CARIBBEAN GRILLED BURGER WITH PINEAPPLE SAUCE

Steps:
- Preheat grill on HIGH 10 minute.
- Coat grill grate lightly with vegetable oil.
- Puree pineapple, jalapeno and molasses in blender; set aside.
- Coat beef patties with jerk seasoning (wear gloves).
- Sear first side of burger on grill about 2 min; until meat has changed color 1/4 way up from bottom.
- Turn and sear other side.
- Turn meat back over.
- Reduce heat to MEDIUM or LOW (Most burgers require MEDIUM; burgers thicker than 1 inch require LOW). Close lid.
- Cook burgers to internal temp of 160 degrees.
- Check by inserting thermometer halfway into thickest part of burger.
- Remove from grill.
- Place on rolls, top with sauce, lettuce, mango, and red bell pepper rings.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C).
- Layer pineapple and peppers on a baking sheet. Drizzle evenly with 1 tablespoon olive oil.
- Bake in the preheated oven until browned, 15 to 20 minutes. Stir occasionally to prevent overbrowning.
- Meanwhile heat remaining olive oil in a large skillet over medium heat. Cook and stir onion until soft, about 5 minutes.
- Combine pineapple-pepper mixture, onion, orange juice, salt, and pepper in a blender or food processor. Puree until salsa is thoroughly combined. Add cilantro and blend lightly. Chill for approximately 1 hour.
- Combine ground pork, seasoned salt, paprika, dill, garlic powder, hot sauce, and red pepper in a large bowl. Blend well using your hands. Shape mixture into 8 patties.
- Preheat a gas or charcoal grill for medium-high heat and lightly oil the grate.
- Grill burgers until browned, 5 to 7 minutes per side. Cook 5 minutes for medium-well; 7 minutes for well done.
- Place burgers on buns and garnish with pineapple salsa.

- Combine Ground Beef, chutney and jerk seasoning in large bowl, mixing lightly but thoroughly. Lightly shape into four 1/2-inch thick patties.
- Place patties in center of grid over medium, ash-covered coals; arrange pineapple slices around patties. Grill, uncovered, 8 to 10 minutes (over medium heat on preheated gas grill, 7 to 9 minutes) until instant-read thermometer inserted horizontally into center registers 160°F, turning occasionally. Grill pineapple, uncovered, 8 minutes or until heated through. (Gas grilling times remain the same.) About 2 minutes before burgers are done, place rolls, cut sides down, on grid. Grill until lightly toasted. During last minute of grilling, top each burger with cheese.
