Steps:

  • Combine all ingredients in a heavy-duty Ziploc bag or glass pan.
  • Add your choice of pork, beef, chicken or fish.
  • Marinate for at least two hours.
  • Prepare in your preferred method of cooking.

Caribbean-style pork chops marinated overnight in a lemon juice and oil marinade with a variety of spices. Use more cayenne pepper to make it really hot!

¾ cup water
⅓ cup lemon juice
⅓ cup chopped onion
1 tablespoon packed brown sugar
1 tablespoon chopped green onion
1 tablespoon canola oil
¾ teaspoon salt
¾ teaspoon ground allspice
¾ teaspoon ground cinnamon
¾ teaspoon ground black pepper
½ teaspoon dried thyme, crushed
¼ teaspoon cayenne pepper, or to taste
6 raw chop with refuse, 113 g; (blank) 4 ounces lean pork chops, 1/2 inch thick

Steps:

  • Combine water, lemon juice, onion, brown sugar, green onions, oil, salt, allspice, cinnamon, black pepper, thyme, and cayenne pepper in a blender or food processor. Blend until smooth. Reserve 1/2 cup for basting.
  • Place pork chops in shallow glass dish. Pour remaining marinade over the meat. Cover, and refrigerate at least 12 hours, but no longer than 24 hours.
  • Preheat grill for medium heat. Place grate 4 to 5 inches above heat source.
  • Oil the grill grate. Arrange chops on grate, and discard marinade. Cover grill, and cook chops for 10 minutes, turning once, or to desired doneness.

4-6 pork loin steaks or whatever cut you prefer
1 tin of chopped tomatoes
1 red onion diced
1 carton of coconut cream
1 cup of chicken stock
1/2 tsp cinnamon
1 tsp ground allspice
1tsp ground coriander
1tsp garlic granules
1tsp ground ginger
good dash of rum or malibu (optional)
1tbs oil

Steps:

  • cut pork into bitesize pieces and fry in oil
  • add chopped onion and tinned tomatoes
  • and all spices stir well and cook for a few minutes
  • add chicken stock, optional rum and coconut cream simmer until cooked.. about 20 minutes
  • serve with rice.. preferably rice and peas...enjoy

2 teaspoons fresh ginger root, grated
¼ teaspoon cayenne pepper
¼ teaspoon ground clove
½ teaspoon ground cinnamon

1 teaspoon salt
2 limes, zested and juiced
1 cup orange juice
1 rack pork spareribs, cut in half

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix together the brown sugar, ginger, cayenne, clove, cinnamon, paprika, oregano, pepper, salt, and lime zest; set aside. Squeeze the limes, and add the juice to the orange juice. Rub the ribs well with the spice mixture. Place into a glass baking dish, and pour in the juice.
  • Cover the dish, and bake in preheated oven for 90 minutes. Uncover, then continue cooking until nicely colored, 20 to 30 minutes more. Brush the ribs with the pan juices a few times while they are cooking.

  • Mix the marinade with pineapple juice in a small container. Place two large bone-in pork chops in a resealable bag or container and pour in the marinade and the pineapple juice blend.
  • Seal the bag or container and then "smoosh" the bag around to distribute marinade sauce, to fully cover chops with sauce. Once the chops are coated in sauce, place container or bag in refrigerator for 30 minutes, so they can absorb lots of flavor!
  • If using a Traeger or smoker grill to cook the pork chops, follow manufacturer instructions to get the fire ignited. Once ignited and smoking, set the temperature control to 450° F. Close the cover, and let the grill preheat for 10-15 minutes. Once the grill is preheated and at temperature, place the marinated pork chops directly on the grill grate. Cook the Caribbean jerk pork chops for about 30 minutes, or until the internal temperature reaches 145-160° F. Continue to baste with sauce while cooking. It is not necessary to turn the chops. Remove the pork chops once done, and let them "rest" for a few minutes to let the juices redistribute inside the meat, before serving. Enjoy!

The cooking time might vary slightly, due to cooking them over a direct flame, so be sure to check the internal temperature of the pork chops.
