NOODLE KUGEL

1/2 pound wide kosher for Passover egg noodles
1/2 stick butter, melted
1 pound cottage cheese
2 cups sour cream
1/2 cup sugar
6 eggs
1 teaspoon ground cinnamon
1/2 cup raisins

Steps:

  • Preheat oven to 375 degrees F.
  • Boil the noodles in salted water for about 4 minutes. Strain noodles from water. In a large mixing bowl, combine noodles with remaining ingredients and pour into a greased, approximately 9-by-13-inch baking dish.
  • Bake until custard is set and top is golden brown, about 30 to 45 minutes.

1 (8 ounce) package large egg noodles
6 tablespoons butter, sliced
6 eggs, separated
½ cup white sugar
¾ (8 ounce) package cream cheese, softened
4 tablespoons sour cream
1 (16 ounce) package cottage cheese, creamed
1 pinch salt
4 tablespoons butter, melted
¼ cup white sugar
⅓ cup graham cracker crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch glass baking dish.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and stir in 6 tablespoons sliced butter.
  • In a medium bowl beat egg yolks with sugar and cream cheese; stir into noodles and add sour cream, cottage cheese and salt. Beat egg whites until stiff and fold into mixture. Transfer mixture to prepared dish.
  • In a small bowl combine melted butter, 1/4 cup sugar, and graham cracker crumbs. Sprinkle over noodle mixture.
  • Bake in preheated oven for 1 hour.

6 large ripe plantains
Vegetable oil for frying
2 medium onions
1 large sweet green pepper
3 tablespoons olive oil
3 cloves garlic, minced
2 pounds lean ground beef
1/3 cup pitted green olives
1/4 cup raisins
1 1/2 to 2 cups tomato sauce
1 cup white or red wine
Salt and freshly ground pepper to taste
3 eggs

Steps:

  • Peel plantains, and cut each into 4 or 5 slices lengthwise. Heat about 1/4-inch of the vegetable oil in a pan, and fry as many slices as can fit in pan at one time. Fry slices for about 2 minutes on each side, or until golden. Remove from pan, drain on paper towels, and blot any remaining oil from slices. Repeat with remaining slices.
  • Heat oven to 350 degrees. Chop onions and green pepper into 1-inch pieces. Heat olive oil in a large pan, and sauté vegetables until tender. Add garlic, and stir-fry for 1 minute. Add ground beef and cook over medium-high heat until meat loses its red color, breaking it up and mashing with a potato masher so mixture is as fine as possible.
  • Reduce heat to low and add olives, raisins, tomato sauce, wine and salt and pepper to taste. Simmer for 15 minutes, stirring occasionally. Beat eggs in a small bowl.
  • Assemble kugel in a 9-by-13-inch glass baking dish by arranging a layer of plantain slices, meat mixture, and remaining plantain slices. Slices should touch each other but not overlap. Pour beaten eggs on top, and spread over plantains. Bake about 30 minutes or until top is golden brown.

½ cup whole wheat flour
½ cup white flour
½ cup firmly packed brown sugar
½ cup Granulated sugar
1½ teaspoon baking powder
½ cup applesauce
2 large eggs
1 teaspoon vanilla
Garnish: sour cream

Steps:

  • 1. Preheat oven to 350℉. Spray a 9-inch springform pan or muffin tin with cooking spray. 2. In a food processor, puree carrots, add flours, sugars, baking powder, applesauce, eggs, and vanilla, pulse until combined. 3. Pour batter into prepared pan. Bake for about 45 minutes or until set in the middle. Serve hot or at room temp by itself or with sour cream.

A classic kugel recipe, just the right amount of dense and rich, with a sprinkling of raisins and a slightly secret ingredient from my grandfather. Perfect for Rosh Hashana or the break fast meal on Yom Kippur.

8 tablespoons (1 stick) unsalted butter (cut into pieces, plus extra for buttering the pan)
1 cup raisins
Grated zest and strained juice of 1 orange
1 package (12 ounces wide egg noodles)
6 large eggs
2 cups cottage cheese
2 cups sour cream
2 cups whole milk
½ cup sugar
1 teaspoon ground cinnamon
1 teaspoon pure vanilla extract
½ teaspoon kosher or coarse salt

Steps:

  • Preheat the oven to 350°F. Butter a 9 by 13-inch baking pan.
  • Combine the raisins and the orange juice and set aside to soak. Cook the noodles according to the package directions.
  • Whisk together the orange zest, eggs, cottage cheese, sour cream, milk, sugar, cinnamon, vanilla, and salt in a medium-size bowl. Add the plumped raisins and up to 1 tablespoon of any remaining juice.
  • Drain the noodles and return them to the pot. Add the butter in pieces and toss until melted. Add the cottage cheese mixture and stir gently until well combined. Transfer the noodles to the prepared pan.
  • Bake the kugel until a bit bubbly around the edges, well set, and pretty well browned, 1 hour and 15 minutes. Broil it for 1 or 2 minutes if you like a really crunchy top.
  • Transfer the kugel to a wire rack and let cool for at least 15 minutes before serving. It is great warm or at room temperature.

Defined as a baked pudding or casserole (usually from noodles or potatoes) this one is my own version of kugel, which is adapted from a few recipes to make one that we really love. This is a rich and sweet kugel although they also come in a savory version.

1 (12 ounce) bag egg noodles
1 (16 ounce) container sour cream
12 ounces farmer cheese
1 cup white sugar
1 cup unsalted butter, melted and cooled
6 large eggs, beaten
1 large apple - peeled, cored, and diced
¼ cup golden raisins, or to taste
½ teaspoon ground cinnamon, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 9x13-inch baking pan.
  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain and set aside.
  • While noodles are cooking, mix sour cream, cheese, sugar, and butter together in a large bowl. Add eggs, apple, and raisins. Add drained egg noodles and cinnamon; stir until well combined. Pour into the prepared pan.
  • Bake in the preheated oven until slightly golden brown and custard has set, about 1 hour. Cool for 10 to 15 minutes before serving.
