HEALTHY CARIBBEAN STEW
This spicy bean stew reheats well so it can be made ahead and refrigerated until needed for mealtime. Add meat for an omni-version.

Steps:
- Place the water in a large pot. Add onion and bell pepper. Cook, stirring occasionally, for 5 minutes.
- Add sweet potatoes, tomato sauce, tomatoes, pineapple, apples, chilies and vegetable broth.
- Bring to a boil, reduce heat, cover and cook over low heat for 45 minutes, stirring occasionally.
- Add beans and seasonings, mix well and continue to cook over low heat for another 10 minutes, stirring occasionally.
- Serve over rice.

Steps:
- Combine sweet potatoes,beans,broth,onions,jerk seasoning,,thyme salt and cinnamon .
- Cover and cook on LOW HEAT about 5 hours,until veggies are tender.
- Adjust seasonings;SPRINKLE WITH ALMONDS[toasted] TOAST ALMONDS:spread in a single layer in a heavy-bottomed skillet,cook over medium heat 1-2 minutes,stirring FREQUENTLY ,until the nuts are lightly browned.REMOVE FROM SKILLET IMMEDIATELY.COOL before using.
- Serve with hot sauce if desired

- Heat the oil in a large casserole dish, and add the chopped onion, spring onions, garlic, red chillis, and diced sweet potato. Cook everything over a medium heat for 5 minutes, stirring regularly, until the onion is almost soft.
- Pour in the chopped tomatoes, vegetable stock and BBQ sauce, mix well, and cover with a lid. Leave to simmer gently for 10 minutes.
- Add the chopped cabbage and the two tins of beans, as well as the coconut milk. Cover again, and simmer for a further 10 minutes.
- When the sweet potato is fully cooked and everything is piping hot, season to taste, and serve with brown rice.
