Caribbean jerk seasoning--a blend of red pepper, allspice, turmeric, onion and thyme--is an easy way to spice up meat or poultry.

1/2 cup dry bread crumbs
3 tablespoons chopped green onions
3 tablespoons minced fresh parsley
2 tablespoons Worcestershire sauce
1 tablespoon Caribbean jerk seasoning
1/2 teaspoon salt
1-1/4 pounds lean ground turkey
1 teaspoon olive oil
4 whole wheat hamburger buns, split
4 lettuce leaves
1 medium mango, peeled and sliced
4 sweet red pepper rings

Steps:

  • In a large bowl, combine the first six ingredients. Crumble turkey over the mixture and mix just until combined. Shape into four 1/2-in.-thick patties. , In a large skillet, cook patties in oil over medium heat for 5 minutes on each side or until no longer pink. Serve on buns with lettuce, mango slices and red pepper rings.

1 ripe pineapple
1 onion, peeled,cut 1/2 thick
1/3 cup honey
1/4 cup red wine vinegar
1 Tbsp. grates orange peel
1 Tbsp. peeled, grated fresh ginger root
1/4 tsp. ground allspice
1/4 cup red bell pepper, minced
1-1/4 lbs extra lean ground turkey
1-1/2 tsp. jerk seasoning
1/2 tsp. black pepper
1/2 Tbsp. canola oil, divided
4 burger buns toasted

Steps:

  • Brush pineapple and onion slices with 1-1/2 Tbsp oil. Grill over medium high heat until light brown on both sides; cool. Discard pineapple core. Mince pineapple and onion. Combine next 5 ingrediants in saucepan. Simmer covered for 45 minutes. Add red pepper and cook for 10 minutes, cool and reserve. Mix turkey, 1/2 cup pineapple chutney, jerk seasoning, and 1/2 tsp. black pepper. Make 4 patties. Brush each with 1/2 tsp. oil and grill. Put on buns and top with chutney.

1/2 cup mashed ripe mango
2 tablespoons honey
1 tablespoon fresh lime juice
1 1/2 teaspoons McCormick Caribbean Jerk Seasoning
1/4 cup minced onion
1 lb. ground turkey
oil
4 Hawwaiian Sweet Sandwhich rolls, split and lightly toasted on grill
Lettuce, red onion rings, tomato slices

Steps:

  • In a small bowl, mix together barbecue sauce, mango, honey, lime juice and seasoning. Add 1/4 cup of mango BBQ sauce and onion to ground turkey; mix well. Shape into 4 flat patties and brush both sides well with oil. Grill over medium heat for 5 minutes per side or until internal temperature reaches 160 degrees F. Turn carefully so burgers do not fall apart. Brush liberally with mango BBQ sauce and place on toasted buns. Top with lettuce, onion and tomato. Servewith remaining mango BBQ sauce and serve with oven baked fries.
